^^ My sweet snuggle boy! He’s getting 3 new teeth! Here’s what we’ve been eating. Splendid Spoon, Daily Harvest flatbreads, pancake muffins, and more!
Breakfasts
Cinnamon Chip French toast + oranges. The only fruits we’ve had during week 2 of our grocery shop are apples and oranges. And frozen fruits. I’m eating an orange or two a day.
Breakfast in bed! On Saturday morning the smell of country ham wafted upstairs. Thomas delivered this a few minutes later <3 JM Stock biscuit and ham (both from our freezer).
I made some little pancake muffins as an experiment – they turned out pretty good! Peanut butter melted on top.
Splendid Spoon + coffee in the playroom.
Lunches
Via Plenty Cville – a Pie Chest sausage, honey and goat cheese hand pie and Plenty salad. A happy day!!
Same thing, different day.
Splendid Spoon Curry Cashew rice bowl with plain yogurt on top
Daily Harvest Flatbreads
There are brand new flatbreads from Daily Harvest!!! They’re all plant based and packed with veggies, from the crust to the toppings. In addition, they are also gluten-free and vegan. (Although I admit I like mine with some cheese on top 🙂 ) There are 3 flavors – check them out and get $25 off!
Dinners
Take out from Zocalo was SOOOO GOOOODD!! We got the chile relleno and boy was it delicious at home.
We had a smoked pork butt that Thomas cooked on the egg with rice and salad on Sunday night. I totally unplugged and didn’t get a pic!!
And lastly – another Plenty meal of apricot salmon and confetti couscous. Yum, yum!
Hope you guys are doing well out there <3

Have you checked out Cavalier Produce? A friend recently ordered from them and said if fresh fruit makes you happy, check them out!

I haven’t! Thanks!

Hi Kath! What kind of plant is that behind your smoothie bottle? It looks so fun!
Kath Younger says
I’d have to ask Thomas, the gardener 🙂

I feel like you do a really good job of portion control, slow eating for a mom and intuitive eating. Can you share about that?
Kath Younger says
Thanks! It’s not always that way, and sometimes I do eat standing up or chow down on some cheddar bunnies. But intuitive eating is something I’m always working on and I think portions come naturally because I’ve been paying attention for many years. Mindfulness is step one!

I finally made it out to grocery shop and i was like on guys grocery cart games just throwing stuff in the cart. We had a pretty empty fridge minus condiments so I was just grabbing and running. I was able to get grapes, bananas and apples. And I got fresh broccoli, carrots, celery and sweet potatoes. I did get two mixed vegetable packages frozen. They were all out of jasmine rice but we are still good on that for awhile. I am excited though because they had a cabbage salad mix so that means we can use our leftover pork butt as your pork taco recipe tomorrow night instead of bbq pork on a baked potato! Last night we made a very yummy pot roast and mashed potatoes. Today we are making sandwiches with the leftover meat. Mmmmm..
Kath Younger says
Haha I am imaging you going super fast throwing things in!

Kath, long time reader here. I feel like your blog used have a lot more recpies on it. I really liked to see how you made real food.
I have to admit I find it pretty unrelatable now as it seems so many of your meals are via a delivery service or are Store bought…. like the flatbreads today.
Do you think you’ll go back to cooking again?
Kath Younger says
I did used to cook a lot more! Having a baby-turned-toddler has really changed that over the past year, and now we’re trying not to go to the grocery store so that doesn’t help. This is a take-out heavy post. It’s hard to want to experiment in the kitchen when you also want to make all of the ingredients in the fridge stretch, and getting take out right now is also helping the food service businesses that are closed. We’ve been cooking about half of the time, I just don’t always photograph it! (Last night I made greens with bacon on IG – an old KERF recipe.) I’ll get back to it!

Maybe you’ve done a kids eat post recently and I’ve missed it but, does Mazen eat the same meals as you? Now that we are home all the time I’m running out of lunch ideas! Curious if you’ve have any suggestions?
Kath Younger says
Half the time he does….it really depends on what we’re having and if it’s something he has liked in the past. Taco night, pizza, chicken, pasta = all yeses. Basically if it’s easily deconstructed then he does but if it’s a mixed meal then we’re more likely to make a kid dinner.

Hi Kath , your meals look yummy. Random question, do you have toilet paper where you live? I live in NJ and it’s almost impossible to find it. I’m just curious how it is in other states. Birch is adorable.
Kath Younger says
We use Who Gives A Crap and love it because one box lasts us months. So we’re still going through that. (I’m on my second box since my post in July). I am not sure about the stores!
Zima says
Who Gives a Crap is also completely wiped out of stock 🙁
Our stores in Pasadena, CA still have some, but it sells by midday, so you have to be an early shopper and are limited to purchasing 1 package only.
Kath Younger says
“Wiped out” hahaha. I just put myself on the waiting list 🙁
