Matt and I went on a love hour-long farewell walk this morning.
Which took us to THE CORNER PARKING LOT! From our movie last night. It was so weird to see it in person!
And look – here’s the attendant! I was extra careful to be very nice to him 🙂
We completed our run with tea for me (mint with steamed soy milk on top, which I think makes it naturally sweet)
<3 walking
I’m now all packed up for my 3 day trip. Packing does get easier with time – I get better at knowing where things go.
Here’s a good example of a healthy hands-free lunch to eat while driving. Eyes free so you don’t have to take them off the road.
Hummus (made by Matt this AM) with veggies stuck in for auto-dipping (protein + veg + fat)
A hard-boiled egg (protein + fat). Also easy to eat without looking. I put him in some parchment paper with salt to open into my lap for drips.
Apples = the ultimate eye’s free fruit
And an oatmeal cookie – energy + dessert all in one : )
I also have packed my last Hungry Bar!! I’ve had this frozen for a while. LOVED those bars. I really do want to order more. This is the Blueberry Walnut and I hope to have it for a snack this afternoon : )
Adios!
Kay (skinnybound) says
Apples are the perfect summer food. So crisp and cold and awesome! Have fun! <3
Joyce @ Flowing to Fifty says
You have green grass and tulips! Envy!! Enjoy the learning.
Emily @ Savory and Savage says
I need to go on another road trip just so I can pack up a lunch like that 🙂
That oatmeal cookie? Yummmm
Melissa says
I am in love with that already dipped veggie idea! so smart!
Dee says
Yay for walking love! And what a simple and yummy lunch for on the go traveling. Safe trip!
kaila @ healthy helper! says
Sounds like some yummy travel food….I especially like the pre dipped veggies! Very ingenious!
Amanda (The Nutritionist Reviews) says
Sounds like a nice walk! I have never tried mint tea with milk like that. It sounds good : )
B & B says
Tea with milk is the best! I find cooking my oatmeal in milk makes it so much better too.
Ah the wonders of milk 🙂
Kay (skinnybound) says
I wonder if iced tea is good with milk. I love milk in my tea though! The best kind I ever had was rose chocolate tea with almond milk. Mmmm
B & B says
(insert jaw-dropping smiley face here) Rose. Chocolate. Tea. With Almond milk.
Please send to me! 😉
Kristen, Sweetly says
I’ve had Thai or Malaysian tea that is iced and creamy. It is always spectacular. 🙂
Stacy @ Every Little Thing says
Have a safe drive! I heart hard-boiled eggs and have eaten many while driving haha.
So funny you went to the parking lot!
Jessica @ How Sweet It Is says
Love that hummus dipping trick. That is brilliant!
laurie says
This is a dietetic question, Kath. When you add spinach to smoothies, does the spinach bind the calcium in the yogurt or milk and make it un-usable? I was taught that spinach has that effect but I don’t know for sure. Maybe a question to ask at your conference? Have fun!
KathEats says
I’m not sure of the specifics in chemistry, but I doubt the spinach would completely void the calcium. I’m guessing that the slight reduction in absorption would be balanced with the quantity.
J3nn (Jenn's Menu and Lifestyle Blog) says
I like your eyes-free lunch! All yummy car eats. I should pack lunches for car trips more often; it’s so easy to do. 🙂
Freya (Brit Chick Runs) says
Good hands free lunch! I need to take tips – my drive-food is never that easy to eat 😛
Have a good trip!
Katie @ Life... Discombobulated says
That looks like a yummy lunch! Have a safe trip!
Will you do a post on packing one of these days????
KathEats says
I suppose I could, but it seems so specific! What if you don’t have the exact same bag that I do!? Perhaps a Home Neat Home down the road
Katie @ Life... Discombobulated says
That would be awesome! 🙂 I just love learning new packing tips!
Michelle of "From Seed to Tree" says
I agree. I think a Home Neat Home Packing post would be great. I think most people have the standard carry-on (size wise), and maybe just a bigger piece of luggage. What do you carry in your carry-on vs. your luggage vs. your purse. Things like that….
Allie (Live Laugh Eat) says
I’m so talented at eating and driving. After many many trips between Duke and home. I’ve got it down pat.
You’re here for three days?! That cookie looks small in some photos and big in others…tsk tsk 🙂
See ya sooooon!!
Holly @ The Runny Egg says
I love your lunch to have while driving — usually Jason and I will go on trips together and I’ll make sandwiches while he drives — or I stop somewhere to eat since I am a super messy eater in the car.
Have a great trip!
Kat @ Cupcake Kat says
Your road snacks look so tasty
Heather @ Health, Happiness, and Hope says
What a fun walk! 🙂
I used to do A LOT of driving/traveling when I was in high school to get to my yoga training out of town every weekend and visit my brothers in college, and I definitely learned a thing or two about on-the-road foods! Carrots, apples, pb sandwiches, crackers, and trail mix were a few of my staples.
Courtney @ The Granola Chronicles says
We were about to watch that parking lot movie the other night through Netflix – we decided against it, but now I think we might have to watch it! Safe travels!
Annette @ EnjoyYourHealthyLife says
whoa have fun- love good roadtrip snacks–be safe 🙂
Candace (inFITation) says

I love bars, and especially anything with blueberries and walnuts in it–one of my two favorite fruits and nuts!

Averie (LoveVeggiesAndYoga) says
I love the hummus-lined base of your container. Perfect way to use it AND it helps the veggies stand up straight and not just roll around in the hummus and get it all over the “sides” of the them. It’s the little things I swear that make me happy 🙂
Yesterday I was looking at Eye-Fi cards based on your use and love of them and so when I came here and saw the title I was all excited. lol
Oh and those bars, I have countless no bake energy bar recipes on my site that take less than 5 mins to stir together and are vegan, GF, fast, cheap. I never buy them anymore. Unless it’s swag I get 🙂
KathEats says
I haven’t bought a bar in 3 years. That’s a lot of swag 🙂 I need to start making my own more!
Averie (LoveVeggiesAndYoga) says
I think you have me beat with 3 years only b/c sometimes I have cravings for a certain brand of cookie dough bars that I can’t seem to replicate at home. The ingredient list isn’t so hot, but I just love…the taste 🙂
Meg says
Ha! What an adventure! And what a bar…that hungry bar looks super dense and delicious.
Happy afternoon!
Emma (Namaste Everyday) says
thanks for the tips! I travel a lot and never know WHAT to bring for healthy snacks. These are perfect!
Lisa says
I just watched that Parking Lot movie!!! I saw it a few weeks ago and loved it.
I’m a little envious.
Actually, while watching the movie I said to my boyfriend “Kath Eats Real Food lives near there.”
He gave me a blank look and had no idea what I was talking about.
Lea @ Healthy Coconut says
Good idea on having the hummus already in the container withthe veggies (arranged standing up).
I usually pack the same but have them in separate containers. Go Matt!
Sarena (The Non-Dairy Queen) says
We do the same thing with meal in the car since we have so many food allergies and HAVE to take food where ever we go. Have fun and travel safely.
Simply Life says
oh those bars do look great!
Katie @ Nourishing Flourishing says
Love Sunday walks. Our trip lunches look nearly identical; all the components work so well when you’re on the road. Usually we also have lots of roasted almonds to crunch on, and sweet potato chips as a treat to ourselves for driving 😉 Safe travels!
Christine @ Burning It Off says
Wow, you’re so organized. I usually hit the drive through when I’m on a long road trip (which isn’t too often, so I guess it’s okay lol). Those are some great ideas for good food on the go.
olivewineandfood says
looks like a nice easy lunch! i love getting lots of different tastes.
Kat @ Big Apple Little Kitchen says
Is that plain hummus? Looks tasty!
Jenny @ Fitness Health and Food says
Kath only your photography can make an apple seem more delicious that a cookie! 🙂
Miranda @ Working Mom Works Out says
Aww Love walk. So sweet.
And the idea of the veggies sitting up in the hummus? That rocks. I’m totally doing that.
Erin @ Shortcut to Bliss says
The parking lot movie!!!! I loved it. I love how the gate sign changes all the time and how all the attendants are getting their masters degree in philosophy =)
Namaste Gurl says
You do so well at packing up the most delicious and nourishing meals, wherever you go! Kudos to you 🙂
I’d love to know the hummus recipe!
Kristi @ KristiAteIt says
I love the idea of just sticking veggies in hummus. Stealing that one for the next road trip I take.
Lisa (bakebikeblog) says
perfect car-tripping snacks indeed!
Laughter-Loving Stacy says

Amelia (Eating Made Easy) says
Love the term “auto-dip” 🙂
Angela @ Eat Spin Run Repeat says
I’m totally doing that hummus pre-dipping on my next trip! Great idea!
Jess (Sweet Potato) says
Veggies and hummus is such a great snack! I often take that to school with me. It definitely travels well!
Karina (Like Some Cat from Japan) says
I hope you have a wonderful trip! I love your traveling posts.
Mary @ Bites and Bliss says
I love running to really feel like I’ve exercised, but walking is just so enjoyable. Esepcially if you have good company. 🙂
Chelsea @ One Healthy Munchkin says
I try to avoid eating while driving because I always end up with food everywhere… in my lap, down my shirt, in my hair! 😛 This looks like a pretty mess-free lunch though. I’ll definitely have to try that pre-dipped veggie idea!
staceyhealthylife says
Perfect traveling lunch. That bar looks so tasty, might need to get some myself.
Kate (What Kate is Cooking) says
That’s a great idea to stick the veggies in the hummus to avoid dipping! Smart thinking 🙂
Molly says
Oatmeal cookies are under-rated! YUM
Dimple Snatcher says
Safe travels, KKKKK!
Hannah says
For some reason the idea of milk in herbal tea sounds crazy to me – crazy but good 🙂
Allison @ Happy Tales says
Looks like you have *mastered* the art of on-the-road travel!!! I used to eat a lot of those snacks, too… when I had a daily commute to Rock Hill from Charlotte for my job with AmeriCorps. Getting stuck on 77 while hungry is NOT fun!!
Ashley @ Will Run for Food says
You are such an inspiration to me to eat healthfully, even when busy/travelling! Thanks for that! 🙂
Hilary says
Auto-dipping….great concept! And I’m with you on the apple…have enjoyed one while driving many a time….I was a little befuddled when reading your title, but makes sense now!
Melomeals: Vegan for $3.33 a Day says
that’s some good road food
Lauren @ MRS says
Have a safe trip! I tried making hummus, twice now, and it’s a lot stronger that I was accustomed to, and all I ever wanted in the first place is a little less aromatic and a lot more tastier, the same way I first tasted it. But no luck since then.
Amy says
I saw that film a few weeks ago and thought of you 🙂
chelsey @ clean eating chelsey says
I love easily packable food! Where are you heading for 3 days?
Kristen, Sweetly says
Happy trails! That farewell walk looks beautiful. I especially love the “kicked with an ivory leg” gate.
Kathleen @ KatsHealthCorner says
YUMMERS! 😀 Hummus is the perfect dippage! 😀
Samantha Angela @ Bikini Birthday says
Did you bring the attendant a tea too?
Emily says
I knew the Corner Parking Lot would pop up on your blog eventually! Fun documentary. There’s a coffee shop where my boyfriend used to barista that seemed to have the exact same work philosophy, owner personality, and so many other strange little things.
Sam (Chasing Chi) says
I love your road lunch ideas! I always find myself having to eat in the car and somehow always end up making a mess 🙂
Melissa @ Journey to Marvelous says
Looks like a great hands-free lunch for driving! Much better than anything you could get on the road…
