I have lived in Charlottesville nearly 2 years and I think I have only been to the mall ONCE – and that was with Karen to pick up some maternity clothes this past winter. We walked straight into Motherhood Maternity and back out – I really don’t even know what stores are at the mall! I was quite surprised to find a nice Bare Escentuals store in there today! The Belk was also pretty nice. I will have to return to Fashion Square Mall when I get my figure back!
I bought a dress for the wedding this weekend! In fact, I bought THREE dresses for my upcoming showers and the wedding. Maternity dresses are so comfy! Post on them and a few more of my purchases coming to BERF : )
Afternoon snack on the go! Straight from the purse stash.
Back on the home front, Matt and I made a dinner for Project Eat More Iron.
A seared grass-fed skirt steak we picked up from the market last week. It was a bit tough (they were out of filets!) but still tasted good.
Steak n pertaters. Matt’s famous rosemary potatoes, roasted in a 400* oven on a rack and coated in olive oil, salt, pepper and rosemary.
Lastly, I was in charge of the salad. First I harvested some swiss chard and then I washed and sliced it into strips. I tossed that with about 2 tbsp olive oil, more salt and pepper, 1 heaping tbsp of capers and about 8 pitted, chopped olives. It was delish!
We are off to watch Happiest Baby On The Block DVD and share a tiny bit of Jeni’s Ice cream!
Susan H. @ The Food Allergy Chronicles says
I was low in iron during my pregnancies and needed to take an iron pill. My mother had me try Liver and Onions…my mother’s favourite dish…I figured if she made it, I may like it…sadly, I did not! I stuck with the iron pills!
Tamara says
Yup, I think I fell in love with those potatoes the last time I saw them here. Good pregnant food right there.
Katie @ Peace Love & Oats says
I definitely need to do project eat more iron! I found out the reason I’m so tired all the time is because I have iron-deficiency anemia!
Michael Tavallaei says
always wanted to visit charlottesville.
Sarah says
I love Jeni’s Ice Cream! Definitely worth the splurge every once in awhile 🙂
sophie says
those potatoes look delish!
you should check out whatsupelle on youtube she has some funny videos from when she was pregnant, she has a beautiful daughter. Her clones were also “pregnant”
her videos are really funny
Julia H. @ Going Gulia says
Mmmmm. Iron. I’m really good about trying to get all my nutrients, but iron is the one thing I’m sometimes not as good about. Need to get more steak in my life!
Angela @ Happy Fit Mama says
Good luck with the 5 S’s! The shhhh and swaddle are the best!
Nicole says
Can’t wait to see the dresses! No one has mentioned anything about throwing us a baby shower. No one has even asked about our registry- I’m worried no one will get us anything and we’ll be purchasing it all ourselves! What’s the etiquette for sharing that information? Can (should) I throw my own shower? Not that we’re all “buy us things!” but baby showers seem like a standard thing…unlike a wedding shower, which we opted out of because we didn’t do a traditional wedding.
KathEats says
Gee, I don’t know. Maybe talk to your closest girlfriends about the possibility?
Kathy W. says
You could have your mom organize the shower & invite your friends, cousins, aunts, etc.
Nicole says
The problem is I don’t think my mom is interested in doing it. I also don’t have close girlfriends. Sure, I have some good friends, but I don’t know if they’d throw me a shower. Who knows, people could surprise me.
Sana says
Maybe throw your own “welcome the baby” celebration. But don’t expect gifts?
Sarah says
If no one offered, I wouldn’t bring it up. It can be seen as rude to ask someone to throw one for you/throw your own.
Cait's Plate says
That beef still looks pretty darn good to me! And I’ve never tried a salad with swiss chard before but that sounds so yummy!
Julie H. of Spinach and Sprinkles says
YAY! I can’t wait to see what dresses you have picked out! 🙂 …. I don’t know if I’ll have a shower before baby yet- people are sooo busy in the summer, we may have to wait till after baby arrives!
Amy in TO says
Me too Katie and it has been a struggle!! Not just because I am a pescetarian, but because of all of the dos and don’ts! Do eat iron with Vitamin C to help absorb it–eat shellfish, dried apricots, white beans, mushroom, quinoa etc. Don’t eat iron with dairy, high fibre foods, red wine, coffee, non-herbal tea, anything high in calcium (tahini, sardines, broccoli, kale, salmon etc.), soy products, cocoa, sweet potato, carbonated drinks, and on and on–they all inhibit absorption. Biggest surprise–spinach is not good (oxalate in it inhibits iron absorption) and you should eat the egg YOLK, but not the egg WHITE! Oy. Good luck with it, I know it will be worth it when I get my levels up but it is work!
Courtney says
I wish I liked greens more because they are such a good source of iron. I just never have really. The only way I can really stomach them in hidden in smoothies. Oh well, there’s always steak.
Aubrey says
YUMMM. That salad looks delish and I’m so happy you shared the recipe because I’m always looking for a SIMPLE way to spruce up some greens 🙂 Thanks, Kath!
Averie @ Averie Cooks says
Lol on only going to the mall a couple times in…2 years! I wish I could say the same for myself.
rosemary potatoes and lots of ketchup sound perfect right now!
Ashley @ Coffee Cake and Cardio says
Those rosemary potatoes look awesome. Go project eat more iron!
donna says
I thought I was the only woman who never goes to a mall! But I have been known to go to Marshalls and Home Goods 3 days in a row! In fact, the managers know me there by name. Just don’t like malls. You’ve seen one, you’ve seen them all! B-o-r-i-n-g.
Betsy says
Wow, to Courtney “I wish I liked greens!” I WISH I liked steak and red meat, because I have to make myself eat that. It’s funny, I rarely (once a year?) eat red meat of any sort and truthfully, I just don’t understand how people enjoy it. However, I grilled a skirt steak tonight as well as I was feeling like I had low iron, too, but was only able to eat a few bites. I had steamed broccoli with melty velveeta cheese on the side – it’s the ONLY way I will stand to eat broccoli. Wish I like steak, thank god for leafy greens 😉
Caroline says
Jeni’s salty caramel? 🙂
samantha @ peach in the city says
yum iron
Jen says
You’ve been eating so well during your pregnancy! It seems to be no different than before. Do you think you’ll adjust anything after the baby? Because right now it seems there’s nothing to change!
KathEats says
Probably not too much…maybe portions eventually?
kristen @ verbs and vignettes says
I can only handle in-and-out trips to the mall. I’m good for one or two shopping sprees during the year, and otherwise, no way.
Laura @ She Eats Well says
That dinner looks lovely. I love me some iron (aka steak).
Dana says
Kath, if you ever visit Ohio, you must make a trip to one of the Jeni’s locations (I am partial the original Jeni’s). I made a stop on my trip home;) they are really good about letting you try any of the flavors before making your final scoo selection. I am still a big fan of salty carmel!
Brianne says
I didn’t eat much meat until I was pregnant with my first son. Now I can tell when I’m not eating enough iron.
Skirt steak should be marinated and sliced thinly along the grain of the meat. If cooked properly it is delicious!!
BethanyB says
Yes! So excited for you to watch the video. The soothing techinques that seem too good to be true really do work like magic in real life! I’ll be interested to hear what you think of the video. Maybe on BERF?
Elisabeth says
I make rosemary red potatoes just like that probably 2x per week in the summer! I need to find something else to do with my rosemary…my plant is the size of a small tree! 😉
Khushboo says
PB & J was the first Larabar flavor I tried…a few bites in and I was sold!
Karen says
Unlike the olden days, I do everything I can avoid mall based shops these days…the parking, the crowds, the overwhelming number of options to sort through, and most of all the enormous time commitment. Stand alone stores and small strip malls are fine; our mega malls earn a big thumbs down!
Krissy @ Shiawase Life says
Hahah not our (Charlottesville) mall. It is so small – no crowds, ever. 😉
Emily @ Life on Food says
I don’t go to the mall hardly at all either. I make one big trip at Christmas time. Online is so much easier and things are much nicer at boutique stores.
Molly @ RDexposed says
I hate going to the malls. Ours has turned so ghetto-ha.
Fran@ Broken Cookies Don't Count says
Thanks for the easy rosemary potato recipe! Need to try that!
Fran@ Broken Cookies Don't Count says
Oh…how long do you cook the potatoes?? Thanks!
KathEats says
About 40 minutes – sorry I left that one out!
Candice says
I do love Fashion Square Mall…its nice and small compared to most malls. I miss Cville so much! Definitely have to move back sometime! Your pics make me so nostalgic of the college days lol.
Jennifer says
Your potatoes always look nice and crispy. Do you put them on a wire rack of some sort or just on a baking pan? I’ve tried to make sweet potato fries and they always end up floppy with no crisp to them.
KathEats says
Yes, we use a cooling rack
Hope @ With A Side Of Hope says
That mall looks beautiful! I love those potatoes that Matt made. Roasted potatoes are my favorite. I’ll have to try rosemary on mine the next time I make some. 🙂
Jennifer says
Thanks so much! I’m going to get one. 🙂
Marie says
The mall can be a very baby-friendly place when the winter months hit. Great place to get a walk in with family friendly nursing and bathroom stations. The mall was a great escape for me on maternity leave last winter in Wisconsin!
Diane says
I did a stroller walk in the mall most morning before it opened (with all othe old ladies 🙂 ) when I had my kids in the middle of summer. It is too hot for the babies to be comfortable outside.
Angel7 says
I do not get to the mall hardly ever. I mainly buy my clothes and such at Kohl’s.

Krissy @ Shiawase Life says
LOL it is hilarious you’ve only been once! I live in that 4 story building right behind it! We will have to meet up for some shopping in the future 😉
Whitney says
Ya gotta cut that skirt steak against the grain! No wonder you thought it was tough. Here is an explanation.
http://www.seriouseats.com/2010/03/why-should-you-cut-meat-steak-against-the-grain.html
KathEats says
Matt knows this fact, so I’m surprised he didn’t do it correctly..
Ashley @ Hudson on the Potomac says
Love purse snacks! I always have a bunch, which my boyfriend mocks, but is then happy when he wants one! Can’t wait to see the dresses you picked out!
Lindsay says
I just came across this recipe for an Iron Rich Beet Juice I thought you might be interested in: http://www.milkfriendly.com/2012/06/healthy-pregnancy-iron-rich-beet-juice.html
Sarah says
YAY JENI’S ICE CREAM! The original shops and Jeni’s own kitchen is in Columbus, OH where I went to school and I’m like a proud mama to see it on the shelves of Whole Foods everywhere 🙂
Lexi @ You, Me, & A World to See says
Mmmm those pertaters look awesome. Does Matt have a specific recipe he uses?
