First off, I have had insatiable hunger today!! I think it’s just one of those days of the month because it doesn’t feel like real hunger – just this pang that won’t go away! I’ve consumed many bottles of water (I also feel dehydrated) and clusters of granola, but it wasn’t until dinner that I really felt satisfied.
Afternoon snack of milk, frozen raspberries and granola. Protein, carbs, fat, calories, water – should have done the trick!
Nope.
Dinner was sponsored by Karen and was absolutely gorgeous on our plates!
We had a beet salad with goat cheese, basil, olive oil and salt
And bison sliders!
With jalapeno inside and avocado on top! Served on a Honey Whole Wheat roll.
We all agreed that these were the best burgers we’d had in ages!
Lastly, grilled eggplant (smothered in olive oil and some glugs of Liquid Smoke) plus fresh garden tomato
I just love meals that have an abundance of vegetables!
Something sweet to end the night – a single bite of Krissy’s Butterbeer cupcake!
I need to shower to wash the bug spray off my legs!
G’nite.
Hillary says
There are few things more delicious than grilled eggplant on a summer night. Fabulous!
Lauren @ What Lauren Likes says

Definitely try bison (buffalo) if you get a chance! It’s delicious – a buffalo burger has so much more flavor than beef 🙂
Jenny @ Fitness Health and Food says
I bet your hunger was caused by your awesome boot camp class! 🙂 Strength training boosts my appetite like no other workout!
Karen is such an amazing cook! I hope that she is doing well! 🙂
Cait @ Beyond Bananas says
I am loving that afternoon snack! I bet the milk seeped into those frozen raspberries and made it delicious!
Angela (Oh She Glows) says
I always get ‘hormonal’ hunger that won’t go away no matter how much I eat. It usually happens 2-3 days a month and nothing I eat sends that ‘I’m satisfied’ signal to my brain…weird!
Brittany @ Itty Bits of Balance says
mm! I live in Orlando by Islands of Adventure (which has Harry Potter land) and people go absolutely INSANE for the butterbeer! I can only imagine how phenomenal the cupcakes taste… 🙂
Betsy says
That avocado on top is a beautiful pop of green. I’ve been eating avocado at EVERY meal lately, even with breakfast ( tremendous with a poached egg in leu of toast). Who is the Karen character always popping up with brilliant food? A neighbor? A relative? Seems like she joins you all the time for meals!
KathEats says
She is my mother in law!
Baking N Books says
I believe Karen is Matt’s lovely mother.
Love the photos. – stir some nut butter into your milk/granola combo – that might do the trick 🙂
Donna says
Your comment about Karen…So nicely said, Baking N Books. Karen’s salad looked absolutely gorgeous.
Baking N Books says
That’s so nice to say Donna. I speak only the truth! 🙂
Estela @ Weekly Bite says

Lauren says
Ooops meant hours. It’s getting to me, huh?
Vanessa says
Dinner looks yummy! By the way, I stopped in the bakery today, bought a loaf of bread and some Naturally Nutty and a Savannah bar. I think it was an unusually slow time so no one was really around. Sorry to have missed you, but the store is great in person!
KathEats says
Awww if it was after noon I was there!! I was probably doing office stuff. Sorry to miss you!
Margo @ Peanut Butter Trees says
That dinner is truly beautiful! The colors are just popping. Beet salad sounds so good and summery, I’ll have to try that out sometime.
Cait's Plate says
That dinner really does look fabulous. I’m glad you enjoyed it. And, my offer still stands to have Karen move in with me and make those wonderful dinners if she wants! 😉
Also – the insatiable hunger thing was me last week. It didn’t matter how balanced my meals/snacks were I was just always left with a bit of hunger! So frustrating!
Becki @ Becki's Whole Life says
Everything looks so good. We love bison burgers. Our Whole Foods grinds it fresh and its actually cheaper than some of the other places that sell it frozen! The eggplant with some liquid smoke is very interesting – I so need to try that since I always love the eggplant dips that are smoked. Yum, I’m so hungry now – good job Karen!!
Julie H. says
Oh Karen… You ALWAYS amaze me! YUMMM! Way to go!
The eggplant stole this post for me! ….I have my first little baby eggplant growing in my garden! 🙂 I’m in <3! YES!!!

MmmM! I haven’t eaten meat in a while but those bison burgers look AMAZING.
Also, still have tons of that butterbeer ganache from the cupcake filling (love the images you’ve captured of them BTW!) so I drizzled some over Pudge Free brownie batter and baked up goodies for the office! Mmmmm…the magic lives on!!
KathEats says
Mmm!! I LOVE butterscotch!!

Holly @ The Runny Egg says
“some glugs of liquid smoke” — it is funny how a word like “glugs” can be so descriptive 🙂
Molly @ RDexposed says
Fresh garden basil?? That stuff is ridiculously amazing!
Kristen, Sweetly says
Insatiable hunger and you still just had one bite of cupcake?! Now that’s something… Your granola looks like the perfect snack, too. I’m jealous. Should just go use some of my ten pounds of blueberries and make myself a bedtime snack. :p
KathEats says
I said I was hungry …until dinner! It finally filled me up.
Laura Jane @ Recovering Chocoholic says
I agree with Kirsten – hungry but just one bite of the cupcake! I would have had a tough time stopping at one bite. I notice bison burgers at the grocery store the other day. I thought about the trying them, but the price tag scared me away, especially not knowing if I’d like them!
Gina @ Running to the Kitchen says
What a colorful meal! I’ve never made bison burgers at home, yours look delicious.
Beth Allman says
I just love your blog. I feel like we have a lot of the same tastes, and so many of your staples have become my staples.
I think I am going to get a WWKD bracelet – “What would kath do?” Because I so often think that when I am making food choices!!
Anyway, just wanted to say thanks for your inspiration! and great ideas!
KathEats says
🙂 Thanks Beth!
Keelie says
This food is obscenely delicious/ gorgeous! 🙂
Nancy~The Wife of a Dairyman says
I love the looks of that dinner! We had a family dinner last night on the farm and served a goat cheese appetizer- to old-school bovine dairy relatives, which half of them actually liked. I was pleasently surprised!
Justeen @ Blissful Baking says
The beet salad looks fantastic! Karen is awesome!
Megan says
How did Karen prep the beets, do you know? roasted or boiled?
Karen says
Boiled them with the skins on. I think next time I’ll peel first, then boil. It was a little tricky to get the skins off after beets were cooked.
Kathleen @ KatsHealthCorner says
You snack sound delicious! 🙂
Jenny says

I’m the exact same way today. I know I shouldn’t be hungry because I’ve had plenty to eat, but I get this pang that just won’t go away. I’m sure it’s hormonal, and I’m so glad someone else experiences such a feeling. Otherwise, I’d think I was crazy.
Mike says
Bison burgers are awesome. I love the avocoados and grilled veggies. Everything is very colorful!!
Laura @ Cookies vs. Carrots says
That salad looks so good. Are those a special type of beet? They look so different from the ones I usually see.
