Good morning!!
Matt was home this morning which meant 2x baby snuggling and a cup of coffee delivered to me in bed! Loving the programmable coffee maker again : ) I sipped on the coffee while I tidied up the nursery. I put away the rock n play and clean up anything I used the night before and threw aside. I felt like such a parent with a coffee cup…
…and wearing my “house coat” : ) Totally getting my money’s worth out of this robe!
I stashed a variety of bars in the nightstand because sometimes I’m pretty hungry in the middle of the night. I’ve been nibbling off of this one the past few nights and loved it!
After the nursery was tidy, Maze tried on one of the new outfits I bought for our farm wedding – TOO CUTE! Those pants might be designed to be shorts, but they still fit : )
While I got ready for the day, Matt made a killer breakfast!!
Still obsessed with French toast : )
Our method involves soaking for about 20 seconds per side (2 servings = 2 eggs) thick whole grain Great Harvest bread in an egg flavored with 1 tsp each of vanilla and cinnamon and then placed in a nonstick skillet for 3-5 minutes per side.
I then topped this with a thick slather of pumpkin butter. My friend Xiomara works at Parkesdale Farm Market in Florida and sent us this as a baby welcome gift. It’s naturally sweetened and delicious!
Also involved – pan-seared bananas, Chia Charger Buffalo Dirt and a sprinkle of coconut.
My assistants!
After breakfast we Google Chatted with mom + dad! I think they would like it if we had a live web cam going 24/7 so they could see Mazen at all times : )
Some of us took naps
Matt went off to work, and later I put together this lunch from leftovers in the fridge –
Baby spinach, sautéed tofu, roasted squash and apples, pecans, honey, olive oil, salt. My favorite kind of salad!
Incredibly delicious!
When the mail came, I jumped for joy over the Downton Abbey DVD and jars of Barney Butter I ordered!Although I go through stages of nut butters, they all hold a special place in my heart. I get a craving for BB about once a year and just have to have it.
A spoonful served with an apple
Dinner tonight was a special treat from my friend Alice! [Thank you Alice!]
She brought us fish tacos from the Whole Foods food truck. These were delicious! I loved that the fish was breaded – it had an extra layer of savory to enjoy. Stuffed with black beans, cheese, cabbage, lettuce, sour cream and a blueberry hot sauce (also from Parkesdale!)
“Side salad” with the leftovers
I got in bed at 9:30pm and Mazen slept for FOUR HOURS STRAIGHT!! I woke up at 1:45 worried because I haven’t slept that long in nearly 3 weeks! But, my gosh, I felt so refreshed when it was time to feed him at 2 and 4 and 6 ; )

Another great post from the busy mom! What I am surprised by is how your portion sizes and meal frequency seems to be about the same as pre-pregnancy for the most part. I always thought that breastfeeding women ate non-stop and were always starving…looks like that is not always the case! Do you feel like you are eating more now than before the baby?
KathEats says
I feel like I’m eating about the same as I was when I was pregnant…and about the same as I was when I was running 5 miles a day (or the equiv.) So baby care has replaced exercise for the short term : ) I tend to eat 3 big meals a day (I’m not much of a grazer) but my meals are probably bigger and denser than they seem.
KathEats says
Oh, and hunger seems OK but THIRST is out of control!
Ella says
You are so right, I did metamorphose into a nursing CAMEL!
Alexandra says
I’m am literally drooling over the photo of your lunch right now. I’m studying abroad in Moscow right now and salads with tofu are basically nonexistent. The food over here is delicious, but sometimes I just really want some spinach. Enjoy your day!
Ella says
I did live in Moscow too. Enjoy, it is a very special place. I am sure you do not miss the cabbage :)?
trang says
you and your family are just too sweet! love mazen in his overalls! too cute.
Sandi says
Agree 🙂
Katie @ Talk Less, Say More says
The picture of Maze sleeping on Matt’s legs is absolutely adorable.
And that french toast!! You’re taking my french toast craving to a whole new level!!
Tina says
Love that outfit on Mazen. Now all he needs is a little cowboy hat! That banana coconut bar sounds yummy…where does one get such a thing??
Kaitlyn - @runkaitrun says
there is a whole foods food truck!? whaaaaat!!
super cute pic of mazen sleeping on matt’s legs 🙂
Kori says
Mazen just continues to become cuter and cuter with each photo!! Those overalls and “boots” are too stinkin’ adorable. He looks all set for the wedding! 🙂 The food all looks delicious, and it seems that you three had a great day!
Julie@seize the veggies says
Have you watched all of season 1 and 2 of Downton? I found it late in the game and watched them obsessively on Hulu…I had to limit myself! Anyways, it has started back up in the UK…but we don’t get it until January. I am soooo afraid of hearing spoilers…I hate having a story spoiled!
KathEats says
In the middle of Season 2
Anele @ Success Along the Weigh says
That outfit is so adorable I can barely stand it!
Even though I’m full from my breakfast, doesn’t stop me from wanting yours. 🙂
Jessica I. says
Maze is so adorable! How are you liking that rocking chair? We are thinking of getting something similar but have heard mixed reviews on rockers with low backs. I just love that style!
KathEats says
LOVE it! It’s actually very comfy for nursing and I use it sometimes for that.
Jessica I. says
That’s good to hear! Thanks!
Mom says
In the video chat picture, Mazey looks like he’s at a skyped job interview. Very smart and serious!
Laura says
Ohhh I like the copyright on the photos. Very smart! Is this because a lot of sites are stealing your photos? How does that work, legally? I have seen your photos replicated on other sites and always wondered how that was legal.
KathEats says
It’s more of a reminder that taking photos is illegal – especially when posting them regularly and in large quantities.
Katrina says
Hi Kath,
Your pictures are so pretty I love them… I don’t think I’ve ever seen a BAD picture on your blog. Who posts them regularly? I read a lot of blogs and haven’t seen much of your pictures (not to sound mean) but maybe I live under a rock?? Shame on people these days…
KathEats says
Just the paparazzi 😉
Rachel says
It’s actually not illegal when the photos are used in the context of parody or satire. The watermarks just can’t be cropped out. I’m sorry you’re dealing with this, though!
KathEats says
I believe it’s more complicated than that
Mari @ Wine Required says
That French Toast looks amazing. It looks like things are falling into place with the sleeping schedule. It just gets better. 🙂
Annette @FitnessPerks says
Ooooh that food truck tacos & the french toast! YUMMM!
Susan H. @ The Food Allergy Chronicles says
Roasted squash and beets last night…very excited to add them to my salad at lunch today! Your salad has me envious! Pumpkin Butter? How awesome! I thought it was apple butter but pumpkin butter…what a treat! I also have added a copyright to my blog pictures…not that they are any where near the quality of yours…but better to be safe than sorry.
Liz @ Tip Top Shape says
I think baby overalls may be the cutest thing I have ever seen.
Julie H. of Spinach and Sprinkles says
I hate how hungry I can be when I wake up for those middle of the night feedings. I can’t go back to sleep because I’m hungry BUT if I do eat, it wakes me up and kind of rejuvenates me so I can’t fall asleep. Even if it’s 2 or 3 in the morning. Talk about a lose-lose situation.
Katie @ Peace Love & Oats says
Pure bars are one of my favorite brands! Those and KIND bars and Kit’s organic! By far the best GF bars. And Maze looks adorable in those overalls!!! I had tons of different overalls growing up, I loved them!
Sarena (The Non-Dairy Queen) says
I laughed when you said you woke up to check on him…ah the life of a mother. It’s such a double edged sword with the sleeping. When they finally start to sleep longer, your internal clock worries! Sounds like a great day Kath! I hope you three have an incredible Fall weekend!
Marya says
I just gotta say, those overalls are so freakin’ cute!
katie says
What baby carrier is Matt wearing in that picture?
KathEats says
It’s the Boba Diaper Dude
natalie @ will jog for food says
Mazen is so cute! I love those overalls 🙂
I haven’t had barney butter in SO long, I need to get my hands on some.
Michelle (Peachy Palate) says
Your salad is all my favourite foods combined! Yum! Mazen looks so cute in his dungarees! They’re a baby outfit must!
Laura says
I still can’t get over how darn cute Maze’s nursery is! It looks so bright and happy in there!
KathEats says
Even in the middle of the night it’s a happy place : )
elizabeth says
I don’t make french toast often. Only egg, vanilla and cinnamon for soaking, no milk?
KathEats says
I never bother – I think Matt does add a splash though?
chris says
OK I’m making french toast for lunch! Just skyped with Caroline and Jess for my birthday, it was the-best-present-ever!! Just curious, why google over skype? I’m new to video chatting.
KathEats says
Happy Birthday!!!
Because I’m always on Google so it’s just easier to sign on quickly.
chris says
Thanks Kath. Have a great wild and western weekend! Can’t wait to meet the Maze man 🙂
Elizabeth says
Off topic–I finished LOST yesterday on Netflix. I was in tears seeing all the characters together at the end! My husband and I are in season 3 of 24, but I need to find a new series for me to watch. I am considering Downton Abby (althouth that won’t last me too long) or Friday Night Lights. Also finished the most recent Netflix streaming season of Mad Men…tear!
KathEats says
<3 lost!
Kel says
FNL = amazing.
Elisabeth says
Love Maze in his overalls! The picture of him napping on Matt is too sweet 🙂
Chelsea@Ahintofhealthy says
That french toast looks amazing! What a great idea to put the pumpkin butter on top 🙂
Averie @ Averie Cooks says
Baby spinach, sautéed tofu, roasted squash and apples, pecans, honey, olive oil, salt = THAT sounds like a fabulous salad!
And wow, he’s growing! The milk’s working 🙂 He seems visibly bigger in this post. Literally growing overnight!
I’m intrigued with that bar. I may need to buy one just to see if I can duplicate it at home!
KathEats says
I think he’s HUGE already!! 🙂
Vanessa says
He is so darn cute! My toddler had cradle cap when she was Maze’s age and I didn’t know that Calc Carb 6C (a homeopathic remedy) can clear it up. Wish I knew about it back then! It is also a good remedy for constipation later on when they are toddlers. Sorry if TMI! Can get it at Whole Foods and Vitamin Shoppe.
KathEats says
Luckily i haven’t seen that yet, but thanks for the tip!
Rachel says
Those jeans are so cute!! That french toast looks great! You guys have me craving now haha
Mara says
Roasted butternut squash on salads is so underrated! I tell everyone to have some on a salad and they think I’m crazy, but it is SO GOOD. I also like to smash some into oatmeal with additional cinnamon/milk. Yum!
Katie @ running4cupcakes says
Oh Mazen is so adorable in his overalls. My favorite time of day is drinking my coffee and spending quality time with my baby too. Love!
Hilary (Four Little Forks) says
You are all settling into a happy little routine! 🙂
I remember how hungry and THIRSTY I was during the early days of breastfeeding. Your eats always look so delish! I’m currently trying to WEAN my 14 month old son from breastfeeding and I feel like I should probably eat less than I have been now that our breastfeeding relationship is coming to a close. But I’m not sure how much less. Any idea (from an RD’s perspective)? I’m trying to be intuitive about these things but with all the breastfeeding hormones swirling around, my body’s natural cues are feeling a little “off”. (I’m now at my pre-baby weight so I don’t want to gain or lose…)
Oh and please don’t feel any pressure to answer this.. just throwin’ it out there.. I know you’re a busy mama!
KathEats says
I expect it will be hard! We get used to eating more and it’s hard to cut back. I think it just takes some mindfulness – ask yourself how much you really need to be satisfied, not full. You could also just increase your exercise a bit to make up the difference if you have the time/energy to make that work.
Hilary (Four Little Forks) says
Thank you SO MUCH for your kind advice, Kath! Sincerely appreciated.
Alicia @ Wanna Be Ina says
I am wondering if the french toast craving has anything to do with your body needing more protein while nursing? I know I remember reading that some where.
Mazen looks awfully handsome in his overalls and boots!
Lauren says
You are truly making this motherhood thing look easy. 😉 So glad you’ve found a good schedule. And gosh, those overalls! I die! 🙂
Jess says
oh he really is a beautiful baby! You can’t say that (truthfully) about everyone’s offspring but in your and Matt’s case, you have made one gorgeous boy 🙂
Glad to hear you are enjoying Downton, here in Hampshire, England we have just started series 3…….!!! Loving it so far heh heh!
Annie says
I’m reading your blog on my iPad and large chunks of text on both sides of the post are obscured by photos (people taking pics). I didn’t know if you are aware of this- thought I’d let you know!
KathEats says
This is a common problem I hear from Apple users and clearing your cache should fix the problem.
Annie says
Ahh…sorry to bother you with this! I should have tried that first.
Dr. Mark says
All I know is, it sounds to me like that guy should stay home more. He’s a great house-husband 🙂
Vidya says
Agree. Matt is really cute. Both of you are made for each other!! Thanks for lots of lil one’s photos today. He looks adorable especially in that striped onsie.
Verenique B says
that french toast looks amazing! french toast is by far my fav bfast dish!!! but usaly dn’t eait it for bfast, save it usualy for a dinner meal!
now what is barney butter? never heard of it! but in the pic it looks amazing! can you only find it online?
KathEats says
Yes, it’s at Amazon (and Barneybutter.com). It’s a really creamy/sticky almond butter.
Andrea says
I have found it at local health food stores 🙂
Aja says
I am jealous of your pumpkin butter.
Heather says
oh my goodness that little outfit is so stinkin cute! I would never get anything done and just dress him up all day and take pictures!
Ellen @ Wannabe Health Nut says
That salad looks so delicious! As do the tacos, french toast…per usual. 🙂
Anna says
Was this post about yesterday? Yay for you catching up!!
Liz @ IHeartVegetables says
I love those pure bars! I just wish they weren’t so expensive haha
Candice says
Hi Kath! An honest question: what makes you motivated to always keep your food pretty for pictures? It always seems like it’s so well-placed and plated, and it seems like it would be tiring (esp with a baby!)
KathEats says
Thanks 🙂 Honestly, it’s sort of second nature now. The only time it’s annoying is when I have a leftovers container or the last of a yogurt container and want to just eat out of that to save washing a dish, but I use a dish for a better presentation.
Candice says
Thanks for your reply! It makes me want to make my meals look better even though I’m not sharing them on a blog. I feel like I’m not naturally good at it though! 🙂
KathEats says
Start with a nice pretty plate or bowl : ) Just one might make it more special.
Candice says
I think I will this weekend! Thanks for the advice! 🙂
Matt says
I love food presentation – it started when I worked at an upscale restaurant in college. I always try to deliberately arrange food neatly – it always makes me enjoy the meal more!
Katherine says
This is amazing! Love your baby 🙂

KathEats says
It’s from Raleigh, NC! http://www.bonesuckin.com/Bone-Suckin-Barbecue-Sauce-History.html

Ah! I can order it online! Wheee! Wish I would’ve googled that sooner. Thanks!

Mazen’s little overalls outfit and sleeping on Matt’s leg… OMG! So cute. Can’t even stand it. Those fish tacos look dynamite! Your friends have excellent taste. 🙂
Sarah @ Yogi in Action says
Blueberry hot sauce?! I have never heard of such a thing but I am intrigued! Is it a sweet/hot combo? Do you taste the blueberries?
That picture of Mazen on Matt’s legs is adorable!
KathEats says
Yep, sweet and hot!
Lisa @bitesforbabies says
That salad looks yummy! What a coincidence-I was craving French toast the other day and made some for the family…I added cinnamon to the eggs and fried the toast in coconut oil. I topped it all off with caramelized banana maple syrup!
Cher @ Weddicted says
Dying over those crocheted (I’m guessing?) cowboy boots! So cute, and such a comfy option for a newborn!
Sarah says
Re: poaching eggs in just water, one of our Cook’s Illustrated cookbooks recommends adding some white vinegar and salt to the water. I think it somehow helps keep the egg white from spreading out all over the place. They also say to crack the egg into a dry measuring cup or small dish so that you can lower the edge of the dish right down to the water and gently tip the egg in rather than dropping it from up high.
Fran@ Broken Cookies Don't Count says
Breakfast and Lunch (especially) look delicous! Great that you folks have the chance to fell part of the babies progress even though they’re not nearby!
Nichole says
I was so proud of myself for making french toast after a long run/workout – with homemade wheat bread, local maple syrup – until I came across yours. This puts all regular french toast to shame! 🙂 Love the food ideas, as I’m just starting my journey to eating better and am always looking for fun new ideas/recipes!!
