This is a meal I made Saturday night, May 16th – Tofu, Deveganzied. We all know that tofu is a fabulously versatile meat alternative, but versatile enough to be meated up? I think so! My husband was not as excited, so this meal serves one. Drain and press a block of extra-firm tofu. Cut in half and store half for later. Cut a small-medium hole in the side of the block – try to make a big space but be careful not to cut through to the other side, be sure to save the removed tofu. Fill the hole with turkey pepperoni (I’m semi-vegetarian) and reduced fat mozzarella cheese. Cover the hole with the tofu you removed. Next dredge the block in egg and seasoned bread crumbs. I was pressed for time so I used a frying pan and .5t evoo, but I highly recommend that this recipe be baked at 450* for 30minutes. Let cool and enjoy. I loved the flavor combination of this dish and it was fun to make tofu sort of "naughty!"

Interesting! I’ve never thought about stuffing tofu with anything. So many ideas going through my head now… hmm! 😀
