How’s your week going everyone? Snow melting? Or maybe you live somewhere tropical. I am jealous. I’ll just pretend I’m there as I sip my chilly breakfast smoothie – berries, banana, milk, oats, almond butter.
This lunch was a random mix of leftovers – ravioli, cauliflower, edamame, artichoke, grated carrots and salmon. Speaking of cold weather, I don’t do nearly as many salads in the winter, so I have to brainstorm veggie-friendly lunches! They usually involve more prep work, but it’s worth it to have something warm.
This kale salad was actually slightly heated – and served with tempeh, good cheese and hot tea! I’ve been using homemade hummus as a “dressing” to massage the kale with. Love its thickness!
We’ve been eating comfort foods here too – Chicken Pot Pie from Cook Smarts (with Matt’s amazing homemade crust!)

Been to Target lately? There is always something great with the Threshold line! Love this mirror! Didn’t buy it…

I friggin love that mirror. I lusted after it every time I went to Target for about a month, and then it went on serious clearance and I still didn’t buy it. Seeing it again makes me feel a bit regretful! Target has been really on point recently with their decor in my opinion. I swear that’s always the case when I’m trying to not spend too much!

I make lots of big trays of roasted veggies this time of year. My favorite is a mix of sweet potatoes and Brussels sprouts. After they’re made we have easy lunches – I just top them with eggs or a cheese crumble or beans.

What about making a big pot of minestrone soup on Sundays to eat throughout the week? Can use a variety of vegetables and beans/lentils and easily add a sandwich or side to compliment the meal …
