Heh. Another title I’ve been brewing up!
We did get lost today – in the woods! Lost mentally because of the beauty of a hike.
Matt and I actually went for a quick run this morning and then had a quick lunch before we left to meet our friends.
Cheddar cheese + Strawberry Jam with romaine on Dakota bread
Plus an extra juicy amazing tangelo!! Only con was the seeds.
Then we met up with a group of friends for a hike up the backwoods near the Monticello Trail. Faith led the way! I was thinking it would be more of a walk, but she led us up a mountain. No joke! I was gasping for air at the steepest parts. Note our elevation in the distance!
We climbed up a wooded path and partly up this gravel road to Carter’s Mountain
Our hike lasted just under 2 hours. By the time we got home, I was ready for a snack! This tasted SO GOOD!
Greek yogurt, blueberries, Nuts About Granola Mint Chocolate cookie – a fabulous granola coming to OpenSky Valentine’s Week – 3 flavors in one!
After our active mid-day, Matt and I crashed on the couch to start Season 2. My how things have changed so quickly! We are totally obsessed a la Portlandia.
For dinner we feasted on our leftovers that were planned for Friday.
A Fiesta Bowl for me. Always defined by Mexican flavors all in one bowl. Rice, pinto beans, spinach, tomatoes, salsa, cheese, greek yogurt.
Fiesta in my mouth
Matt had meatloaf with blue cheese, potatoes, and leftover Orzo pasta
We reached a good stopping point in Lost and are focusing on other forms of entertainment this evening. Although I admit, I wish I were still watching…
Allie@LiveLaughEat says
I can’t believe you finished the first season of Lost already! That was quick.

My boyfriend and I watched in within 1.5 months. The whole show.

I am embarrassed to admit that the Portlandia clip is eerily reminiscent of when my boyfriend and I watched The Wire. And Game of Thrones. Oy. We are those people!

I love a good hike! Missed my walks this weekend as I had too much on the go on the homefront. Interesting combo of strawberry jam and cheese…I should try that more often! We had a clean out the freezer dinner tonight. Kids had spaghetti with meat sauce and hubbie and I enjoyed ratatouille with shrimp with enough left over for a lunch and a dinner…perfect! Warming up with a cup of mint tea…still cold from the hockey area!
Diana says

i had been eating oikos but switched to chobani because it says it has no fructose in it. oikos has fructose but isnt fructose different from high fructose corn syrup? if so i would rather eat the oikos because i like the flavor better.
KathEats says
I only eat plain yogurt, so there shouldn’t be any added sugars
Lauren says
So glad you like the new NAG flavor! Mint chocolate is one of my favorites!
Diana says
oh okay i had been eating the vanilla oikos, would that make a difference? would you know if fructose is different then high fructose corn syrup?
and i want to say thank you for your site:) you have been a blessing to me and my family you have changed our eating in ways that you cant even imagine. everytime you have something we have to try it. mostly your breakfast foods. we are all stuck on the cold oats:) yum! thank you so so much for all that you do, i never miss a day of reading what you have posted :]
KathEats says
Yes, the vanilla is sweetened. Fructose is a simple sugar, but not the same as hfcs.
Glad the blog has been helpful!

Fiesta bowl! Great idea… I occasionally go to Chipotle to indulge in a different version of a fiesta bowl, and this inspires me to just throw a healthier version together at home. 🙂 Thanks!

The first picture is reminiscent of a wine country-type landscape. Gentle rolling hills, the rows of crops (grapes), the sunlight; for a second I thought you were going to say you jetted off somewhere this weekend to take that pic 🙂

Ah, Portlandia! People outside of Portland think it’s funny because they assume everything in it is an exaggeration or caricature… but it really, really isn’t! That’s what makes it extra hilarious to those of us who get to live here!
~Christy says
Beautiful hike! Your sandwich sounds awesome — would never think to do that but I imagine the sweet/salty combo must hit the spot! Thanks for the idea!
