LOVED this lunch. It was almost too much food – I kept having new things to eat! But it was delicious and filling. Hopefully it’ll last me through 5:00 when I have my early dinner, but if not, I’ve got a half portion of oatmeal planned.

I got in 28 minutes of walking out in this beautiful winter blue sky day. It felt good to stretch my legs!
Dinner
Dinner tonight is at Queens for my last nutrition class before our final exam. I’ve got about 500 calories to spend there, so we’ll see what’s on the menu when I get there. It’s not a very good dining hall – there are rather skimpy options for vegetarians and healthy eaters so it’s basically hit or miss. But for $6.50 it’s the best price in town for all-you-can eat! I’ll have to leave class early tonight though, because…………..
Travel Updates
Yes, I’m traveling again! To Philly and back for a client meeting. Our flight leaves at 6:40 a.m. which means I have to get up at 4:00 a.m. tomorrow. Ugggg! No workout again and another long day in the airport. I’m planning to take a PB + Banana sandwich for breakfast – a new experiment – but this time I REALLY have no time to make oatmeal or anything. I’m hoping to pick up a latte at the airport. Lunch is 100% a question mark. I have no idea if we’ll go out with the client or what. I won’t be able to blog until I get home that night around 8 p.m., which is when I’ll eat dinner, unless our flight is delayed, in which case I’ll dine at the airport and pay for wireless while I wait. I’m thinking I’ll pick up a salad at my favorite grocery store on my way home if we’re on time. Husband will be working at an event, so I’ll probably just crash after that!

My gosh Kath, that's a lot of food! 🙂 It's obviously super healthy and I'm sure it tastes delicious but I know, in my case, about half of that would sufficiently fill me up. That's where my question comes in… Even if I have eaten less calories or less of a certain food group than planned and am full, should I continue to eat? If not do you think I'd be starving soon after? Thanks!

I think the recommendation is that if you are full, you should listen to your body and not continue to eat. Perhaps you could just save some of your lunch and eat the rest later in the afternoon? I have definitely done that before. Often if I get a really voluminous food like a broth soup I will be hungry sooner despite being full. I just have a snack an hour later or whenever I get hungry.

I've got a question about the pumpkin "pie" recipe you posted…how do you add yours up to be 105 calories if 1/2 a cup of pumpkin puree is 40 cal. and a little less than 1/4 cup of egg whites is ~25 cal? Am I missing something??

You're right. The pumpkin should be lower. Maybe I logged it as 1 cup of pumpkin? No idea.
And I have a 3 oz vacuum packet of tuna when I made tuna salad.
