Went to Body Pump this AM and got my butt kicked by Chris, per usual. Boy does he love to torture us! Today it was during triceps – double sets of dips. Ouch!!
But all for the greater good of the muscles : )
I came home to a completely empty fridge and pull out things that looked like they might add up to a lunch. Luckily that included 2 dwindling vegetables!
I turned these into a bean + veggie bowl topped with cheese and served with chips
Giant beans, sundried tomatoes, green pepper and carrot topped with cheddar + goat cheese and chips, all drizzled in a little fruity EVOO
The cheese apple stands alone
Pretty good lunch!! But I’m off to the grocery store..
Erika - The Teenage Taste says
Sounds like a really, really good lunch of leftovers. I wish my meals made with a fully-stocked fridge looked this good! 😉

Our daughter and I picked a bunch of apples a few weeks ago, and we are trying to eat them up before they go bad. So, I had one for lunch, and will have to do something with the other 10 or more that are left.

Considering the emptiness of your fridge you did really well in the thrown together lunch department. I love shopping for groceries. I try to channel KERF in the produce aisle. Have fun!!!
Ashley @ Coffee Cake and Cardio says
Have fun grocery shopping!!
kathleen @ the daily crumb says
you throw together the best meals out of nothing!! off to the grocery store myself, but not until after lunch, or the trip would wreck havoc on my wallet!
Lauren @ What Lauren Likes` says
It definetly is a pretty good lunch! Looks great 🙂
Khushboo says

Averie @ Love Veggies and Yoga says
Using what you have on hand, that’s the name of the game some days.
I like that you “wrote” on the picture. Did you use picnik? I want to do it in Lightroom but I can’t so I use Picnik for pics I want to label/write on like that. Just wondering if I am missing some big trick in LR 3?
🙂
KathEats says
Elements – WISH I could do it in Lightroom!
Averie @ Love Veggies and Yoga says
So you have Photoshop Elements, too?
I actually have the FULL Photoshop program on my computer but have neglected to ever learn how to use it….every time I try, I get overwhelmed with all the layers, options, etc and give up. Love LR because it’s so much easier for me. I probably have Elements too. Guess I need to read up on that…. 🙂
KathEats says
Yeah, Elements is very hard too. SO un user friendly!
Hope @ With A Side Of Hope says
I love how you made this meal out of nothing! You are so creative. It’s really colorful. Have fun shopping! 🙂

A good torturous workout is always nice! He sounds awesome. Way to pull together a great lunch.
katie @KatieDid says
mmmm I’m having a love affair with goat cheese lately. It tops just about every sweet and savory dish I’ve been eating.
Katie @ Peace Love and Oats says
ahhh I’m super jealous of that leftover salad. I’m on a basically can’t eat anything diet to find out what foods are affecting my digestive system. the only thing in the salad that I can eat for the next 5 days was the pepper…
Ashley@FoodNFitnessDiaries says
I always have a hard time making my meals by the time Sunday and Monday roll around since I go to the grocery store on Monday afternoons after work and all of our produce is either gone or looking quite wilty. The pickins are slim, that’s for sure!
Jen@foodfamilyfitness says
I am not that creative when I’m running out of groceries, I don’t think I could be as creative as you are even with a fully stocked fridge!!!
Sweet and Savvy says
My fridge was the same way yesterday.. only my one lonely bell pepper was old after I cut it open 🙁
Health Bee says
Beautiful photos. Can’t wait to try out this recipe! Thanks for sharing.
Michelle (Peachy Palate) says
Apples are great here at the moment, little tiny ones that fit in the palm of a small hand perfectly and are gone in two bites. Those tortilla chips look so good and are those butter beans I see, love em! Butter Bean mash…
Annette @ EnjoyYourHealthyLife says
Oh I LOVE the burn of BodyPUMP! We just launched the release 79 this week, and it is awesome! It is fun to remind the class that it IS for the greater good of the muscles–spot on 🙂
You threw together an amazing lunch from those leftovers–kudos to ya!
Morgan @ moments of mmm says
That lunch looks pretty tasty for making something outta nothing! That reminds me that I need to go grocery shopping asap! Have a fabulous day
~Christy @ wonderofallthings says
Leftovers are a creative adventure, aren’t they? I’m in awe that you seem to eat through all of your veggies before they spoil…do you usually have much waste?
KathEats says
Not much.. I tend to buy lots of salad base but relatively few fresh topper veggies
Lisa (bakebikeblog) says
what a tasty lunch bowl!
Emmy (WIne and Butter) says
Youre so lucky that your leftover bowls look like that!! My leftover eats usually consist of a fried egg on some wilted cabbage. Neither photogenic nor that tasty! I made some leek and potato soup yesterday though – THAT was both amazing and hopefully can be my new go-to store cupboard recipe given that both of them keep so well!! xoxo
Alison @ Hospitality Haven says
I love being able to make up a meal out of what seems to be “nothing”! 🙂
Zoe @ loseweightandgainhealth says
My blog post today was all about leftovers. I like your post title better than mine which was just “leftovers”. I also love your labelling. I am just getting to learn Elements. It is sooooo hard! But I will look out for the labelling. I love it so thanks 🙂
Molly @ RDexposed says
Thanks for the bilingual post!
KathEats says
HA!!! You are hilarious
Chelsea @ One Healthy Munchkin says
That’s an awesome lunch for not having much to work with! My go-to lunch when my fridge gets empty is just a bagel with almond butter + an apple. Definitely not as creative as yours!
robin says
YUM!

Thanks for the reminder, I need to pick up sun dried tomatoes!

Many times my lunches resemble yours because you’ve inspired me to eat “fresh” as often as possible!! (that happens the most at lunch time) 🙂
Christine (The Raw Project) says
I need to try a Body Pump class! Great lunch, getting crafty with leftovers can be so much fun!
Cait's Plate says
I love that last picture of the apple. It looks like it should be in a magazine.
Also, question – are you able to write on your pictures in WLW? Or do you use photoshop or something?
KathEats says
I do it in Photoshop Elements
Cait's Plate says
Ah okay – thanks! 🙂
