My colleague gave me a tour of the whole place. MY is this next rotation going to be amazing – in the classic sense of the word. Eye-opening and interesting. So much to see and learn. I’m getting nervous! We walked all over the place for about an hour – it was quite a workout (always taking the stairs up and down 10 floors 🙂 )
I just broke for lunch and am dining al fresco at my new favorite bench spot by the creek.
In The Lunchbox
My favorite lunch salad: spinach, peppers, cuc, and carrot with avocado (a tiny bit), a blob of homemade hummus and a drizzle of lemon olive oil and honey.
TASTES SO GOOD!! Raw vegetables used to make me gag (when I was in high school). Now I think they taste so sweet and incredibly delicious!! Palates do change.
A juicy grapefruit
And a mini Nuttzo sandwich on an end piece of Cinnamon Raisin Walnut 🙂 Had this guy for dessert.
Have a wonderful afternoon! I’m planning to go out and enjoy more sunshine in the form of both a short run and walk when I get home!
Freya @ Brit Chick Runs says
Lemon olive oil and honey..now THAT sounds like my kinda dressing! So does that mini sandwich, that’s too cute! I love cinnamon bread – I had some today for my afternoon snack 😀
Enjoy your afternoon 🙂
Heather (Heather's Dish) says
your lunch looks and sounds perfect and delicious. you’re right, palates DO change, and i am SO thankful for that! i’ve discovered a whole new world of food thanks to growing up 🙂
Jessica @ How Sweet says
Vegetables still make me gag! I wish my palate would change. 🙂
Gabriela says
I love the mini nuttzo sammie for dessert…that nut butter is such a treat!! Enjoy your Tuesday!!
shannon (the daily balance) says
enjoy that sunshine! we’re finally supposed to get some later this week!
love that dressing combo! I always do lemon and olive oil, but I never think to add honey — great way to naturally sweeten things up!
Hannah says
I always loved raw carrots and snowpeas as a kid, but when I first went to the US on exchange in 2007, I couldn’t believe you guys ate broccoli and cauliflower raw! It just tasted wrong to me… but as you say, palates change. I love those veggies raw now too!
Beth @ Beth's Journey to Thin says
I completely agree – palates really do change. Your lunch looks nutritious and delicious.
Allison (Eat Clean Live Green) says
I love avocado on salad – makes it so much more filling!
I hope my palate changes enough that one day I like grapefruit 😉
Jil says
Gorgeous! So jealous of all your sunshine!!
Janet (Pantry Bites) says
I love it that you always make an effort to have a balanced lunch. I tend to grab things on the go and often forget to take time out.
Shion (Shi's Eating) says
That’s my favorite salad combo, too! Lots of crunch 🙂
Lauren @ Eater not a runner says
It’s crazy how much palates can change! I’m still working on raw carrots though….
Food Makes Fun Fuel says
Raw green veggies still make me gag. But I loooooove raw carrots
Carolyn @ lovinlosing says
When I first started working at my last job at a University I was so excited for Spring I ate outside whenever I could. Eventually I started eating at my desk and working out at lunch. Now I work in an industrial park. 🙁
[email protected] says
oh sounds like a wondeful day and sounds like you are excited about this rotation 🙂
Liz @ lizrunsdc says
My palate changed in the exact same way since high school 🙂 Enjoy the sunshine!
Marisa (Loser for Life) says
Your salad looks fabulous. So does the sun. Could you send me some of that? It’s pouring here 🙁
Anne @ Food Loving Polar Bear says
I wish spring would be here already and I could also have my lunch outside 🙂
Heather @ Side of Sneakers says
Sunshine makes the day so much better!
Summer says

love your tiny sandwich for dessert
clay says
Do you have any good recipes for the home made hummus?
Kath says
Go to http://www.edibleperspective.com and try the Curry Honey Hummus! Check my recipe page – I can’t remember if I do!
Paige(Running Around Normal) says
What a nice lunch! The salad sounds delicious and the nutzo sandwich sounds yummy and filling.
enjoy your run and the sunshine! I plan on doing the same after work:)
Sarah @ The Smart Kitchen says
I love raw veggies…yum, crisp, crunch 🙂
Rachel says
My palate has changed a lot since I was in high school too. I like things I never thought I would and some of the things I ate in high school disgust me now (which is a good thing!). It is beautiful, warm, and sunny here in MN too. I am going to be enjoying the weather with some outside studying this afternoon!
Erica says
Very cool that your next rotation is looking enjoyable!! I love how fresh and crisp your salad looks. Could not agree more with tastes changing over time. I used to HATE peas & peppers and now I love both. Hope you enjoy your run/walk.
lisa says
Isn’t it funny how palates change? I remember eating roast beef sandwiches in high school, but I haven’t eaten red meat since then! And I love grapefruits, but didn’t care for those back then either.
Enjoy your sunshine – you’re so lucky! We’ve had (mostly pouring!) rain since Sunday. 🙁
Christina says
That salad looks delicious. I love raw vegetables!
Jenny says
Palates change so much! I have t had a burger in years!
Johanna B says
I read somewhere that it takes “x” number of tries before a child will accept a new food. I wonder if that works for adults as well. So that if I don’t like something much at first and I keep trying it eventually I’d like it. In high school I didn’t eat any vegetables and now I like a lot of difffernt ones – raw and steamed.
Kath says
It will work for adults!!
Cynthia (It All Changes) says
I never really liked raw veggies before but now that’s the way I eat them 9/10.
kate says
Im still working on ‘craving’ veggies – but Ive come a long way! That grapefruit looks gorgeous.
Tina says
Have you conciously or unconciously reduced your portion sizes lately? Seems like lately your lunches are a tad smaller calorically.
I have a habit of doing a calorie tally when I see a meal… I think yours used to average 500.. seems like they are hovering around 400 lately. I could be wrong though =)
Just curious if your making changes.
Kath says
Ha – you are observant!!!
Not intentional, although I think you are right. Perhaps I’m craving lighter foods for spring?
Tina says
Me too! I find myself naturally lightening up my meals and moving more as the weather gets nicer. tis the season!
Anna@ Newlywed, Newly Veg says
I love raw veggies, especially carrots. The big ones taste almost like candy!
Have a great afternoon!
Laura says
Good idea for a quick dessert… I’m glad you’re looking forward to your next rotation- I think you would make a great secondary care dietician- it is there where you can make such a difference to a patient’s life, and really motivate or reassure them and you seem to have such a great manner! Totally natural to feel daunted, I was when I first started I was terrified. Have a lovely afternoon 😉
Kath says
Thank you 🙂
Chelsea (Chelsea's Chew and Run Fun) says
Enjoy the sunshine! The weather has been absolutely miserable here in NYC the past two days. I’m looking forward to the sunshine that’s rumored to appear this weekend.
Your to-go lunch salad is so similar to my favorite combo! I love the touch of lemon olive oil and honey, I must try that next time.
Lisa @bakebikeblog says
Your lunch looks so pretty! Not to mention nutrient packed too! Love it!
Heather @ Health, Happiness, and Hope says
For whatever reason, I just haven’t had an appetite for hummus lately, but you sure make it look delicious! 🙂
Holly says
Hey Kath, I was wondering if you could tell me what kind of lunchbox you carry in order to keep your meals nice and cold? I’ve tried a few that don’t seem to do the trick. I don’t have a fridge in my office and I need my food to stay cold for a good 6 hours. Any suggestions?
Kath says
LOVE IT:
