Wrapped another day. More learning. Still enjoying it!
I love the problem solving. Dare I say charting reminds me of geometry proofs? And calculus problems? Step by step procedure. Love it!
[Nerd alert
]So I got home today and got to work on the TWO HUNDRED emails I got today. Guf!! I do read each and every one (most of those were comments, but probably 50 of them were real emails!) so it takes me a while to sort through them when I can’t check my phone throughout the day.
I’ve decided that getting home and rushing to the gym stresses me out. I prefer to unwind a little. Get some work done. Pack my lunch and get all that daily work complete before I think about my workout. That way I can enjoy it! So long as I’ve had a substantial snack (had my apple + Alliebar today at 4:30/5!), then I’m OK. I’ve been hungrier less in the afternoons lately too?
Now that it’s springtime and the weather is so nice, I’m looking at my workout as a chance to “go play outside.” With more daylight, there’s no rush to beat the sunset. It reminds me of when I was little and I would go play at all hours of the day. It didn’t matter if dinner was appraoching – if I had a little time, I’d go play for a little. I’m thinking of my workout the same way. Rather than some big cardio date, it’s just a string of playtime periods.
Bike to the gym.
Read Better Homes + Gardens.
Play with some weights.
Play foam roller.
Bike home for dinner.
Fun times!!
I even had mom making dinner tonight. And by mom I mean Matt! Lifesaver. I’ll say it again and again. Our split dinners are working out well. He cooks early. I eat late. I promise I’ll pay him back when he’s working super hard on the bakery and I’m the one with a little more time.
On the menu: Tempeh Tacos!!
Tempeh + corn sauteed with Mexican spice (cumin, chili powder, Seasoning From Hell) over top of steamed cabbage with salsa, avocado, cilantro and plain Oikos!
Soooo delicious!! I like these Food For Life sprouted tortillas. They’re small, so you can have two, and I actually like how incredibly chewy they are.
The salsa was Don Sabrosa’s. I’m still floored by the LACK of onions in this salsa. I almost didn’t accept it because I generally don’t care for salsa at ALL but these are great and leave no onion taste in my mouth! Just good old tomato flavor and spice.
I watched GLEE on OPRAH with my dinner. Fabuloso! Can’t wait for it to start up again!
Dessert was a nibblet of my Chocomize selection – tonight I tapped into the butterscotch, peanut butter, toffee!
I had two little corners like this. A.mazing. The toffee + butterscotch combo is just divine. Reminded me of smores!
Chocomize is giving you all a 10% discount with the code: katheats. Enjoy if you wish!!

Someone sounds busy, good luck with all of that! At least you have chocolate for fuel 😉
Sarah @ THE FOODIE DIARIES says
haha i like play foam roller.
i did my best to play outside today by bringing my writing work outside. i usually cant because i cant see my laptop screen in the sun–but i got crafty and made a makeshift “sunshade.” sort of did the trick–though i think i ended up doing more playing than writing 😉
Sarena (The Non-Dairy Queen) says
Love the tacos! That is one of our favorites here too. We use Trader Joe’s corn salsa, but you would not like it with the onions. The cabbage is a must for a good crunch on your taco! LOVE it. Which book are you reading now…I hope it is The Wedding…you would love it! have a great night!
Jil says
That chocolate looks so decadent!! and those tacos sound awesome!!
Amy says
Love your tacos, I hope they taste delicious as they look! I made my husband tacos a few months back with tempeh and didn’t tell him until mid-meal…he now refers to them as “trickery tacos.” 🙂
Estela @ Weekly Bite says
That chocolate looks right up my alley!!! I LOVE toffee 🙂
Lauren @ eater not a runner says

Sarah @ The Smart Kitchen says
Goll…I thought I was the only non-middle-aged mom who loved Better Homes & Gardens…amazing.
Allie (Live Laugh Eat) says
You’re not the only nerd…I loved calculus proofs, especially when they all worked out in the end. When the answer was exaaaactly what you were looking for (15 head-pounding minutes later!).
For some reason when I eat my bars before workouts, I don’t get tummy aches! They keep me full and sometimes even stuffed (when I eat 2 haha). I’m surprised you still have some left!
Stacey@http://stacey-healthylife.blogspot.com/ says
I like the dinner and I love hearing about the healthy living summit. I wish I could attend it would be so fun and informative.

That dinner looks so good!!! And I really want to go to HLS! I am going to try my best to make it this year!
Lauren @ A Fit Foodie says
Those tempeh tacos look phenomenal! So glad you’re loving your rotation. I wear Birkenstock shoes when I’m on my 12 hour shifts nursing. I think you’d love them. Super great support. But we have a lot of nurses that love the Danskos too. I’ve been so satisfied with my Birkenstock’s that I haven’t invested in a pair of Dansko’s yet. Hope you find something more comfortable soon!
Rebecca @ How the Cookies Crumble says

What a creative dinner – looks great!! Can’t wait to hear all about the Healthy Living Summit – if only it was a little closer to home 🙂
chocolateprn says
Thank you for mentioning that your husband is such a great help at home! Like you, I am incredibly lucky to have a partner who not only works hard at his own job, but NEVER takes any issue with having to cook/clean at home. In our house, if i work a night and nap in the afternoon, he makes dinner for when i get up. We work together and support each other around the house. I hate to always read about women that are in relationships where they are expected to “do everything at home” with kids/meals/cleaning and working or going to school full time. Yay to our great men!
Heather @ Side of Sneakers says
200 emails!!!! GOODNESS!!! You’re so sweet to read all of them 🙂
Tara says
Can’t wait to attend my first Healthy Living Summit. Do you know how much tickets usually are? I live in Chi so I won’t have to pay for anything for the ticket thank goodness!
Kath says
We haven’t finalized ticket prices, but it won’t be more than $100 for sure.
Tara says
Awesome thanks!
Ashley says
Love tempeh LOVE those Ezekiel wraps…SO excited about HLS!!! weeeeeee 🙂
Run Sarah says
I am enjoying my afternoon workouts lately as well, I think the longer time before it gets dark really helps. I made almost identical tacos yesterday, except I used hard taco shells!
Mastering Public Health says
Thrilled to hear about this year’s Summit! Last summer’s was so awesome. Due to the popular demand, are more than 125 spots going to be available this year? Thanks for all your work on this.
Kath says
I think we’re bumping to 200 attendees – but not final yet!
Tasha - The Clean Eating Mama says
This is the second blog that I have read tonight that featured tempeh tacos! =) I have a block of tempeh in my fridge that needs to be eaten – I guess it’s fate 😉
Jenn (www. j3nn.net ) says
The tempeh tacos look so good! I like Food for Life tortilla’s, too. They are lower in sodium than other brands and taste yummy. 🙂
Jenn
Anne @ Food Loving Polar Bear says
Those tortillas look so good, I’ve never had tempeh and now I’m curious!
Diana says
You are definitely lucky (because of Matt). A lot of people don’t have a husband who’s willing to do that! 🙂 Guess it’s a good thing he can cook eheh
I still haven’t tried tempeh! Must try asap.
Freya @ Brit Chick Runs says
That dinner is so creative – I really want to try and re-create that!! Aahh it must be so useful to have a husband who can cook like that 🙂 if my dad ever cooked, it was always x and chips, freezer to oven…not nice!
Sarah (Running to Slow Things Down) says
Wow, Matt was super creative with this meal. It’s so pretty and looks awesome! Yum! 😀
Chelsea (Chelsea's Chew and Run Fun) says
Those tempeh tacos look outstanding! I love your workout mentality, it’s so much easier to get a workout in when you stop thinking of it as a chore. I’m not quite there yet, but I’m going to use your mental approach to exercise and see if it helps me get moving more.
Hannah says
That dinner is utterly, utterly beautiful-looking! Perhaps even more than the chocolate… nah, I’m a bit of a chocolate-head, so I’d probably still eat the entire bar of chocolate over the tacos… 😛
sam says
Hey Kath, I went to the HLS’ website and realised Jenna’s name is not included? Is she not with the planning committee for this summit? Just wondering. =)
Have a great day ahead!
Sam
Kath says
She had to drop out this year because of her travels ;(
Amanda @ Cakes and Ale says
So excited you are hosting the summit in Chicago. Being a Chicagoan, I can tell you there is no better time to be here than the summertime. We may have long, cold winters, but when the weather gets warm, we do it up right!
If you need any recommendations for places to eat, drink or play, let me know! There’s so much more to Chicago beyond the downtown / Michigan Ave. scene…
steff from www.steffsays.com says
i LOVE sprouted corn tortillas. but i find they always crack and break apart when i try to fold them in typical taco style. 🙁
Charlotte says
Hi Kath, I don’t usually enjoy tempeh but I liked it like this. Thanks! Charlotte
