Good afternoooooooooon! I have a love/hate going on with Wednesdays. I have to get up earlier than normal to get my breakfast photographed, consumed and blogged with time to digest and catch up on daily computer tasks before my early cycle class. It’s a bit rushed, but I’m so spoiled with my career that it’s really nothing compared to the rush of my internship/PR days.
But the plus side is that my workout is over with by 10:00, and I have the whole day wide open for other projects! Refreshing. Thus, Wednesdays are often some of my most productive days.
Lunch today was killer! Full of favorite foods.
Leftover pizza heated in our toasted oven. Note the veggies hidden inside!
Carrots (another vegetable! I am making an effort!) with apple and Smart Kitchen PB. The only way I can eat carrots these days is with a bit of peanut butter.
And a mini bowl of greek yogurt topped with nuts for a protein boost. These nuts are Doug’s Nuts and despite me telling Doug that I unfortunately no longer do formal product reviews on KERF, a package of nuts found its way to Great Harvest.
But now that I am eating them, I must share that they ARE the best seasoned nuts I’ve ever had. They are coated in a secret sticky-sweet-savory spice, and they have the perfect flavor for sweet dishes like yogurt/oatmeal or savory dishes like salads/rice.
Hope ya’ll have a great afternoon!
Krissy @ Shiawase Life says
I’m not preggo but have a hard time eating raw carrots, I’ll try the PB!
Pat says
Oh, me too. I just don’t like them plain. They’re also good with mustard – but of course you have to like mustard. 🙂
Liz @ iheartvegetables says
I don’t like raw carrots that much either, but I enjoy them with hummus!
Jenn@slim-shoppin says
That’s a way more deluxe lunch than I had 🙂
I’ve never had carrots with peanut butter though – it looks good!
Kelli H (Made in Sonoma) says
That pizza looks delish! I’m also having homemade leftover pizza for lunch today.
Hope @ With A Side Of Hope says
Never had peanut butter on carrots before. I bet that is an interesting flavor combination! Love the little spoon! 🙂
Ashley @ Coffee Cake and Cardio says
That pizza looks great!!
Sarena (The Non-Dairy Queen) says
Now that is a perfect lunch combo! I just had a salad, which seems pretty boring compared to that creation! Enjoy the rest of your afternoon Kath!
Stephanie @ Legally Blinde says
I agree, I don’t like having to actually wake up and get moving in time for an early workout, but it’s so nice to have it out of the way and have the rest of the day wide open! I still haven’t tried carrots with peanut butter (or any nut butter, for that matter) yet, but I keep meaning to do so – looks delicious. So do those nuts! Usually I stick with walnuts + honey, or dried cranberries + chocolate chips + oatmeal on Greek yogurt, but your bowl looks so good!
Khushboo says
I need to make pizza tomo..leftovers always make the best lunch!
Katie @ Peace Love & Oats says
that pizza looks so delicious. I think left over pizza is even better than fresh pizza!
Christine (Merf) says
Boo, Doug’s nuts aren’t available in DC!
Lauren @ What Lauren Likes says
Carrots and pb are so good 🙂
Susan H. @ The Food Allergy Chronicles says
Really! Peanut butter and raw carrots! I guess I just love carrots on their own to think of adding anything to them. I guess I’ll just have to trust you on this one and give it a try with my Peabutter!
Brie says
I commend your veggie-eating efforts. It’s terrible, but I cannot remember the last time I ate a veggie that wasn’t in the form of tomato sauce. They are my #1 food aversion right now! I have been doing bottled green smoothies, though, because I can’t stand the thought of actually making my own. (I seem to have the “I can’t prep food, but once it’s done, I might be able to eat it” thing going on too.)
Liz @ Tip Top Shape says
Those nuts sound fantastic!! I’ve always wanted to spice my own but I end up finishing the package before I have a chance, lol. Enjoy the rest of your Wednesday 😀
Angela @ Happy Fit Mama says
Leftover pizza is the best!
A Reader says
I’m curious why you don’t do formal product reviews on KERF anymore?
Freya says
I second that 🙂 I’d be interested to know why too?
KathEats says
I just decided I didn’t feel they were “me” anymore. Formal ones at least. “The nice folks at XYZ sent me blah blah to try out.” It’s not to say I don’t ever review things that I was given – like today’s nuts or OpenSky products – but I was getting so many requests that it became hard to manage and just easier to decide to step away.
Shannon says
Do you have a more direct link to the peanut butter or care to elaborate on it? I’d love to drizzle pb like that over veggies for my girls because they are huge double dippers and will eat all their pb with one carrot stick. Little buggers! 🙂
KathEats says
It’s one of Sarah’s recipes, and she has them all here: http://www.thesmartkitchenblog.com/the-textbook
Lauren @ Oatmeal after Spinning says
I’m much more productive on days that I teach class in the early a.m.- and on Tuesdays, my workout is done by 6:15 am! Even though that is great, I find that my productivity level decreases in the late afternoon, and I’m completely useless by evening. 🙂
Spiced and seasoned nuts are dangerous for me- I can’t stop eating them if they’re around!
Nikka says
Hey Kath!
Where did you get that blue spoon? It’s cute!
KathEats says
Crate + Barrel
kathleen @ the daily crumb says
your pizza always looks so delicious!! and loving the almond butter drizzle.
Molly @ RDexposed says
Eating leftover pizza while reading about yours!
Laura P says
Carrots and pb are awesome, why wouldn’t you eat them that way all the time? It’s how we roll at our house. Ha! I use pb to get the kids to eat either fruits or veggies, it’s a great snack!
Averie @ Love Veggies and Yoga says
Rushing will take on new levels for you in about 6 months. If I only knew what I was in store for 🙂
That pizza looks so good! And it’s still early here, but all of a sudden, I want pizza!
Kinley @ Better Off Barefoot says
I literally typed the exact words about Wednesday in an email this morning… Still on the fence whether I love them or hate them but since it’s almost half over, it’s technically downhill from here 🙂
Angela @ Eat Spin Run Repeat says
Oh wow, that looks like such a great lunch! I also love getting my workouts done early. It’ll only be 7am and I already feel like I’m so ahead of the game!
Mindy - clueless nut says
I had carrots + PB for my pre-lunch snack!! It really is a delicious combination. Mmmm- I’ve had a huge hit of craving for pizza.
Anna @ On Anna's Plate says
Those nuts sound delicious! Glad to hear that you’re making some headway on the veggies– you’ll be back to your normal eating soon I bet!
kaila@ healthy helper blog! says
I love lunches like that! All cravings satisfied, all taste buds tingled!
Grace @ Healthy Dreaming says
This looks delicious and beautiful~
Cait's Plate says
That looks like such a seriously perfect lunch. And I definitely went through a phase where I couldn’t eat a carrot without a little bit of peanut butter…I wasn’t pregnant though, it was just a phase, I promise! Haha.
Holly says
I had such a hard time with leafy greens and most veggies when I was pregnant too. It caught me off guard as I naturally adore them and happily eat them daily! Im not kidding when I say two hours after giving birth I ate a salad with the same joy I had before pregnancy. But during….theyy made me gag. Terrible! Congrats!!! I enjoy following your blog, its wonderful!
Sarah (I Dream of Beets) says
The colors of that lunch are so pretty. I can’t handle any vegetables without fats added to him, preferably of the animal type, though nut butters do in a pinch. Your lunch looks magnifique.
Amelia says
Isn’t it funny to be a veggie-lover who all of the sudden has to sneak veggies into your own meals to fool yourself? The same thing happened to me when pregnant. I would make myself a cheese omelet with buttered toast then add a side of tomato slices with basil. I must admit that sometimes the tomatoes and basil remained…
Luckily, this ends! Back to loving veggies. Actually back to loving everything, and lots of it — a breastfeeding appetite rules 🙂
Kiran @ KiranTarun.com says
I LOVE raw carrots, even better slathered in nut butter. YUM! 😀
Melissa @ Journey to Marvelous says
That pizza looks delicious!!
Heather @ Get Healthy with Heather says
Pizza on a plate is always a good thing! Nice work getting them veggies in.
Cat @Breakfast to Bed says
during my first and most of my second tri-all i ate were salads. I could NOT stomach protein. I’m kinda jeals.
Olivia says
Just curious? Why did you stop doing reviews?
Jen says
Well, most people have to get up earlier than they want EVERYday to get kids ready, eat breakfast, workout, shower etc. – and all before 9 a.m to be to their job for the whole day! So yes, consider yourself lucky 🙂
Pizza and peanut butter are the best ways to sneak in veggies!
Lisa (bakebikeblog) says
I must admit – I havent really had any great food adversions during pregnancy. I think I am one of the lucky ones!
Tiff @ Love Sweat and Beers says
Pizza is definitely one of my all-time favorite foods. Way to keep it healthy!
Kelsey says
I just found your blog so I’m obviously late on this, but do you own a Great Harvest?? I worked at one for 5 years during high school/college, so the store is near and dear to me. Yours looks great!
KathEats says
Welcome Kelsey! Yes, we opened one in Charlottesville last June!
Kelsey says
Awesome! Good luck! I was just back in Charlottesville visiting family; I will tell them to stop in and support your little slice of GHBC. 🙂
Lacey says
Man, I wish my career involved eating and taking pictures of food! That would be the life!
Annette @ EnjoyYourHealthyLife says
Oh YUMM!! Looks delicious! I had leftover pizza today too—SOOO good.
Kristen @ Change of Pace says
That looks like a perfect lunch to me. I love leftovers for lunch!
Alexa @ Simple Eats says
I would love those nuts! I love mixing salted nuts into lemon Greek yogurt. Such a good combo!
Jody says
I love Wednesdays! Beats Monday & Tuesday. I envy your schedule & flexibility. I sometimes can’t believe how much I get done before 7am on the weekdays! Of course I’m sure things will be different with your new arrival! 🙂
Samantha says
Oh that pizza looks devine.
Chris says
It was so great meeting you today in realtime with your MIL! My daughter Jess is feeling better now that she’s back doing yoga – you are both due the same week! Does your friend know Sarah?
KathEats says
Hey Chris!! Now I know this is you when you comment 🙂
YES Matt does know Sarah!!! I explained the connection via email 🙂
Chris says
We are all 3 degrees of separation in this little city! I’ll send Sarah your blog and tell her to look for you 🙂
Kerry @ Totes My Oats says
YUM! That whole lunch looks so good! My kind of meal 🙂
Laura Jane @ Recovering Chocoholic says
That pizza looks wonderful – even the veggies on it look delicious! As far as the getting up early, I’ve recently discovered the “joys” of getting up early. Working out before work allows me to only shower once a day and gives me more time in the evenings, plus nothing gets in the way. Getting up at 5am is totally not fun, but so worth it! I feel like I have my life back now that my evenings consist of something other than eat, workout, shower.
Lucy says
If you think getting up early to eat breakfast and go to a spin class is “busy”, wait until you have a baby. 😉
Erin says
And then when you think that’s busy, wait until that baby is a toddler!! I try so hard to savor my days because I know when I’m the mom of a teen I will miss these hectic days…but it’s difficult. 🙂
Kelly @ Vegolosophy says
mmmm pizza!!!!!! Always a great meal when pizza is involved!
Mary Frances says

It’s called Flipwise and it’s in invite-beta mode right now.

I just got caught up on your blog (I’ve been a reader for a couple years now) and it seems a huge congrats is in order. Its especially exciting for me because I’m almost 9 weeks now, just started telling people, and what you have written so far is almost to the T what I’ve been experiencing! Craving foods you had when you were a kid, check. Especially cheese, check! And the list goes on. I’m looking forward to reading your experiences as we go through this together. We’re due in September!
KathEats says
Congrats to you too Megan! Hope you’re feeling OK these days 🙂
Eileen says
I am sorry for reverting back to 7th grade but it seems that I am only one who finds it funny that you love “Doug’s nuts” it just seems like a very odd name:)
KathEats says
I think it was an intentional pun 🙂

Lexi @ Cura Personalis Foodie says
Gorgeous array of foods! I love sampling for lunch 🙂
Jo Williams says
I have been craving almond butter seeing it in your photos on oatmeal & now on apples. I stopped at the store last night & bought some almonds & went home and made a big batch with the recipe you had posted a while back – almonds, olive oil & spooned in some honey. OMG, had it on an English muffin & sooooo good. Had some in my oatmeal this morning & can’t wait to pour some over my apple for snack later today. YUM! Thanks for sharing your delicious recipes & food combos!
KathEats says
Glad to hear it!
Fran@ Broken Cookies Don't Count says
Pizza…haven’t had any in so long. I should make my own, that way it would be easier to figure out the Points!

Nuts are great! I have been trying to consume them.
