I’m feeling a little off today, as can only be expected in the unexpected journey to motherhood. Or I can blame Old Man Winter and not enough fresh air! I spent the whole morning at my desk working and probably should have had a snack, but I wasn’t hungry! I let myself go too long and then sort of ruined my appetite for lunch.
We also have very little food in the fridge to choose from!
I made a slice of Dakota toast with Nuttzo along with almonds and grapes
Plus a bowl of yogurt + jam
And freshly made lemon sparkling water compliments of Matt! Also, I found the Thin Mints in the freezer and had two for dessert. The freezer is the best place to forget about food!
It’s all nutrition this week! I have two more events coming up – I’m speaking on a women’s entrepreneur panel tonight and giving a talk on nutrition on Thursday night to a class, both at UVA. I listened to a few webinars this morning to get some more continuing ed credits. I’m determined to get all 75 hours for this period before the baby comes – and I’m almost 2/3 of the way there!
Stephanie @ Legally Blinde says
I’m amazed you were able to stop at 2 Thin Mints! I do try hiding food from myself in the freezer sometimes, or on the very top shelf of my cupboard, way behind my spices. It works until I find it and then devour it 🙂 Busy week for you – good luck with all of your work!
Grace @ Healthy Dreaming says
Food looks delicious! It looks like you are staying super busy yet balancing everything so well! Amazing and inspiring.
Katie @ Peace Love & Oats says
Ahhhh frozen thin mints are the best! I miss those cookies! Good luck with your talk!

“I’m feeling a little off today, as can only be expected in the UNEXPECTED journey to motherhood.”
I’m confused–wasn’t this a planned conception?
KathEats says
I mean everything about pregnancy is unpredictable and often unexpected
Melissa @ HerGreenLife says
As is new-motherhood, so I guess pregnancy is good practice 😉 Speaking of new-motherhood, good call on finishing the CE credits now!
Susan H. @ The Food Allergy Chronicles says
I often freeze my homemade allergen friendly brownies, date squares, cupcakes, muffins etc for those unexpected urges for something sweet or decadent at the end of a meal!
Lindzjane115 says
What are the class and panel you’re speaking to at UVA? I’d love to pop in if they are public/large enough to not notice 1 extra person!
KathEats says
It’s the women’s entrepreneur panel for the biz school tonight – I don’t know the name unfortunately. The Thursday class is “Contemporary Heath Issues.”
Lindzjane115 says
Thanks! The panel tonight conflicts with my class, but the class on Thursday looks like it might be large enough that one extra person wouldn’t be noticed! I just might sneak in…
KathEats says
Elly said you can come! It’s on the second floor of Memorial Gym!
Sarah says
I’ve been loving greek yogurt with Trader Joe’s fig jam swirled in, then a little almond granola on top for breakfast. That jam is so stinking good!
Angela @ Eat Spin Run Repeat says
Nice job on the CEC’s! Your speaking engagements sound like a lot of fun – wish I could join!
Cait's Plate says
The freezer is the BEST place for THIN MINTS! 🙂 I’m so glad I’m not the only one that does that. I have a box marinating in my freezer as we speak! Hope you get to feeling better soon!
Annette @ EnjoyYourHealthyLife says
I love putting food in the freezer just for THAT reason 😉

I no longer “practice” dietetics like I did when I was a clinical dietitian, so I am having a harder time getting my CEU’s. Please continue to post the places you get your CEU’s. Or if you have any other favorites please list them sometime… I love this site and already signed up for the next webinar! Thanks 🙂
KathEats says
Kelly, check out this site. You can read any of these books (which I bet you either have read or would like to read) and take an exam for a great bang for your buck. The exams cost $$, but even $148 for 30 ceu’s is a great deal compared to all the costs of conferences or courses!

kelly says
Great! Thanks. That is a great deal considering what the conferences cost when sometimes the topics are not what I am really interested in! This will help get to 75 quickly!
tracy says
i signed up, too! thank you so much for posting the info, kath! and i second kelly’s request about posting where you get your ceu’s…it’s just so hard sometimes to get all 75 in!
thank you again!!
Haleigh says
Thin mints taste so amazing coming straight from the freezer. I haven’t had Girl Scout cookies in way too long.
kathleen @ the daily crumb says
that’s great that you can do some of your hours in webinars. we have similar requirements to keep a law license and i always jump at the at home web options!
Jacqueline says
Wish I could come hear you speak! At least reading this blog gives me my daily fill of inspirational healthy eats! Enjoy the week!
Averie @ Averie Cooks says
Good for you for busting out those hours now, rather than later. You will thank yourself a million times over later on for doing it now!
Angel7 says
I felt pretty good this morning, because I did not have a sinus headache. And by lunchtime, I felt really good. But now a sinus headache is coming on again. I love spring, and all the pretty things that bloom. However, I do not like allergies/sinus headaches!

Thanks for linking to the webinars! After I had my third and final child I went two whole years without completing any CEUs. I was in “mom mode” and not “dietitian mode”. And now my portfolio is due at the end of May and I still have 8 credits left to obtain. Great job trying to get them all done before the baby!
KathEats says
check the link I shared above [http://www.numedix.com/Nutrition-Wellness.html]
Easy and enjoyable way to get some credits!
Jen says
Thanks so much!
Hope @ With A Side Of Hope says
Good luck with your talk! 🙂 I love searching in the freezer for food to eat. I always find so many random things that I buy and then forget about. I’ve never froze Thin Mints! I hear they are good that way. Must try it!
Sarena (The Non-Dairy Queen) says
I always want to take a big bite out of that bread when I see it on here. I hope you have a good afternoon Kath. My allergies are kicking my rear today, but it’s worth it for the weather we’re having.
Sarah @ The Strength of Faith says
What constitutes an “hour”? Or is 75 hours quite literally 75 hours worth of stuff?
KathEats says
Technically, it should be, yes
Fran@ Broken Cookies Don't Count says
This little one will be here before we know it!
Molly @ RDexposed says
Wow, 2/3 done? I just printed out my CEUs and saw 26.5 before my updates.
We have till May 2016, so you could finish it up in toddler time if you don’t get to the full 75 before his arrival-right?
Either way, I’m impressed with your progress!
Life's a Bowl says
Greek yogurt is such a good bfast/ lunch staple, it helps keep me full for hours! I’ve been adding a dollop of PB and raisins lately 🙂
jojo says
I imagined your fridge to be constantly stocked 😛
I know I always find things in the freezer too when the refrigerator is close to empty..
Katie @ Talk Less, Say More says
I can’t hide food in the freezer, especially sweets because I usually find I like them just the same, if not more, than normal…
~Christy @ wonderofallthings says
The freezer IS the best place to forget about food! My husband has a sweet tooth and I really don’t but will munch if it’s around…so putting things in the cupboard AND the freezer helps me a ton to just forget it’s there.
