Fun times with Sara + Juan tonight!!! We went over to their house (our house!) to watch the game on their big TV.
But clearly the highlight was our spread of foods. I’m stuffed!
I made a bean, corn, tomato, jalapeno salad to take. Seasoned with Southwestern seasoning (so handy – coming to OpenSky this week), lime juice and salt.
AND I made Ashley’s Chocolate Greek Yogurt dip – probably the easiest, healthiest chocolate dessert there is.
Sara had her magical quartet of dips again (this time with pimento cheese!!)
Plus her famous salad.
Thick Balsamic Dressing
Ingredients
- 1/3 cup balsamic vinegar
- 2/3 cup olive oil
- 2 tsp agave nectar or maple syrup
- 2 tsp dijon mustard
- salt and pepper to taste a big pinch of each
- Italian seasoning to taste a big pinch
Instructions
- Blend away!
This dressing can certainly be mixed by hand, but the KEY giving it the wonderful fluffy, creamy texture is using a Magic Bullet or blender to froth it together! Will keep in the fridge for 5-7 days (and will hold emulsion!)
We also had a tier of healthy foods
And pizza!!!!
Plus homemade guacamole and Great Harvest cookies.
I ate way too much in the first quarter and then nibbled on the desserts in the third. Still full! It was a good night for sprawling on the couch. Tomorrow I will eat less!
That was actually a really good football game!! I was nervous for both teams in the end.
I thought the commercials were pretty meh. What happened to the days when each one tried to top the next with humor, wit and surprise!? The days of the Bud-wize-er frogs? Those were the glory days. Tonight’s commercials were full of obvious humor with only a few clever twists. My favorite was the Bud Prohibition one. I love vintage themed commercials 🙂
And the polar bears!? I didn’t even understand them half the time.
Thought the halftime show was OK – Madonna was good (mostly at the end), but I would have liked a lot more diversity of artists and song styles. A big mash-up.
Going to chug water and get in my warm bed!

Yummy looking corn salad! And obviously, that chocolate yogurt dip looks amazing, too! My mind jumped immediately to ideas for a dairy-free version…..!!
lynn @ the actor's diet says
wasn’t will ferrell great tight-roping in the half time show?!? boy he can do anything 😉
also – you probably saw the hundreds of comm’ls for that show i told you about “smash!” that i think you’ll love – it’s premiering tomorrow on NBC – you gotta watch it!
KathEats says
That was Will Ferrell!? No way!!!!!!! He wasn’t giant enough!
And yes – saw the Smash commercials!
Cm @ Lazy Healthy says
I think that was just a random dancer guy. My friends and I thought he looked like Richard Simmons!
Lynn @ the actor's diet says
Ha ha. It wasn’t will Ferrell. I was just joking!!!
KathEats says
!! Ok – I really didn’t think so 🙂 But he did have a funny face!
Julie says
The guy’s name is Andy Lewis and he’s semi-famous on the slacklining scene, which is what he was doing. My boyfriend is into slacklinging and its a crazy random sport/hobby that really tests your balance and strength. Was awesome to see it getting some play at the Superbowl.
Lynda says
Smash is great! I was surprised that the pilot episode was already showing on my On Demand so I watched it over the weekend. Excellent, unique show:)
Emily @ The Swallow Flies says
I loved the Prohibition commercial, too – and the Volkswagon one with the dog. Half-time was okay, but my favorite part was LMFAO (my guilty pleasure)!
Laura @ She Eats Well says
Your spread looks amazing! Lots of colors, always good. And I am quite intriuged by that dip…hmm. I enjoyed the last quarter of the game especially; definitely close and exciting. As for half time, I really liked it, but what can I say, I love Madonna and “Like a Prayer” is timeless!!
Emily says
ah kath, tomorrow i must eat less too!
Angel7 says
I did not care for the halftime show that much.
I did not get to see the majority of the commercials tonight, but someone mentioned the same thing you did about the frogs from back in the day. Those were the good ole’ days!

What an awesome spread! I love the mix of healthy and superbowl-y foods!
Abby @ Abz 'n' Oats says
Great spread of food! I totally agree with the polar bear commercials. I know Coke has always used them but I think it is dumb. lol.
Molly @ RDexposed says
The polar bears were more disappointing than Tom Brady!
PS glad you figured out that I meant “Budweiser” with “Bidweiser” hahaha
Jana @ Newly Wife Healthy Life says
I wasn’t a fan of the commercials this year either, boo! I love the chip ‘n dip serving tray and the tiered bowls! Ahh so cute and fun to host with!
The Mrs @ Success Along the Weigh says
That was one heck of a spread! Glad you enjoyed yourself!
Averie @ Love Veggies and Yoga says
Ashley’s Chocolate Greek Yogurt dip that you made looks stellar! And so does the pizza and sampler platter with that pimento cheese dip. YUM!
Sounds like you had a great nite, great eats, and great company with friends. Love nights like that.

Totally agree with you about the commercials…meh. The food looks wonderful!!
Kerry @ Totes My Oats says
The food looks so good! I totally agree about Madonna… she got better at the end but I could have enjoyed some other artists!
Megan says
The dips look awesome! That was my favorite part about the Super Bowl Eats this year!
Casey @ OatsAndNanners says
I definitely agree with the “I ate too much” feeling!! But that’s what you get for having delicious food and amazing company, right? Glad you had an awesome super bowl celebration (I agree about Madonna though, we all thought that her performance was lacking energy and excitement)!
Khushboo says
That chocolate chip is so delicious- I was expecting just cocoa powder but I like the use of choc chips!
Christie says
That dessert dip looks delish! What a delicious evening 🙂

I definitely ate too much last night too – but totally worth it! Your guys’ spread looks amazing! I agree with the best commercial being the Budweiser one about prohibition – that was the best one, in my opinion.
Kristen @ Change of Pace says
All of the food looks amazing. It’s so great to have friends that eat the same way you do. Whenever we go to Super Bowl parties it’s alway hot wings, pizza, and cheesy dips.
Maria@Sinfully Nutritious says
I agree about the half time show, and the polar bears, what was up with them? I was waiting for the Coke to explode.
Your feast looked awesome. I made some vegan mini crustess quiche cups that were a huge hit. I will post those today. I cannot wait to eat the rest for breakfast.
Have a great Monday.

All that food looks delicious! And I didn’t watch last night, but I’m hoping to see some commercial recaps online today!
Susan H. @ The Food Allergy Chronicles says
Looks like a delicious Superbowl Party…the bean salad looks oh so tasty! I am going to have to try me some Pimento Cheese…everyone keeps raving about it! Hosted an Allergen Free Superbowl Party for my boys…the big treat were the Dairy, Egg, Soy and Peanut/Tree Nut Free Decadent Brownie Pops! The boys all loved them…not sure how they had room for them!
Lauren @ What Lauren Likes says
that yogurt dip looks amazing 🙂
Fran@ Broken Cookies Don't Count says
I agree, the Super Bowl commercials were nothing like in years past. Sad. Your food looks tasty!
Jules @ La Petite Maison Verte says
The Chocolate Yogurt Dip looks great, I saw that on Ashley’s site the other day as well, and bookmarked it for future munching 🙂 Not sure exactly why but that pizza looks really, really good to me right now!
Cait's Plate says
I loved that Bud commercial as well. There were definitely a couple of good ones (and a couple of stinkers!). Glad you had a fun night!
Hilliary @Happily Ever Healthy says
All the food looks amazing! Sounds like a wonderful time!

~Christy says
Great game, great goodies, great night…we had similar at our house. It is a slimmer eating day today for sure 🙂
Andrea @FrSeed2Stomach says
I have that same chip/dip plate that your friend has, except I usually put the dip in the middle. Now I know what I’m doing wrong! haha. I loved the return of the polar bears, though. 🙂
Bizzle says
Just made the dressing. WOW. So good, so good. I made it with three teaspoons of maple because I have bit of a sweet tooth, and my balsamic is just the cheap stuff from trader joes. She totally needs to bottle this and sell it at the farmers market!
Lexi @ Cura Personalis Foodie says
That choco dip looks amazing, with the health + protein factor being a cool bonus!
