THANK YOU for all the wonderfully nice comments on my Changing It Up post. I’ve been blogging for 7.5 years now, and it’s just crazy to think that some of you have been following for so long. I appreciate your loyalty so very much!
I am loving bringing back these little chatty posts!
Breakfast time chaos:
I made a smoothie with spinach, banana, peanut butter, milk and oats. I am also back using my Vita-mix full time. I decided that I like having less parts and it sure does make a fluffy smoothie.
Oats in a smoothie make it epic!
And on the side I had toast, oranges, and coffee.
We have a sunny day on tap, and it should be a little warmer than usual, so M and I are hoping to meet up with some friends for a playdate. I’m taking the day off of the gym due to a morning meeting!
Hope y’all have big weekend plans! Tell me about them.

I recently started adding oats into my smoothie! Usually I soak them in water overnight and it makes the smoothie thick and delicious + adds a little more sustenance. Congrats on the 7.5 years.. love your blog 🙂

Hi Kath, I have a quick (RD?) question about milk. I am a cow’s milk fan (in smoothies, in cereal, at least a glass or two a day) and for years have bought skim. I am thinking of switching to 2% for more fat and protein and wondered if you even recommend working my way up to whole milk? I am expecting my first baby this summer and suspect eventually I will introduce whole milk when the time comes for that milk option, and wondered if it is worth it to make a household switch? Thanks!
KathEats says
I think 2% is the best of both worlds -you get a bit more fat but it’s a little lower in calories.

I love oats in my smoothies! It makes it so creamy. Our weekend should be fun- we’re going to the symphony!

I love green smoothies. They make me so energetic. <3
I have to work this weekend, because I had a sick day yesterday. At least I'm feeling better, but it still kind of stinks.

Vitamix is going to be my next big purchase! I can’t wait to get my hands on one. I begged my mom for hers. this was the convo…
“Mom, can I have your Vitamix please!? You don’t use it.”
– “I use it for smoothies”
“When is the last time you made a smoothie?”
– “I dont remember”
and I still can’t have it! haha
KathEats says
Haha!

Do you ever calculate the calories in your smoothie? If so, can you tell us what amounts of ingredients you use and the calorie count? I love making banana, pb, and milk smoothies for breakfast (must try adding spinach!), but I feel like they are so caloric that I have to be extra careful the rest of the day.
KathEats says
I bulk mine up a bit and they are usually 350 to 400ish calories. But that’s about 1/4 of my day and breakfast needs a good start so I’m aiming for that much.
Anonymous says
If they’re 350-400 cals and that’s a 1/4 of your day are you sure you’re eating enough??
KathEats says
Sometimes I have toast too…let’s say 20 to 25% or 1600 to 2000 calories. Seems good for a squiggly line effect kmowing I eat more than 2000 now and then. If I were at a BMI of 18 I would rethink these numbers…but I’m not even close to that 🙂
Jeri says
I have one of those bullets. I like it because I no longer make too much and waste it. However I feel the need to get a vitamix – 1) Because I work at WS and look at it every day and 2) Because you can make so many things in them.
Decisions decisions

I have been reading since the beginning and I have missed these types of post. So happy there will be more of them again.
My 35th Birthday was Tuesday, so I have lots of fun celebratory plans this weekend. Having some girlfriends over tonight for wine and snacks. Going to one of my favorite restaurants and to see Gone Girl at a historic local theater with my sister tomorrow and dinner, cake and ice cream at my mom’s on Sunday. Should be a great (and busy) weekend.
KathEats says
Happy birthday!

Which Vitamix do you have? Is it really worth the money?
KathEats says
The CIA professional line and YES!

I bought a refurbished one – it’s a bit cheaper. While I haven’t compared it to a brand new one, it works GREAT and has for 2 years. I use it every day and it’s fabulous!
Sam @ Grapefruit & Granola says
I love using my vitamix for smoothies. It is the best for that!

I am ‘new’ to your blog, I’ve been following for about a year or so and I LOVE that you’ve brought these posts back. I’ve read a bunch of your archives and enjoyed them very much! I use a Blentec and it changed my blending life.

TGIF! My husband and I are hopefully going to check out a house tomorrow! We are just starting our search process in Charlotte. 😀 Tomorrow night some friends organized a skating party for adults, so that should be fun and hilarious since most of us haven’t skated since elementary school!
KathEats says
That’s so exciting! Where are you looking?
marcie says
I too love my vitamix! Bought it as a combination birthday/Mother’s Day gift for myself 2 years ago!
The smoothies it makes are incomparable, they really are. Go kale! Carrots, ginger, all fruits, protein powder, etc.
Kayla says
I love my Vitamix, which I totally borrowed from my mother one day and still have not given it back 🙂 They make the best smoothies by far. My weekend plans include my first broadway show in NYC on Saturday!
Kristin says
How much oats do you put in? My smoothies have been missing something lately….texture and creaminess I think. I love making them now that both of my kids like breakfast smoothies (and being able to add some greens in for extra veggies doesn’t hurt!). Yours looks yummy!
KathEats says
About a quarter cup!

I’m just looking forward to next weekend when I have Celtics tickets!! Sure they’re playing in Denver (my home town) and I’ll be the traitor wearing a green jersey, but I’m cool with that 🙂

I think the change in the blog sounds really good!! I’ve read your blog for about three and a half years and I really enjoy the posts where you write about your meals the most 🙂
I have a big exam today, and after we are going to celebrate a finished semester! And sunday I plan on spending in bed 😉

I’m looking forward to seeing your “new” post format again, Kath! I’ve been reading since the beginning, and I think that will be fun to go back to the original sometimes. 🙂
Donna says
Do you use your Vitamix for things other than a smoothie? Because if not, that’s some very expensive smoothies. I guess I just don’t get it . Why would someone spend hundreds of dollars on one of these when they could make a smoothie in any old ‘ol
(Inexpensive) blender. Please explain what the advantages are of a Vitamix.
KathEats says
The smoothie is superior to all others in texture.
Matt says
We’ve also made pesto in it, and I know Kath has ground a few random ingredients in it sometimes. I don’t feel it’s a complete replacement for a food processor but it’s pretty effective overall.
Without having something made in the Vitamix, it’s hard to understand how superior they are. Several years ago when it seemed like every blogger started using one, I was as skeptical as you, but it’s unbelievable. Every blender I’ve used in the past will always leave some chunks of stuff, but the Vitamix is completely pulverized and emulsified.
Tracy says
Yay! Love the return of this type of post! I’ve been reading since close to the beginning too…feels like old times!
This weekend we saw American Sniper…omg so insanely good! You & Matt should see it on your next date night!!
Andrea says
Hi, I just recently stumbled across your blog and absolutely love it! I tried your oatmeal this morning and was amazed, I have been looking for oatmeal like that my whole life! I am curious though, is that one serving?
Also, could you provide the ingredient amounts in the above mentioned smoothie? I love smoothies and am always looking for a good recipe. Thanks so much!
KathEats says
Hi Andrea, welcome!
Are you talking about the smoothie or the oatmeal? For oatmeal I consider 1/3 cup to be one serving – assuming you have toppings involved (like peanut butter).
I didn’t measure the exact amounts of the smoothie but I’ll try to pay better attention next time.
Nina at focusedonfit.com says
Love the flavors of this smoothie, seems like a perfect start to the day! My husband can’t stand oatmeal, so adding oats to his smoothie has worked to get him that valuable fiber! Great idea!
