Greetings!! Sorry for the delayed post – sometimes on the weekends I just get in the zone and it’s 5pm and I figure I’m going to post again anyway….
Boy, it’s been a long day. I got lots done, but still not everything I wanted. Google Documents is becoming another organization lifesaver. I have to switch between my desktop, my laptop and the computer labs at school and it’s so convenient to upload my half-finished documents there and work on them at each location. Y’all know I love being organized 🙂
I made a little Coconut-Almond Granola mid-morning to have for the week. I definitely did a little nibbling 🙂
My eggy breakfast held me over well. Around 2pm I wasn’t really that hungry but felt a little empty/low on energy so I made a salad. It’s actually a mystery salad but after I got the measurements right for that, I added in fun toppings: mystery dip, grainberries, cottage cheese + granola on top. It was fun to eat.
I also had some carrots for more veggies, but they were kind of gaggy today. Sometimes I LOVE carrots and other times I have choke them down.
The husband made Banana Oat Muffins today! (Tomorrow’s a big day for KERF!) These are actually more dessert than a health food at almost 250 kcal a pop. I normally would not have put butter in my muffins, but he was in charge and they are delicious. I had half of one for a snack today (didn’t want to spoil dinner) and saved the other half for dessert –
For dinner we made Gliding Calm Tofu!!! I used the bake method and Em’s sesame/tamari/rice vinegar/spice/honey rub. It turned out delicious. In the oven for about 30 minutes at 425*. I really love the texture of tofu.
Plus a mystery side dish!
And some last-minute bread the husband had leftover turned into a little piece of flatbread he threw in with the tofu –
A little later I had my leftover muffin with a spoonful of AB –
And then this AMAZING cheese bread came out of the oven and I had to have a bite!!
Winthrop does not celebrate Labor Day, so I have class at 9am tomorrow. I was planning to go to the gym first thing to get back on a morning track, but I found out it’s not opening until 8am!!!!!!!!!!! I am SOOO glad I checked!! I guess that means another late-afternoon workout. We used to always workout before dinner our first year out of college, then I switched jobs and we switched to early morning and you couldn’t have paid me to workout in the afternoon. But then with my school schedule this summer I was forced to do it some and now I kind of like it. Guess it’s just like the normal ebb and tide of habits.
Off to read in bed!

Hello Blogland! I have a BBQ to attend tonight, but I’m trying to plan healthy eating habits ahead of time.
I know the friends hosting it will inevitably have cheeseburgers, chips, soda, and probably some cookies for dessert. I’m considering bringing some of my own food to ensure there’s something healthy to eat. What do you guys do in these types of situations? Do you feel rude turning down the hostess’ food and eating your own?

Ohhhhhh that tofu looks so good! I must try the recipie!
Google Docs is my FAVE! It’s so easy to use. It has come in handy more than once!

Oh man, the granola and muffins sound so scrumptious; and hooray for a dinner inspired by Miss Gliding Calm!! She has great meal ideas, for sure 🙂
Ahh, so sorry that you don’t get to have a day off from classes tomorrow 🙁 Good luck!!
Gliding Calm says
HAHA! Yay Kath! Thanks for the shout out! I’m so glad you liked it!! I would have felt awful if you didn’t!! Hurray!!! Tofu definitely does have a great texture! Agreed!
Wow, Matt looks like he has been busy baking away lately! Banana nut muffins sound heavenly…and cheese bread?! YUM.
So sorry you have school tomorrow! What a bummer. 🙁
Take care and have a relaxing evening!!!

Classes on Labor Day?! That’s no fun!
I was thinking you were close to hitting the 1 year blogging mark and it looks like (according to the archives) your 1 year anniversary on this blog was a year ago yesterday? If so, happy (belated) anniversary! 🙂
The muffins look awesome! Going to check the husband’s page/recipe for them now! 😀

Oh, now that I’ve checked out the husband’s page I see that he mentioned the 1 year anniversary!

Steph, I had a bbq that I went to last night and I eat really healthy (or try to everyday). I’m not trying to sound mean but yes it is rude to bring your own food. This is the time when you use portion control or just call it a day. One meal or day will not hurt you.
Steph says
Thanks for the advice sirenjess. The thing is, I’ve recently renewed my dedication to making healthy eating choices….I guess there’s always something to get in our way and make it harder!

Steph, I often ask the host/ess of a BBQ if s/he would like me to make or bring something. That way at least I know how my dish was prepared, and can also enjoy the rest of the food.

steph – i don’t know if it’s really that rude. i mean if you had food allergies or didn’t eat meat or whatever, it would be perfectly okay to bring something else to eat. i get how this situation isn’t exactly the same, but i’m just trying to point out that it’s not always unacceptable, you know?

Ooh I’ve got to try that tofu recipe! Yum!
It’s nice to hear about others having to adjust their schedules due to school, work, etc. I always feel like it is such an inconvenience and stressful, but it’s just everyday life and it’s something we all must get used to.
That’s not cool that you don’t get a holiday, hope you have a good day nonetheless! 🙂

Tonight’s mystery side looks wonderful – and very like something I made for my lunch today. Great minds and whatnot.
But classes on Labour Day? That’s just cruel.

Adding granola to salad is a great idea!

Steph,
Totally agree with offering to bring a side dish. I do the same thing! That way I know that there’s at least one low-fat dish on the table. And I try to make the dishes that are there as healthy as possible. If there’s hamburgers as the main course, for example, I leave out the burger and just have a tomato and lettuce on the bun w/ketchup and mustard. Kind of plain tasting, but saves ya some calories:)
Kath says
Steph ,
I would either 1) Eat something before you go so you don’t have to literally fill up on unhealthy things if that’s all there is or 2) Ask if you can bring a side dish to share (perhaps a big salad?), although I could see the host saying no, they’ve got it covered. If you do end up eating a little something else, you could always pack it it eat on the ride home if you are still hungry because there wasn’t very much you wanted to eat. But I agree with the others that it wouldn’t be best manners to bring something and eat it in front of the other guests and host. (Unless you are a vegetarian and bring a veggie burger or something to that effect).
Justy2003 ,
Keen eye!!
Kath
