Today was 100% work – and I think I’m done with my project!! I still have to proofread the whole thing, but the hard part is over. The cost analysis and standardizing 6 recipes was PAINFUL! I didn’t move from 11am to 6pm.
Except to eat a quick lunch at 3 –
Tempeh + Pumpkin Butter on a GH Walnut Raisin Bun
Carrots + more pumpkin butter + Barney Butter
+ Kashis
And a yogurt + cereal combo around 5:30p
I finished my project just as it was time to leave. I barely had time to put on some make-up and a nicer outfit –

We met of friends at Mama Ricotta’s, a classic Charlotte Italian restaurant. Because I am so tired, I’ll leave you with a photo recap of all the delectable bites 🙂

We moved on to our next location: Crave, a new dessert bar uptown. At first, we were very impressed.

I got a fabulous muscat
He got port, which we all sipped –
And we ordered this Bourbon Vanilla Layer Cake
For the first time,I preferred the cake to the icing. The cake was moist and dense, but the icing tasted like crisco. I still ate about 1/3 of it though. ‘Twas still good!
But then the service…..was horrible. Kate + Nate + Michelle + Ben didn’t even get their desserts. They went through 3 orders, each which took 15 minutes, before they found out the restaurant was out of stock. It was bad. We were there for about 2.5 hours. The company was jovial, but I think this place isn’t into its groove yet.
Needless to say, I’m exhausted. Can’t wait for a fun morning full of biking + running + breakfast until I have to spend the afternoon doing more Foodservice – a management continuum timeline.

Gorgeous outfit! Sorry the cake was a bust- ‘buttercreme’ frosting is super-simple to make, and stays perfect at room temperature for ages, but that still doesn’t justify its existence, in my opinion.
I have a question – is there a textbook you’re using or resources that would be available for the class you’re doing all of this design and costing work for? It sounds like that would be a really great thing for me to work through for myself (as costing new recipes/products is really driving me nuts) – can you make any recommendations?
(taking an entire class in it is less optimal, for time-constrained reasons, but if it’s the only choice I’ll probably bite the bullet one of these days and do it)

Actually, our textbooks are very vague. We have to figure most of this all out on our own! I wouldn’t recommend either textbook – they are more about equipment and layout. If you google “Cost Analysis” you’ll find some other assignments on the internet that give templates and stuff. I used those to research my template.

That sounds like a fun night, minus the service mishap. We have a similar dessert-only place here in Boston called Finale. It’s pretty yummy, but I’ve had better desserts at places that don’t specialize in it. It’s still worth it, though!
