Guess who put a can of pumpkin in her shopping cart last week!? It’s time y’all. Although I have yet to open it, I’m ready to rock and roll. Who’s ready for pumpkin meatloaf, pumpkin baked oatmeal, and pumpkin lasagna?!
Until that can gets opened….let’s see what the end of summer eats included…
AB&J toast with a little bit of scrambled egg and fresh raspberries
Autumn-y oatmeal with a big puddle of almond butter. I am hooked on the Whole Foods 365 brand that’s just almonds. I add a 1/4 tsp of kosher salt to my jar when I get home (an Eating Made Easy tip!) to really bring out the flavor.
Challah toast with eggs and peach.
Yogurt with berries, banana, raw oats and chia seeds.
And a repeat of toast // egg // peach
We went to the park one day and met a bunch of friends for a huge picnic. The weather was cool, and the food plentiful. We had lots of cheese and crackers, fruit, and veggies in hummus.
The next day – still cool – I had a big bowl of leftover chicken noodle soup.
The next day I met Sarah and Saya at Citizen for lunch. They have this killer salad with fruit, candied pecans and goat cheese which I got with a grass-fed burger on top. I also ate quite a few of Mazen’s sweet potato fries
And lastly, the Best Gym In The World hosted a free cookout for members in honor of its 30th anniversary. I had a burger, watermelon and some Sunchips. And while I was able to turn down a big slice of cake (I was in the post-workout glow) I didn’t leave without a taste of the frosting : )
Chicken noodle soup! I followed a Cooking Light recipe loosely and used a rotisserie chicken and egg noodles. Yum! I love soups and hope to make at least one per week this season.
Tuesday night was ladies night at my friend’s Lynsie’s house, and she made the best fish tacos with a roasted red pepper sauce and lots of avocado! Lynsie used to be a chef and teaches cooking classes, so everything she makes is delicious. Check out her blog!
A simple dinner at home came next – I made leftover salads packed with lentils, corn, okra and tomatoes and feta on top.
I had plans for a bean soup one night and burned my beans!! This is the second time this year I have let beans simmer too long. I get so distracted and forget about them. Doh!! But luckily the Meade Park Market was going on, and Matt was able to pick up some BBQ and veggies to cook up on the side. Served with Cheddar Garlic bread and J&P BBQ slaw.
And last but not least, Matt and I were invited to a reception at Monticello for donating to the Montalto race each year.
We got to tour the grounds and the house, and step inside the new iron storehouse they restored this year (bottom left). It always amazes me that we live so close to such an amazing significant piece of history.
The reception had gorgeous cheese and fruit platters..

We also sipped juicy wine and listened to the president’s address. It was a special night indeed!

WOW what gorgeous food at that event!! I love when people put effort into the presentation of what they’re serving and not just the taste! And I have to admit….I’m a pumpkin girl ALL YEAR ROUND. I definitely don’t wait till the fall! 🙂

Thanks for the suggestion, but it’s such a personal choice I’m not sure I want to open that can of worms. Seems like it will just turn into a heated opinion debate of moms attacking one another, ya know?

I appreciated that picture as it made me not feel so bad that my toddler was having a tantrum as well. As mothers, we all experience the same thing and seeing that other mommies feel the same, brings me comfort. We all need to support one another and stop the ridiculous attacks. Thanks for posting that picture kath!

I just bought pumpkin yesterday, too! Although mine is destined for some slightly less healthy recipes 🙂
I also make tons of soups when it’s cool out…it’s a great way to pack in veggies.

I love the different bowls you have. I have also decided I want to do soups at least once a week. My daughter has decided it’s time to get healthy and lose some weight. So my first soup will be Rachel Ray’s Lentil with Kale and Sausage soup. It looked so good when she made it. And of course Chicken Noodle will be once a month.

Have you ever tried cooking beans in the crockpot? It takes awhile (pre-soaking is a must) but my pinto, black beans and chickpeas come out perfect every time and you can ignore them all day!

I soak mine overnight, as it helps avoid gassy issues (if you know what I’m saying), then throw them in the crock pot. You can freeze the leftover beans for another night!

Love the striped blue dress! Also, (I don’t have a rice cooker, so maybe you can’t?) Can you cook beans in your rice cooker? Then it won’t matter if you get distracted! I burn my pintos all the time on the stovetop, but have started to cook them all day in a crockpot.

I had to smile at your soup because mine all used to look like that, because the noodles absorbed the broth! Now I cook and store the noodles separately and add them when I serve–helps my soup stay soupy. That cheese platter is too gorgeous for words.

Blue Grass Grill is one of my favorites, but there is usually a wait. The Nook is also popular, but again you might have a wait. Commonwealth and Brookville are both great for brunch, but I don’t think they open until 11. Bodos bagels on Preston is good if you need something quick and easier. I feel like I’m missing something but I can’t think of anything else!

Good for you for still being in summer eats mode! My body nixed summer foods about 3 weeks ago…All I crave now is fall and winter food, with the exception of the odd spinach smoothie (for added veggie servings!)
I too have plans for breaking into the canned pumpkin…My go to recipes are pumpkin oatmeal, BM Bullets (super nutritious raisin bran muffins with pureed pumpkin), Hide & Seek Vegetable & Turkey lasagna (lots of pureed squash, broccoli, peppers) and pumpkin smoothies!

Because of your oats recipe (modified for the microwave for time’s sake), I have been thoroughly enjoying oats now for about three years. Lately, I, too have been loving the almighty egg. It’s so nice to wake up and, while I’m getting ready, figure out what I’m craving. Fall makes me crave all sorts of yummy things.
I bought a can of pumpkin to make some of your pumpkin oats. I’m not a fan of overnight oats. Very few food items I dislike, but I can’t seem to find an overnight oats recipe I like. I may try that pumpkin meatloaf. Sounds good too!
Any slow cooker recipes or other soup recipes in the works?!
