Exercise made my day. Getting out the house, into the fresh air, talking to my mom on my phone and walking the 2.2 miles to the gym instead of biking was glorious. So was my hour yoga class that focused on chest opening – what I need more than anything else! On the way home I listened to Water For Elephants on audio book – more glory! Felt so much better when I got home.
Exercise always wins!
So does dinner –
Well, most of the time!
Matt and I can’t figure out what to call this dish!
It was layers of yummy things:
- Bottom Layer – Millet + Amaranth cooked with Savory Choice chicken broth and Cajun seasoning
- Middle Layer – Jersey Fresh tomatoes (From Philly Homegrown), which we reduced in a pot to make them so thick and sweet!
- Top Layer – Sautéed green beans and green pepper in more Cajun seasoning
- Garnish – Sautéed Andouille sausage from The Organic Butcher
Under the layers, there lies sweet tomato:
It was amazingly flavorful and filling!!

They were canned, actually. A 30 oz canned of crushed (and we have leftovers)

haha. i’m the same way: when presented with beer, i feel it’d be wrong (hurt the beer’s feeling) if i refused.

If you also added shrimp to your dinner, it would be a deconstructed and layered jambalya. Although I think technically jambalya has rice. In any case, it looks delicious.

Funny because we started this meal as a jambalya (or gumbo?!) of sorts but then I felt funny called it such because it was so different!

I always drink a beer thats in front of me too! Salad looks delish! Don’t you love having a local organic butcher. I always visit ours when we run out of meat. The furthest our meat travels is 100 miles!

I eat 3 larger meals and the occasional snack or dessert. I like to feel full and satisfied and I don’t like to constantly stop life to have to eat and think about food all the time. 6 mini meals leaves me constantly hungry.

I am looking forward to the movie which comes out on April 22. And your supper creation looks and sounds delicious. I can honestly say I’ve never had millet or amaranth.
