We went for a great run this morning amidst falling clumps of snow. The roads are now completely clear and there’s actually steam coming up from the earth! Don’t worry, I was VERY careful on my run not to look up at the icicles under the advice of Safety Guru Dwight K. Schrute:
It was actually really warm out there –
We ran to the Y so Matt could lift weights. It was about 2.25 miles each way, and I did 15 minutes on the Stepmill while we were at the gym. It was a fantastic run – light and airy.
Once home + showered, we made a delicious lunch featuring Kelsey’s Homemade Pimento Cheese! I LOOOOOVE pimento cheese but don’t eat it much because I am wary of the store-bought kind. I used to hate it, actually, when it would be on sandwiches at church suppers when I was little. Then I realized it was CHEESE! This recipe was so easy and required no special equipment other than a grater. Kelsey is a recipe genius!
The only change we made was using 2 tbsp of greek yogurt + 1 of lite sour cream because we ran out of sour cream! I think you could probably use all yogurt and it would still be delicious. I don’t think I’d use a regular yogurt though because it might be too sour/runny.

It’s interesting to me that I didn’t calculate (or really care) about the nutritional information for this recipe. It crossed my mind to think about it, but then I thought even if I did know the nutritional info, I’d still put the same amount on my bread, so it wouldn’t matter and kind of shrugged it off. The year-ago me would have probably done the whole recipe by weight and calculated the nutritional info by grams. Plus, the volume of this is most shredded cheese with just a little light dairy mixed in, so it’s probably comparable to just putting the same volume of shredded cheese on your sandwich. 1/3 cup ~ 100 calories.
To go with my pimento cheese toast I had a huge spinach + veggie salad –
This was about 3-4 cups greens + lettuce tossed in POM dressing (see below), ~1/2 cup leftover roasted veggies, peppers, carrot, strawberries + almonds.
POM dressing:
- 2 tbsp pom
- 1 heaping tsp mustard
- 1 tsp olive oil
- pinch salt
Shake in jar to mix –>

I am also leary of store bought pimento cheese. We do have a local company that makes it and it is so good. It is really the only kind I will buy. I have never tried making it myself, maybe I should try my hand at it!

Like seeleelive said, I too was very happy to see how you knew you’d eat it anyway, so why worry with being mathematical about the pimiento cheese?? That may have taken some enjoyment away from your delightful lunch. I’m halfway through Intuitive Eating and I’m feeling so free right now! I let go of counting WW points today and so far, such a success! While I’d love to lose 20 pounds, after reading this book, I’m realizing that more important than losing those pounds is gaining a happy relationship with food which will result in a happier relationship with my body. Glad to find a healthy pimento cheese recipe — I grew up in the south, so was raised eating it. I’ve never had it melted, though, but will try asap.
