I’m feeling kind of funky tonight, and I know that hormones are 100% to blame! I have experienced enough cyclical “out of the norm” moodiness to know that this feeling I get every now and again MUST be hormones. It kind of feels like my nerves are churning!? I’m doing my best to accept my nerves tonight and just relax. It’s tough! I want to do everything and nothing at the same time.
Also, perhaps I’m missing a daily dose of endorphins from lack of sweat!? I’ve been cold all day! Definitely didn’t get to the gym. Instead I took a niceeeee long hot shower 😉
Because of my funky nerves, we decided to scrap our planned dinner and do something super easy involving these beautiful local eggs Karen’s friend Tracy sent through to us!
Do you notice anything out of the ordinary?
I guess someone else was in a funk tonight too 🙂
We made egg sandwiches with a side of kale chips with those green eggs!
Pan-fried egg with avocado, red pepper, mustard, jalapenos and lettuce on Honey Whole Wheat
With a nice pile of cracklin’ kale!
Betcha can’t guess what I had for dessert!?
chelsey @ clean eating chelsey says
I didn’t know that green eggs really existed! Enjoy that dark chocolate and let those hormones fly! 🙂
Kelsey says
eggs for dinner is always a winner. everything looks beautifully delicious, kath!
Hannah says
Oh gosh, I can’t help giggling at the idea of craving/needing/wanting eggs because it’s that time of the month… Eggs every which way!
Angela @ Eat Spin Run Repeat says
I don’t eat eggs for dinner nearly as much as I should. Yours look delicious – even despite the green-ness!
Christine says
Yeah! I always forget about eggs as an option! That sandwich puts my eggs to shame, though!
Holly @ Couch Potato Athlete says
See, even the eggs want it to be Spring!
dee says
I am totally in the same boat too! 🙁
Heather says
I love egg sandwiches – those eggs look fantastic. I cannot wait for our farmer’s market to start again – there is nothing better then a fresh egg.
Feel better – I hate when hormones do that to you!
Ellie@fitforthesoul says

Green eggs?! That’s new to me!
I hope you’re de-funked soon. 🙂
Averie (LoveVeggiesAndYoga) says
sorry about the random hormones and weird-ish feelings. There is a product called Natural Calm (it’s a magnesium supplement) that is great for helping with relaxing the mind/body/spirit, calms nerves, and is my go-to. Most of us are mag depleted b/c of stress, toxins, working out, etc. and this helps to balance me. And is more absorbed by the body unlike most other forms of mag.
Sorry for the ramblings 🙂
Your eggs and kale chips look delish!
KathEats says
Or you can soak in Epsom salts!!
Jessica @ How Sweet It Is says
I always eat eggs with my kale chips!

You guys have a lot going on right now. Take care of yourself!
Flourchild says
Take care and Im glad you had a day to relax from exercise!
Mandiee says
I hope you feel back to normal soon. I find that I feel a little off on days when I don’t practice yoga (my exercise of choice), but nothing a little hot tea and few restoritive poses can’t help. Plus I know that my body will feel that much more rejuvinated when I’m ready to get back into it. Your kale chips might help, too. I love crunchy, nooch-y chips!
kell says
im kinda glad you took a day off from exercise, i was starting to feel like such a slacker every time i read your blog . . .

egg sandwiches are my favorite comfort food. but usually mine are grilled and served by a waffle house waitress with hashbrowns. 😉 yours look decidedly better.
Cyndi says
Let me be the old woman and say … I think you are thinking about having babies … you don’t have to agree, but I’m just saying.
Namaste Gurl says
I totally know the whole hormone/ anxiety issue. I get that all the time when I have a lot to do, but don’t want to be confronted with it, so I turn to doing nothing. Not the bets alternative option, but sometimes it works!
Nice budget- friendly dinner! Love egg sandwiches 🙂
Annette says
I love eggs too!! Best super quick meal around 😉
Jessie says
That egg sandwich looks delish!
Did you see Mark Bittman’s NY Times column about the new USDA dietary guidelines today? This is the last line: “You want an acronym? Let’s try ERF: Eat Real Food.” You guys should team up!
Christy says
You spoke about hormones. There’s a book I love called 28 Days “What Your Cycle Reveals about your Love Life, Moods, and Potential”. It’s a fun read and extremely informative.

I bought green eggs at a local Whole Foods-type of store last summer. I’d love to have them all the time but they were $6 for HALF a dozen!! 😯
Your egg sammich looks super YUMMY!
lauren @sassy molassy says
Well, at least you realize why you’re feeling funky! I know sometimes I don’t realize it until after I get upset or depressed and then realize hello! it’s that time of the month. 🙂 Hope you’re feeling less funky tomorrow. If not, just eat more chocolate (and bread).
PS- I love that you and matt went around the neighborhood businesses giving out bread. I’m sure people looooved seeing you guys (and eating some GH!).
Jennie says
Do you call them tamps or pons?
Justeen @ Blissful Baking says

Kath, your pics are beautiful. The bright red of he place mat, the white of the plate and the egg, the dark green kale are so festive . . . reminds me of Christmas 🙂 It sure is cold enough here, too!!
Cori says
I’ve been feeling the same way. At work I was going crazy while cooking all day and wanted to eat everything that had nuts in it. I guess that’s my thing rather than eggs.
On a totally different note, all of your posts are absolutely killing me about the GH breads you eat! They look awesome. I lived on it when I lived in upstate New York, and now I think the closest one to me is still pretty far away so I haven’t had it in forever. I wish you luck with the company! Hopefully one day I’ll make the trek. Sigh.

Green Eggs!!! How cool!
Simply Life says
Oh I definitely get that same feeling every once in a while – I never thought about it being hormones!
Lauren at KeepItSweet says
Hormones are brutal sometimes, I know the exact feeling!
Sarena (The Non-Dairy Queen) says
I hear ya on the hormones! Mine are crazy right now and I am getting over a stomach bug…double funky! There must be something in the air…everyone seems to be talking about them lately. Dinner looks delicious!
Maryea @ Happy Healthy Mama says
Love egg sandwiches. Yours looks so pretty. 🙂
Krista (kristastes) says
Green eggs rock! I get eggs (for 99c a dozen!!) from my coworker who has a hobby farm in Maryland w/quite a few breeds of chickens…some weeks there are green and even blue eggs. So cool! Feel better 🙂
Stacey (The Home-Cooked Vegan) says
Ugh, I hate those moods. I hope you were able to relax! And I tried kale chips for the first time last week – LOVE them!! I was surprised by how crunchy and chewy they were 😀
Hope says
Green eggs?! I have never seen that before! I was waiting for you to say that you had green eggs and ham from Dr. Seuss! I love kale chips! I like roasting them with some garlic salt. They taste so good and crunchy!

“It kind of feels like my nerves are churning!? I’m doing my best to accept my nerves tonight and just relax. It’s tough! I want to do everything and nothing at the same time.”
WOW! That describes exactly how I felt last night! I often feel like that when I get so anxious, that I want to do everything and yet nothing at the same time.
MelanieF says
My hormones are crazy when I’m close to getting my period. I feel moody and want to eat everything in sight and I feel just plain lazy. I usually take a day off exercise to just do what I feel like doing, which is usually nothing. :-/ hehehe
Jessa says
Kath – The first time I saw green eggs I was surprised they existed too! My mother in law (who lives in the same town) keeps chickens for eggs, so we get fresh organic free grazing eggs every time! Naturally, the color of the eggs depends on the kind of chicken they come out of. The green ones are my favorites…just because it s fun 🙂
Jess (Sweet Potato) says
Green eggs?! whaaat?? I’ve never seen those before! Not gonna lie… if I had opened up a carton and saw green eggs… I probably would have thrown them out! 🙂
Maria @ The Fitted Apron says
I recently noticed that a dozen of organic eggs are all different sizes. Only “regular” eggs are all the same color and size, bleh. I like variety!
Camille says
Green eggs are real!?
I’m surprised you didn’t have ham with them 🙂
Allison K. says
Yay for “Real” eggs! My dad’s hobby is raising chickens (he’s an attorney by day, go figure) and the only time I’d ever had store-bought eggs growing up was at summer camp (and those were probably powdered) and at friends houses. We never had the breed of chickens that lay white eggs (usually White Leghorns), so our eggs were always “funky.”
Now, whenever I got to my parents house I stock up on half a dozen cartons of fresh eggs!
claire says
I love sandwiches with egg on it! Maybe I will try one out this weekend 🙂 Usually I only order whne I’m eating out…
Lee says
That egg sandwich looks amazing. Def. having an egg sammie with avocado this weekend! Green eggs, I always knew Dr. Seuss knew everything!
Allison says
When my kids and I lived in the country I kept some chickens, some of whom laid green eggs. Green eggs come from Ameraucana or Araucana chickens (http://en.wikipedia.org/wiki/Ameraucana), also called “Easter Egg Hens” because they lay green or blue eggs. In my experience, the shells are also harder, but I don’t know why. I really miss fresh eggs from my own hens, whether they were brown, white OR green! Enjoy!
Cassidy @ takingmyplace says
I got some eggs from a friend with chickens last night. She said that the color of the eggs is due to both which chicken laid them (the type) and the age of the chicken… She said as the chickens get older, the eggs fade, which is kind of funny! Just thought I would pass along what she said.
Kathryn says
Sadly I finally had to give up coffee to help with my hormone induced moodiness. I was so tired of feeling so anxious and churny due to hormones. For me, quitting coffee has really done wonders. I still long for it though and feel a bit sad but it’s worth it, I guess.
Laura @ Blogging Over Thyme says
I’ve gotten local eggs before and they were that green color too! I wonder what makes them that way….I love the variation of color though!
Clare @ Fitting It All In says
Your sandwiches always look TO DIE FOR! They are always so rustic and colorful…then again, maybe it’s the great bread:)
TC says
My dad’s chickens used to lay green eggs when I was a kid. That was many generations of chickens ago. Fun fact…they’re supposedly lower in cholesterol!
Meagan says
I am jealous of those delicious eggs!
Lisa says
It’s been ages since I’ve had an egg sandwich. Mmmmm….looks delicious!
