Tilapia Piccata with Orzo, Zucchini, and Sweet Peppers

This recipe was one of my very favorites we have made, so I chose it to share with you all. The day I made it I had it for both lunch and dinner! The fish is well seasoned and topped with a caper-studded buttery sauce. And I loved how the vegetables and orzo combined into one hearty side, bound together with one of my very favorite ingredients: crème fraîche!
The first step was to prep the ingredients. I enjoy doing this all at once, cooking-show style, because it streamlines the cooking part of the recipe so well.
While the orzo bubbled away in a big pot, I cooked the veggies together with olive oil, chopped garlic, salt, and pepper.
Meanwhile I seasoned and coated the fish.
When the veggies were cooked and orzo drained, I tossed them all together with that yummy crème fraîche. This dish had such pretty colors!
Next, I cooked the fish and made the sauce in the same pan. A lemon-caper-butter sauce is one of my favorite fish toppers. I can smell it through the screen!
This made such a lovely all-in-one meal.

No disrespect here, just very curious…. How much packing waste comes with these kits? In addition to the actual food packaging..a box, icepacks. package filler…? I am interested in these, but am concerned about how much trash it creates. Is any of it recyclable? Thanks!

We tried out blue apron using a promo code. Without the promo code I think the cost is too high (obviously you are paying for convenience and time-saving too). The biggest turn off was the waste. We use reusable bags at the farmer’s market and grocery store so seeing all the packaging that was being created and used was disheartening. I prefer to shop local since we’re in a food mecca in Southern California. I know not everyone has the luxury of being close to farmers though . . .

Just an FYI – you may want to research Tilapia. It’s a predominately farmed fish which makes it really cheap. Most often it’s sourced from China or other low cost areas. Just something to consider and make an informed decision for your family.

I think that all depends on where you source it. Seafood Watch has it as a Best Choice if it’s from a responsible farm.
Blue Apron has a mission to source only sustainable options and is a partner with Seafood Watch, so I am sure they are getting a good source of tilapia.

We’ve done Blue Apron almost weekly for almost 2 years now. I absolutely love it. Meal planning stresses me out, so I love that after working a FT job, I can just come home and follow a recipe. And the recipes are indeed top notch!
I credit BA for elevating my cooking skills. I’ve always been an ok cook, but cooking things like fish intimidated me. Now, we eat fish every other week at least – I love learning to cook new things and try new flavors!

I wanted to love Blue Apron so badly! I was given a gift certificate for what worked out to be 2 weeks of meals for my family for Christmas. One week, we were missing a key ingredient for one of those recipes. So, they did comp me that meal. The next week, I was missing two key ingredients, one from each of the meals I ordered. They again comp’d me a meal. So, that gave us another week and provided them with one more chance to get it right. The third week’s order…. guess what? Another key ingredient missing. That was it for me. 6 meals ordered, all but 2 had missing ingredients. Sigh. 🙁

I have to believe it’s an issue with our local distribution center. Like I said, I wanted so badly to love it! As a working mom who travels a lot for work — and who loves to cook — I was really looking forward to the convenience factory and variety of meal options. It’s so easy to get in a rut with our standard recipes. We’ve found another service that we like pretty well and do the occasional combo dinner with our neighbors (and friends) who also do a delivery service. It’s a fun, easy way to make dinner plans for our families!
