Smoked Salmon and Veggie Whole Wheat Pasta
with Laughing Cow Cheese, Parmesan, Capers and Dill
OH MY GOSH this lunch was sooooooooooo good!! If you like smoked salmon, you have to try it!
I thought up this recipe last night when I was thinking of what we had in the fridge to use up. It started with smoked salmon, celery and green pepper, but I wasn’t in the mood for a sandwich (since I had a stove top available!) so pasta it was. I LOVED the macaroni shape for this (long noodles would have been gone too quickly) and the cheese, 1 Laughing Cow wedge, melted, and freshly grated parmesan, made the perfect addition. I also stirred in a tbsp of capers and topped with some dried dill.
It was pretty salty, but I can handle that every now and then. If you don’t like smoked salmon, you could use the salmon or tuna pouches.
On the side I had 4 oz of apple slices and 1/2 a serving of Kashi crackers. I probably didn’t need the crackers since I had 2 oz of grains already, but of course I ate them once they were in front of me 🙂
Lunch calories: 500
I can’t wait until school starts and I can eat one lunch a week (Fridays) at home and cook up something warm. I love my packed lunches, but I’m jealous of people who get to eat at home everyday. There are so many more options.
I am perfectly full now and am headed down to South Carolina to get my books and student ID, that is if they are still open! I hope to do some walking and will take my tennis shoes with me.

I was really hungry at 11:30 and still had a lightrail ride ahead of me so I grabed a few almonds for the ride

I got done with my semester few days ago,so now I am enjoying lots of free time and yes,it is so great to eat at home and don't have to pack breakfast/lunch for the day (which i was doing for the most of my days).Semester was so stresfull,but one more to go and i will be graduating. When does the school starts for you???

I think you have a great relationship with food; you can tell that you love it. It really goes to show that eating and being healthy can be one in the same.

Okay- I have a question! How do you figure out the calories in pasta after it is cooked? If I am cooking a dish for the whole family I don't know how to portion mine. I like to make all the pasta together for easier clean up and then take my part out before adding sauce ect. I just don't how much cooked pasta is equivelant to 2oz of dry. Thanks!

Thank you so much Kath and Sarah! My body is definitely not happy with me today (I have such an upset stomach) but I am mentally feeling a lot better. I ate a light breakfast, like you suggested, and after letting it settle went to the gym for an intense hour workout. I am so sore now but I'm proud of my dedication 🙂 For lunch I had a peanut butter and banana sandwich. Not quite the salad that you said but I was feeling so sour that I didn't want to risk throwing up veggies that I would otherwise enjoy. Once again, I really appreciate your support and I know that I can do this as long as I keep on trying while my goal's are in sight. With this positive attitude I'm sure I'll be on my way to my happy weight in no time!

Thanks Kath! It's really come off pretty quickly, but I'm not counting my chickens yet with Christmas around the corner + vacation + lots more weight to go! Reading your blog everyday has been really inspiring though. I still remember a few months back when you posted on my blog a message that basically said "Stop complaining about law school controlling your weight. Law school doesn't make you abuse your body." And you were right! It was just what I needed to hear and I started losing right after. Have a great holiday! I would have NEVER appreciated going to grad school right after undergrad. I really needed these 2.5 years to recoup from the mental strain of my college and put myself to use in the working world, but now it's SO exciting. I'm sure I"ll want to go back again 20 years from now just for fun and it will be EVEN MORE fun then!!

Good question!! It's hard to get accurate nutritional information when you're just eyeballing servings. When making recipes, I usually do "one for you one for me" style of just splitting the spoonfuls between bowls/tupperware. A food scale is also a good way to get equal portions of something like soup. I think your best bet is to just use a measuring cup to pull out your pasta and then add on the sauce? I try to keep our dishes uniform so they're easy to divide by servings. So my best advice is to just ballpark those recipes! I think 1 cup of pasta is about 2 oz, depending on the shape of the pasta.
