My favorite way to use Blue Apron is for parties like this one and times when I want to spend time in the kitchen making a special meal. All meals can be prepared in 40 minutes or less, and doing both at once is efficient!
The two meals I made were great for sharing – Chicken Tinga Tacos with Summer Squash & Tomato Salsa, and Eggplant & Rigatoni Pasta Puttanesca with Capers, Cherry Tomatoes & Cucumber Salad.
I also set out some hors d’oeuvres
And of course some wine!
The dishes were a big hit. We all commented that not only were they delicious, they tasted healthy too.

The pasta was great too. Eggplant is one of my summer favorites!
And this cucumber salad totally exceeded expectations in flavor! It was so simple that I was skeptical, but the salt and pepper cucumbers were so crunchy – like pickles!
We shared such a special evening of girl time. Can’t wait to do it again!
