So ready for the weekend!! I’ve been on superdrive since I woke up at 4:50. I think someone put a caffeine pill in my alarm clock! I vacuumed the whole house after breakfast and spot-cleaned a few areas. I’m in SUCH a good mood now that I know the house is sparkling for my Friday evening arrival home! I can just relax in peace.
I bounced out of bed this morning and came down to my NEWLY FIXED COMPUTER!!! (Turns out the wireless card was bad – all that Dell support for nothing! I did have to wipe my hard drive clean, but all is well now).
Had a banana and peanut butter for early breakfast:
Off to the gym for a 60-minute hard spinning class. ~450 calories burned!!
Decided I wanted Baked Apple Oatmeal for breakfast, so I put the apples on the stove before my shower. Perfect timing for a nice 20 minute simmer:
We were out of milk so I just added apples, almonds, and some maple syrup. Also had coffee, which I saved for work.
Iced coffee once I got to work with a little skim milk added:
Total breakfast calories: ~500.
Headed out to lunch today, then to cocktail hour with the mother in law at a bed and breakfast where she is staying due to water damage in her new condo (long story!). Then we’re doing Robin Miller’s Olive Tapenade Chicken from Wednesday night, then it’s relaxation! Tomorrow is a big wine festival. I’ve just got to swallow that I’m going to drink a lot and it’s not healthy, but it’s a once-a-year occasions and I need to just put nutrition and health aside for one day. It’s just hard to think about it that way!

TGIF, indeed. Way to rock your exam! I think I'm gonna simmer some apples this weekend too. Looks like a great way to have "dessert" without being too decadent.
