For some reason juice + smoothies were all I wanted to eat today!! I satisfied my craving for liquid gold not once, but twice!!
Remember Matt’s comment about the roughage at lunch? He was right! After I ate my sandwich, and then that huge salad, I had no room or desire for that apple! I tucked it away for a rainy day.
Because on this sunshining day I got myself a beet, spinach, carrot + apple juice from Carolina Smoothies, which is right next to my office and since it was my last day, I had to get one!
The smoothie was delish and gone in about 4 minutes. That’s the one bad thing about veggie juices – they go down so easy!
I said my farewells to my office. I really enjoyed this rotation and they are such a great group!! As I told one of them this afternoon, it’s so wonderful that because they all preach wellness that it’s encouraged to have sneakers under your desk, walk at lunch and be well. Wish all offices had that mentality! The group was so nice – I was sad to have to move on!!
Which brings me to………da…da…daaaaaaaaaa CLINICAL.
I had to go buy a white lab coat today!!! Wellness + food are my things. Clinical is not my strength! I am good at science and math, but I’m just so nervous about this rotation! It’s also the longest (50% of my internship time). I think that’s why I’m nervous – the next 3 months are all clinical! And I hear I’ll be seeing patients like a normal dietitian not too far into it (with supervision of course). It feels so weird to be part of healthcare. I’ve always been on the patient end, and it’s kind of hard to belive I’ll be on the white coat end. Maybe this will help with my blood pressure-raising white coat syndrome I have at doctor’s offices!?
But you wont’ BELIEVE how much my coat cost!!! $26.26!! That MUST be a sign!!
I got home and unpacked and packed for NYC and emailed and worked. The usual!! I probably have a 2 hour routine of debriefing from the day, preparing for the next and all my blog work I do regularly. Plus 1,000 emails and comments!
So while I worked I kind of wanted another snack, but I never stopped to have one. Soon enough it was 7PM and I was so ready for dinner!! Although…..I really did not want the leftovers we had planned. I was craving a SMOOTHIE!
I had a second round of liquid gold, this time a literal blended salad!
I filled the Vita-mix with raw kale and LETTUCE. I’ve never made a green smoothie with lettuce before! But we had a lot of food to use up in our fridge and I decided to use as much as possible. The lettuce was really mild in the smoothie. Probably a great alternative to expensive spinach! Very nutrient dense too.
We are out of milk, so I almost had to cancel my plans until I saw the Simply Orange Mango!! PERFECT!
The [Vita] Mix
- Greens to the top of the blender
- 1 cup OJ
- Half a large banana
- 1/2 cup pumpkin (using it up!)
- 1/2 packet Vega Smoothie Infusion (for protein)
- 1/3 cup cottage cheese (also for protein)
- Handful ice
I forgot about the Vita-mix plunger!! With that much lettuce, I needed to use it and it worked so very well! Genius.
This was the best green SIAB I’ve made in ages!! Loved the orange flavor and it was thick and the perfect consistency.
The mix made QUITE a lot too!
SIAB or Soup? How can you tell!?
Remember that Spring Greens Soup we made a week ago? There’s no difference! So long as they have veggies, soups + SIABs are the same 🙂 Well, except that I added some granola to this one 🙂
Galaxy Granola Cranberry Orange. I thought orange + orange would go well together. They did! I still liked the vanilla almond GG the best though.
So very delicious! This was SO FILLING though. My stomach didn’t know if it could fit all the green and I had to take a break at one point! Nutrient-wise, this is pretty filling. Probably around 500 calories! And with fruits, veggies, protein, and grains.
One awesome dinner!

I have tomorrow, Good Friday off, and I decided with my one-and-only 3-day weekend I had to seize the opportunity and book a trip somewhere!! What better place on earth to enjoy an exciting weekend getaway than New York City!! I’ll be paying a visit to Open Sky while I’m there. And flying through the Open Sky around 8AM tomorrow. As a result, my breakfast post tomorrow will be a bit delayed – sit tight!!

I know you can’t reveal a lot or take many pictures, but as much info as possible during the clinical portion of the internship would be awesome!!
I job shadowed an in-patient dietitian and I must say they seem to have less of a patient-professional relationship than outpatient ones I’ve witnessed, which is a huge turn off for me. I hope you enjoy both of them if that’s what you get to do though!
The lab coat is also really suiting on you and the smoothie dinner looks grand 🙂

We have a Jack Lalanne juice at home and it always takes me 14x longer to make the juice and clean the juicer than it takes for me to guzzle that concoction down!! Especially when there is a straw involved 🙂

little clinical tip: form a relationship with the RNs! If you are able, ask him or her if it is a good time to see the patient since they have the best idea of what is going on at that moment. A lot of patients get tired of having stranger after stranger come into the room.

Hi Kath, I’ve been craving smoothies and juices all week and just recently bought a blender. (Couldn’t afford a vita mix, but I had to try SIAB’s somehow!). I used it tonight for the first time for a kale and arugula smoothie dinner, only to check out KERF for the evening and see that we had nearly the same dinner! I had OJ and banana in mine too and it was awesome! And, like yours, REALLY filling. You’re fiber-full lunch and dinner inspired me to ask how you do with such a high fiber diet. I’ve been slowly transitioning for a long time to a healthier more plant based diet. Now I’m a totally herbavoracious plant eater, heaps of fruits and veggies every day, but I find that eating all of this roughage makes my tummy unhappy and rather, well, bloated… As a clever white-coated dietitian and fellow roughage eater, do you have any tips to get around this high-fiber problem?

I don’t really have any problems unless I eat a TON of things – like cabbage, lentils, salad, beans all at once. The RD suggestion is to add it a little at a time!

has TONS of fresh fruits and veggies, real food buffet, organic soups, made to order smoothies… It is hard sometimes when you’re running around to find good food to eat, but this place is the best! If you need any suggestions on good places to eat, let me know! But I eat here at least once or twice each week, whenever I’m out and about running. Cheap too!

I’ve been feeling down about my body lately and your post a few days ago about how you just made simple changes (cutting back on sweets and alcohol) was so refreshing to me. I’m not trying to lose weight, I’m trying to gain, but your laid back outlook and attitude was just so refreshing and helpful to me. Thank you for not doing weight loss challenges or crazy diets on your blog. I think this is a very refreshing aspect about your blog. I’m glad young women have something like this to read. Best wishes as you start clinical. You look so official in your lab coat! I actually don’t wear mine in my peds rotations and staff relief because the kids get scared of people in white coats pretty easily. 🙂 You have all of the background knowledge to complete clinical, which is great, and you’ll quickly learn that a lot of things are done differently than textbooks say. I think one of the best things to remember is that patients are people, too. There is no reason to be afraid of talking with them; you know more than they do about nutrition. That has gotten me through a lot of rotations..acting confident can go a long way. I just think about how I would feel if a dietitian came into my room. You’ll do great! 🙂

You are going to have a blast at clinical. It’s a little scary at first having quite a lot of responsibility, but before you know it, it becomes second nature. And walking around in that white lab coat really makes you feel like one of the health care team! 🙂
Before I started my clinical rotations, I was like “No way am I doing clinical as a career – I don’t like hospitals!” But now … I actually like it. A lot!
