Off to another day of class!! As I was laying in bed last night I realized – I’m very, very busy but it’s all with GOOD stuff (even the stats and chemistry…) Happy busyness is much, much better than being stressed, so I should use the term “happy busy” instead of the negative stressed.
Pre-Breakfast
Today I had toast (rustic sourdough that the husband made) with PB and jam. I have to say, I got hungry during my workout – does not hold a candle to the mini oatmeal pancakes!
Workout
Great workout again today!! 30 minutes stairmaster, 12 ET, and 15 upper body lifting. 460 kcal burned!
Frozen Tropics
For breakfast today we decided to do something different and use some frozen tropical fruit – mangos, pineapple, strawberries, and peaches plus some raisins. BIG mistake. Not only was it a huge dissapointment in general (I missed the creaminess of banana and PB) the fruit was freezer burned!!! I have an extrememly good sense of smell, which means taste comes along for the ride, so I can taste freezer burn a mile away. Unfortunately I’m not wasteful so I ate it anyway. What sadness!!
With hot tea for ~400 kcal. (510 with toast)
Today
I’m wearing my new black shoes today with band aids over yesterday’s blisters! SOOO comfy 🙂
I have Chem at 10, Physio at 11, Lunch in the dining hall at 12, Study at 1, Lab at 2, Homework at 4, and dinner at 7 today. Whew!!
I packed a bag of Fiber One, Heart to Heart, Almonds, Pistachios and a few dried cherries to have this afternoon. Count this as the one and only photo since I’ll eat it sporadically!

Hi Kath! I love your blog! Way to go for returning to school, I think that’s wonderful! What’s your major? Is this undergrad or grad?
I am intrigued by your oatmeal pancake that you freeze. How do you make these pancakes, and do you wrap them in plastic to freeze?
Also, when I eat Peanut Butter prior to working out, it repeats on me. Does this ever happen to you?

For a tropical twist, sometimes I’ll cook my oats regularly (in milk over the stove) and add some pineapple, raisins, and walnuts in while its still cooking for the last minute. It gets all nice and warm, and the raisins get plump and juicy and the pineapple makes everything so sweet and delish. Yum!! It’s always such a dispapointment when oatmeal turns out wrong though…thats happened to me too many times to count (adding a cup of plain yogurt on top for example, is disaster…haha.)

NCCarter, good point! Location is a major factor – that is true everywhere, I guess. When I was househunting, I had friends from out of town trying to "help" – they'd find what seemed to be a great house, at a great price. But since I live here and they don't, they didn't know what I know about the neighborhood or part of town. (Did that make sense?!) Anyway, sorry to take the focus off food and healthy eating for a minute! 🙂

Every pizza is different so I just try to go by what I know about the style I had and what I know about the kinds in the Calorie King database. When I had the 8″ at Wolfman last week I just used a “8” personal pizza” (and made sure it wasn’t thin crust) as my amount – I think it was Subway’s? It’s really just a guess though – mine could have been off by hundreds. When we make our own pizza, it’s easy to calculate the info. It always help to eat somewhere that nutritional info is available.

I just had a question about the Calorie King web program. I’ve just started using it this week, and it’s great. I was just curious how much you paid attention to the target fat, carb, protein, and fiber grams at the bottom of the food log. I realize I’m new to this, but I can’t seem to ever get them in the right range. They’re always too high or low!

Secondly, I know you are a pretty big fan of natural and organic foods, but I was wondering what you did about skin care, etc?
I really strive to look for simple ingredient skin care, and organic also. It’s hard though b/c I have a pretty big allergy to tree nuts. Do you have any suggestions on what products you use (even if it has tree nuts it’s okay, I can check ingredients and some are okay topically). Sorry if you’ve answered before.
ANYONE with suggestsions would be greatly appreciated!

Ick! Freezer burned frozen fruit is the worst…it’s one of the reasons I switched to bananas! Also, I wanted to let you know that my husband and I tried your black beans with sweet potatoes…and it was sooo delcious, and very filling.

Just thought I’d chime with an answer to anon’s question about real estate in Charlotte. I live in Maryland (Baltimore area) and yes, real estate in Charlotte is a lot cheaper! My brother lived in Charlotte until a few months ago, and every time I went down to visit him I would check out the real estate section in the newspaper – and I was floored by how much more your money gets you down there. I recently bought a house so I was especially interested to see what I could get with the same amount of money in Charlotte. As for the rest of the East Coast, real estate in places like the DC and New York areas are even more expensive than Baltimore, but I do think that in general, cost-of-living (including real estate) in the South is lower than up north. Just my 2 cents – I hope it helps 🙂

Definatly cheaper. My boyfriend and I were looking at the Wilmington (NC) area, and noticed that a large sized house was between 200K and 300K, where as here(in MD, DC suburb) you can hardlyget a one bedroom condo for that much! I can’t wait to move south!

I wish I had more money to buy nice skin care products! Right now I’m using Clinique on my face, Dove for my hair, and Dove on my arm pits 🙂 , Nivia on my body, Olay for my soap. And a mix of Clinique and Neutragena for my makeup. I’m more concerned with organic dairy than skincare, although if I could afford it I’d go 100% organic all the time. (Cost is really the only reason I don’t – I wish I could support the whole organic industry)

I think the others answered the question well. There are plenty of expensive houses around here, but they are in the really nice parts of town. I think in general RE taxes are much lower in the south. I really have no idea though! Thanks to Sam, Becky, and Caitlin for the knowledge!

I do sound like a yippie!! I use Spectrum Canola Light Mayo. Recently switched from Hellmann’s Light b/c of the canola. It’s more $$ but I don’t use it a ton of it’s worth the extra for when I do.

Just had to throw in my 2 cents about NC real estate. I live in Raleigh, and work in real estate. Overall, real estate is much cheaper here than in say, DC, MD, and of course, New York. But like everywhere else, location plays a huge factor. So, when you look and see “big” houses for $200-300K, you’re probably not looking in the “best” parts of town. We’re currently looking for another house, and cant’ find anything we want for under $450k…and we’re certainly not looking for a mansion or anything. We’re just super-picky about location. I know that’s still a lot cheaper than other places on the East Coast. I just know I’ve worked with a lot of people who are relocating to NC, and they always think it’s going to be SO much cheaper, but then they’re kind of surprised at what they can truly get.
By the way, I love the term “yippie.” 🙂
