The highlight of my weekend was most definitely the Florida Georgia Line concert!
I just love country music. Rather than trucks and fields (which do take me back to high school), country brings out feelings of small towns for me. Relationships, parties with friends, and living life in the moment – soaking up sunshine, the lake, or a good beer. FL/GA Line is one of my favorite bands! Matt likes to send me jokes like this mashup of 6 country songs that mock the genre but my reply is: That was a GOOD YEAR FOR COUNTRY! Love ’em all!
Friday night we cooked dinner at home, and I made stuffed shells. This recipe was a wing-it success! We stuffed the shells (after they were boiled) with ground beef, sun-dried tomatoes, Parmesan, frozen spinach and basically all the ingredients in this meatball recipe. With sauce poured on top, they turned out great!
Jeff joined us and brought the salad.
Dessert called…although it’s worth noting that both of these only had about a quarter cup left. The PB Cup was Karen’s and it ended up in our freezer when she moved – yum!
Saturday morning Mazen and I ate oatmeal….
And then I met my friend Nelle at ACAC where we departed for a 6 mile run. Post-baby PR baby! We ran quite slow (per Nelle’s 13 miler training plan) and I felt good for most of the run. It wore me out for the rest of the day though!
After Mazen and I got home, I proceeded to eat All The Chips. But I paired them with a healthy sardine salad. It’s been my post-run craving these past few weeks!
We went back downtown for a visit to the Discovery Museum before heading home for nap.
Saturday night I got dressed up and met 4 of my friends at the concert. A little pregaming!
We went to Sedona Taphouse for dinner, which was awesome.
I shared a bottle of wine and started with a nice salad. My entree was crab and shrimp topped tilapia over mashed potatoes with asparagus. It was pretty darn awesome!!
We shared this chocolate cake 5 ways for dessert. Just two bites – perfect!
The party started with Thomas Rhett – love him!
And FL/GA Line was awesome. Love their style!
Blondes like to have fun!!
Get your shine on! Guess it’s pretty clear everyone has a smart phone these days ; )
Saturday night ended very late, so Matt brought me pancakes in bed for breakfast. Wish I could say I also slept in, but I was wide awake at 7. Buddy’s chocolate peanut butter on top!
We spent Sunday doing work around the house, including finishing this piece!!
Lunchtime leftovers – kombucha and some soup.
I went to the grocery store late and couldn’t resist the convenience of bringing home Whole Foods hot bar. Garlicky kale + catfish + veggies + the last of an open bottle of vino.
Hope y’all had shining weekends too!

Omg all your eats look amazing! The ice cream and stuffed pasta shells definitely win me over though! Your furniture piece is unreal! I feel like you’ll get such good use of it! Have an amazing Monday 🙂

I’m so jealous you got to see Thomas Rhett. I love his music. FGL was really good live when I saw them last September. Looks like you had a great girls night out.
Linda @ TheFitty says
What’s that thing on the side of the salad so beautifully placed?
KathEats says
Which salad?!
Linda @ The Fitty says
The one in the first picture!

I am a total country girl – inside and out – and your description of country music is right on the money! It’s MY history. I think it just made me like you even more! 🙂

I’ve seen FL/GA Line 2x — they’re such fantastic entertainers!
Alex @ True Femme says
I love the hutch! It looks so good! I helped my sister move into a new apartment on Saturday, went to a farewell party for some friends who are moving, and started turning my bathroom into a spa (one of my big projects for the year but a lot simpler than it sounds)!
Angela Gilmore {Working On Working Mom} says
That looked like a seriously fun weekend, and I love the new piece! We spent our weekend cleaning mostly. The highlight was definitely driving out to the donut maker who made the donuts from our wedding. We were able to get apple cider donuts that were just made and still warm, yum!
KathEats says
Yum!

Haha me too!

I love country music too – especially when it’s live! I’ve never seen FGL, but Thomas Rhett is so good. One of my favorites!

Looks like so much fun! That sardine salad with chips and crackers looks like the perfect quick lunch. I am a finger food fan for sure. 🙂

I’m not a commenter, but I have to say that I MUCH prefer this format to what you were doing recently.
Anne McCormick says
Off topic but I wondered if you planned to write a follow up post from your skin care consultation sometime?
KathEats says
Hmmm…I hadn’t planned on it just because things are going well! I am using the Paula’s Choice line and love it. Haven’t noticed anything going downhill, so I think it’s working!?
Anne McCormick says
Thanks, just curious! I thought the consultation post was really interesting.
KathEats says
I will think about doing a follow up of sorts!

I just love reading your weekend posts – I look forward to them all week, thanks for sharing! Sounds like a very fun & delicious food filled one!
Sam @ Grapefruit & Granola says
Florida Georgia Line is my guilty pleasure. Their first album was the soundtrack to all of my workouts the summer before last. I like the song “Dirt” off of their new album as well.

I saw FGL in November of 13 and thought they were great! Fun performers, fun music, fun night!

All your dinners look amazing, esp. those stuffed shells. I am going to keep that in mind for dinner this week. I did however, see you ate Tilapia at the restaurant. I would highly advise against eating Tilapia, especially if you are inclined to eat real food. Unless the restaurant can tell you that the Tilapia was 100% farmed in the U.S, the majority of Tilapia comes from horrible, polluted conditions outside of the U.S. Just a friendly tid bit !
jennifer says
What do you put in your sardine salad? It looks great? And what type of crackers?
KathEats says
Whole Foods Everything flatbreads! And I put carrots, capers, 1 tbsp Greek yogurt, 1 tsp dijon mustard, salt and pepper

I saw Garth Brooks in November, and I was in HEAVEN. I saw him in 1997, and let’s just say he can still bring it!!! And he sang his “new” song, “Mom” – and let’s just say there were some tears on my end. Have you heard it?
KathEats says
Love him aND I sobbed when I first heard that song! Mostly because he teared up too!

this post reminds me that this week is tamworth country music festival here in aussie 🙂

I have to comment on your Sebastiani Cherryblock! I’m surprised that you didn’t mention it. Did you love it? We live here in wine country and Sebastiani is just a short drive away and one of our favorites specifically because of cherryblock. I don’t know if you heard the story about the vineyard, but it was a cherry orchard before the vines were planted many years ago. The cab has that fabulous berry aroma from the rich soil of former cherry trees! Unfortunately, the vines are quite old, which produce excellent wine but the yield is declining and this may be the last year before they are replanted. Sebastiani does an amazing cherryblock dinner once a year that allows members to taste all of the library vintages side by side starting back in the 80’s! It’s was really a cool experience! If you visited the winery, I’m sure you heard the story, but I thought I would share in case you didn’t know! Cheers!
KathEats says
Yes yes loved it!! Thanks for the background info. Wish I lived nearby!
Melissa says
Where did you get the mug in the Kombucha picture? I have one that I got as a gift and want to get another but can’t find a brand or anything on it!
KathEats says
It’s one of our Great Harvest mugs! Custom made in Richmond.
Frugal Foodie Frank says
Hi Kath!
What is in the sardine salad? I’ve never had sardines, I’m a little bit too chicken to try! I am a huge fan of tuna salad made with lemon juice, olive oil, and capers- but I would love to branch out and try a new mix!
KathEats says
If you love tuna you’ll love sardines!!!! I usually add greek yogurt or mayo, mustard, spices, capers and chopped veggies. Check out this post for info and a video! https://www.katheats.com/fish-in-a-tin

Thank you!

This is my first time commenting on your blog, but I’m a huge follower. 🙂 I am a big country music fan and I love Thomas Rhett and FGL. I got to see Thomas Rhett last year with Brantley Gilbert…it was a great show. I’m glad you had a great time at the concert.
