It was quite a food sampling day ! Food Comp test went great, and we got to start lab early – in time to eat it for lunch!
I had a carrot for a snack –
We were in charge of making a Tofu Quiche . It turned out quite good! The only unhealthy part is the store-bought crust, which had trans-fat in it, but the filling was broccoli, garlic, onion (eww) and a blended mixture of firm tofu, skim milk, mustard, nutmeg, cayanne, and Parmesan cheese. I might try to make this again sometime!
Today’s experiments all involved legumes – and unfortunately too many onions!! I could never go to culinary school because of my onion aversion. Luckily 2 of the 3 I could pick around –
Lentil Salad , Bean Burger (didn’t eat it b/c of undercooked onions), Tofu Quiche, MorningStar Soy Crumbes "taco" meat (really good!!).
And finally, Tofu Mocha Mousse ! It was a little grainy from instant coffee, but otherwise pretty good.
EarthFare Grand Opening!!
I was going to eat my nectarine and kashi crackers to round out lunch, but since we were done with lab around 1pm I decided it was perfect timing to check out the new EarthFare ACROSS THE STREET FROM WINTHROP (!!!) that opened today. I am more than ecstatic about the EF because I’ll have to eat lunch at Winthrop 3 days a week this fall and it’ll be the perfect place to go for wireless and a delicious lunch. The salad bar is a little smaller than my Charlotte EF, but the deli case of pre-made salads and salmon and all is huge. Yay!
Much to my unexpected delight , they had samples of tons of stuff!! I definitely ate too much, but what’s more "worth it" than a gourmet grocery store opening.
I found out quickly that cameras were banned from the store, but I managed to snap some quick shots. I’ll do a recap of the unphotographed stuff at the bottom….

CSA
I was early for the CSA, which wasn’t supposed to be ready until 2pm. I got there at 1:40 and it wasn’t there yet (in someone’s garage.) I thought it would be hypocritical to be waiting for a CSA delivery in a running car so I turned it off and opened the windows. 25 minutes in 100* heat is H.O.T! I managed to get an assignment done, but was SO happy when the truck finally got there.

I am so with you on the onion thing. I also can’t stand undercooked peppers, but it more of a indigestion problem that a not liking them problem. My onions and peppers have to be SUPER cooked. It got worse after I had kids, so watch out! =)

I just had a new Whole Foods open in my town today! Crazy! I went down there and it was nuts–super packed, but a gorgeous store. I didn’t get to try any samples, though. It also had the most amazing and largest salad bar I’ve ever seen. Too bad it’s not closer. I can’t justify driving 15 minutes just for a salad…

sheesh! I just googled to find my local CSA and it works out to $35 per week, plus working there! Thats too much for me to justify…I’d much rather go to my local Farmer’s Market on tuesdays and spend about $15 a week to get exactly what I want…but its a good idea in theory! I like the idea of supporting local farming…maybe it doesn’t cost that much everywhere…

If my comment added to the hostility I apologize, I was commenting more from a anthropology point of view than a critical one (although it may not have come off that way). I read some of the questions people ask and cannot imagine asking someone else to answer them rather than looking myself. I’m not sure if that means I am too secure or too insecure. I think it’s interesting to see how different people view different (random, non-important) situations.

Ok, I accidentally posted on the earlier post – but just wanted to see if anyone that reads this lives in London? I am from San Francisco but have lived in London for 2 1/2 years. Living here is so different food wise than it is at home. They’ve got crazy options – pretty much only prepackaged sandwiches and sushi for lunch, for example. And none of the same brands that you girls talk about like Kashi. And although they’ve opened up a Whole Foods in Kensington, I am not impressed with it. I prefer Waitrose. Anyway, just wanted to say I LOVE reading this blog and am addicted – while I love living here I miss certain things about living in the U.S. Reading this each day reminds me of home. Plus it is great for health – Kath is amazing and I am pretty confident she is going to become famous in the next few years – she’ll have her own show on the food network or she’ll have a cookbook, probably both! Anyway, just wanted to post this, because I am really enjoying the blog (not so much all the weird arguing in the past 2 posts) but generally it is great. Thanks Kath, keep it up. xx

KrisT–There are so many variations because it depends on so many factors! Age and heart rate, how hard you are working(interval or endurance class), how much you weigh, and length of the class. Usually I go by 10 calories/minute if it is a moderately intense class.I burn 500 for a 50 min ride and about 350 for a 30 min ride because it is usually intervals.

Unfortunately – no! It was the one sample I threw out 🙁 It was just kind of gummy to me.

It was about 2 cups chopped broccoli plus onion (I don’t recommend those!) and garlic sauteed. Then you make the “egg” part with 1 block firm Nasoya tofu, 1/2 C milk, 3 tbsp parmesan cheese grated, tsp mustard, tsp cayanne, 1/2 tsp salt. Blend together in blender and pour over veggies in a pre-cooked store-bought crust (the tofu was thick so we had to press it in). Bake for 40 minutes at 400*. I’ll try it sometime and do a formal recipe, but that should get you there.

I second KatieTX. It really varies – even from your own self. I’ve burned anywhere from 350 to 500 depending on length and intensity, but most classes I’m probably around 450 or so. I’d lean more towards 8 kcal/min. But that’s just me.

I normally read all the comments before posting mine, “mais” today I didn’t, and yesterday I had people coming over for the St. Jean, Quebec`s National Day, and was busy , so didn`t get the KERF pill. Now, I came back to read the comments and I see a lot of action. It`s funny how each of us knows he/she is right. Laura- not sure if you will see this but I’m from the states and have lived in Dublin for 2 and a half years- so I’m in the same boat in not being able to get some things here! I always bring my lunch to work here even though no one else does because I can’t do those prepackaged triangular sandwiches!
