No, not me – our Clinical class!! We discussed a handful of upper and lower GI disorders, which included plenty of poop talk! Lots of laughing ensued
This afternoon’s snack included a grapefruit (which I devoured in about 60 seconds!) and a LaraBar, which I took 30 minutes to eat slowly and enjoy.
I also had 2 of Kelsey’s carrots with hummus and a bite of a TJ’s fruit stick thing. Snacks were the perfect filling combo to stretch me until 8:30 dinnertime.
I actually wasn’t that hungry, but when I started to put together this dinner, I kept piling on the ingredients and managed to eat every morsel.
I found these leftovers in my fridge and layered them into this:
- 1/3 cup quinoa
- 1/3 cup garbanzo beans
- 1/2 cup broccoli
- 4 grilled eggplants
- 1/4 cup feta
- 1 tbsp raisins
- Bed of romaine
= all tossed in a “dressing” of 1/2 a lemon + 2 heaping tsp tahini. Plus a dollop of greek yogurt on top.
TV dinner night!
I’m so tired (for sitting and thinking all day) and can’t wait to go read in bed for a bit! I’ve got a long to-do list full of small projects for tomorrow so I’m waking up early to get started.

Oh gosh, we studied GI stuff a month or two ago and we all just sat there thinking, please don’t let this happen to us! A J pouch sounds about as bad as it gets. And dumping syndrome?!? Err….

ahhh two of my favorite things.. grapefruit and cashew cookie larabar!
I like to pull the larabar apart into little bites as I am working to make it last longer. Somehow they also make me very thirsty and I drink lots of water on the days I eat one. yum yum yum.

Quinoa is my fave grain! And when my nutritionista ladies and I get together- all we talk about is poop. I was on the radio on Friday talking about detox and more poop talk. I forget how most people, in the regular world, don’t talk publicly about this.

I just love GI disorders. its so weird after you learn about them – I have a friend with ulcerative colitis – i felt really bad for how excited I got when he first told me. Its like having your own little case study before your eyes!

I just got a chance to see that lovely lunch but the champ is definitely that awesome dinner salad you created. What a perfect way to show that salads don’t have to be just leafy and boring!
P.s. I get so upset when I cook my veggies (i.e. eggplant) and they SHRINK!!! I like my veggies big. 😛
