We are having the most BEAU-TI-FUL day!!!! Cool, breezy, sunny!
It’s so nice that Matt decided to take a half day and is home brewing beer. It feels just like fall!
After two interviews and a call this AM, I made us both salads for lunch
Garden greens, leftover quinoa with veggies, cottage cheese for a boost more protein and peach!
I think I like quinoa on salads way more than by itself. I have never been the biggest fan..
I opted out of a slice of bread at lunch because I was saving room…
Stacy sent Nathan to work today with some of Drake’s leftover birthday cake since we left before getting to try it on Sunday. It was all homemade – including a marshmallow fondant frosting that I totally loved.
Have a good one!
Khushboo says
My kinda balanced meal ;)…love the sound of marshmallow icing!
Rebecca @ Blueberry Smiles says
Yum, marshmallow fondont sounds amazing! Very cute that they put the “Happy Birthday” lettering around the outside instead of on top
Catalina @ Cake with Love says
I also prefer quinoa in wraps or salads more than by itself! That cake looks really good! Yum, cake after greens is the perfect ending of a lunch!
Caroline @ After Dinner Dance says
That looks like an intense brewing system! My boyfriend only has the Mr. Beer brewing kit – he’d be jealous!
Cait's Plate says
It’s perfect weather here in Charlotte too – feels like early fall!!
Glad you guys are enjoying your day – that cake looks unbelievable. Can’t believe it’s all homemade! I hope I can make cakes like that for my kids when I become a mom 🙂
Vivi @My.Beautiful.Air says
CAKE AND BEER – what a fun combo. Lovely sunny day! Enjoy!
Sana says
Birthday Cake is the best 🙂
Maria says
Matt is so cute. 🙂 Kath, I was recently catching up on your very first blog posts and youtube videos since I am new-ish to your blog. In your video, you said you lost about 30 pounds through calorie counting and writing it all down. I couldn’t agree with you more, I do the same thing since I am trying to lose also.
Just curious, are you still counting? I notice lots of treats here and there and you said, those bites really do add up. So perhaps you are more lax now and in maintenance mode? Thought I’d ask since I am on a similar journey. THanks!
KathEats says
No, i stopped counting years ago as I was in maintenance mode. I put a little back on, and then took a little back off without counting. I have no idea what I’ll do after the baby comes – assess the damage and then probably give it a try without counting first.
jane says
lol “assess the damage”-love it!
Laura Rios says
I really need to try putting fruit in my salad. You always do and it looks awesome!!
I just had a salad with a homemade black bean/quinoa burger on top. hmmm…so good.
Andrea says
Don’t you love the weather today?! I’ve been loving quinoa in more breakfasts than savory meals. Maybe try that! And that marshmallow fondant sounds delicious! I love anything marshmallow.
Claire @ Live and Love to Eat says
Cool and breezy and sunny here today too – that fondant sounds AMAZING. Nothing worse than runny, thin icing.
lynn @ the actor's diet says
cake me, please!
what are your thoughts on quinoa cake?!?
KathEats says
Never heard of it!
Betty says
1) I’m getting real close to trying the quinoa – the protein value is tipping it for me – any ideas on how to introduce it
2) totally off topic – fun time in C’ville these days – in higher ed, you’re getting all the attention – may it calm down soon
KathEats says
Indeed!
candice says
my fav way to eat quinoa is sweet, like this breakfast quinoa recipe: http://www.foodandwine.com/recipes/sweet-breakfast-quinoa
I have made many variations to this recipe with what I have on hand. Good luck!!
Karen says
Betty – I suggest cooking quinoa in broth vs. water for a flavor boost, esp. if you plan on eating it as a side w/out any mix-ins. Just pair it with a legume of your choice, a variety of veggies, avocado and spices and you have yourself a nutrient dense bowl of goodness.
Laura B says
I just made a fantastic mac and cheese style quinoa casserole that eased my family into it nicely… if you google that you should be able to find it 🙂
Jen says
It’s amazing outside today (I’m in Baltimore)!! I had to have lunch outside and have my window wide open at work.
I have a question. I see you’re an RD that is home a lot, and on your blog you’re often saying you have interviews and calls and meetings. I’m just curious as to what you do?
Thanks! And that salad looks delish!
KathEats says
Interviews and calls and meetings…for the blog 🙂 Public relations and tech management
Jen says
Ohh ok thanks 🙂 I thought maybe it was for the bakery or some other RD sidework or something. Sorry to be nosy, just curious! 🙂
KathEats says
Sometimes it is for the bakery too, but I’m not practicing as an RD clinically.
Lily O'Dare @ Candied-Lilfe says
that is pretty much my daily motto! eat greens, then cake! love it!!!
Amelia says
I’m SO jealous of y’alls weather today. We must be getting a big chunk of TS Debbie here in Charleston because it’s a rainy, gloomy, and chilly day (Did I mention humid too?).
That cake looks very yummy. I could definitely go for a slice right now. Instead I am drinking a small cup of cocoa. Never thought I would type that in June! 🙂
Susan H. @ The Food Allergy Chronicles says
Leftover quinoa in salad is one of my favourites! If I make it plain, I ususally like to mix in my veggies with it and drizzle with a bit of EVOOand a squeeze of lemon…it livens it up a bit!
Angela @ Happy Fit Mama says
Portable refractometer? Yes, totally nerd alert! 🙂
That b-day cake looks amazing! I’ve never had marshmallow fondant.
Angela @ Eat Spin Run Repeat says
I definitely like quinoa more in salads too. Just like rice, it’s a little boring on its own! Sounds like a fun day so far. Just think – soon Baby KERF will be out and you can enjoy some of that summer brew!
Lexi @ You, Me, & A World to See says
Hooray for balance! Greens + cake = happy girl 🙂
Annette @FitnessPerks says
I love quinoa!! It is soooo tasty! Cake can be good depending on the frosting… 😉
Lauren @ Oatmeal after Spinning says
I headed out to teach spin at 5 this morning in my usual tank and shorts- and was freezing! I actually had to turn the heat on! I’m not complaining though- it’s a nice break.
My hubby would be so jealous that Matt took the day off to brew beer (and good for him!). He’s a big nerd too. 😉
Liz @ Tip Top Shape says
Wow, beer making looks like some serious business!
j3nn says
That cake looks awesome!!
Ashley @ Hudson on the Potomac says
Love your thought process, “small fork = small bites!” Your salads looks gorgeous, like always!
Katie @ Peace Love & Oats says
oh. my. gosh. Cake is my FAVORITE food (even more than froyo!) and that cake all looks amazing! I haven’t had cake since my brother’s wedding over a year ago! Clearly that needs to change…
kristen @ verbs and vignettes says
now all I’m thinking about is elaine on seinfeld freaking out about “drake’s cakes” after her fast. hahaha. it looks delicious. anything marshmallow flavored is ok by me.
Janelle says
Oh man. Now I want cake! 🙂
Kelli H (Made in Sonoma) says
David & I brewed last weekend & it almost killed our dog! Apparently hops are toxic to dogs. 🙁
Now I want cake!
Lindsey @ Pas de Deux says
I ran into Matt picking up beer-making supplies at Fifth Season yesterday (I was buying supports for my tomato plants)! What a perfect afternoon to be outside.
On the quinoa front, I made some last night and made a HUGE mess of my kitchen…the little grains tend to get away from me, haha! I do enjoy eating it, though!
KathEats says
Oh fun! I ate some of the dry barley – yum!
Jamie @ StudioEats says
Your salad looks awesome! As does the cake.
Amelia @ Eating Made Easy says
I think I’m going to borrow “Eat Greens, Then Cake” for my new life motto. Both make me so happy!
Averie @ Averie Cooks says
leftover birthday cake with marshmallow fondant, homemade — that YOU didn’t have to make…ahhh, now that’s the best!
JoJo says
Marshmallow fondant…. sounds heavenly.
I do the same thing, small silverwear for smaller bites.. I think it works…?
Dennis Blair @ Fort Collins Personal Trainer says
Beer, quinoa, cottage cheese and salad (I’ll have to pass on the cake!)…I won’t complain!
Megan @ Megan's Munchies says
That cake looks amazing! I need to try making marshmallow fondant!
Lisa (bakebikeblog) says
love the addition of peaches!
Ma Fea says
Any chance we can get the recipe for the marshmallow fondant?
Stacy says
This is what I used for the cake. I didn’t measure the butter and I used my Kitchen Aid and then handy sponge and dough hubby to get the powdered sugar kneaded in well.
http://allrecipes.com/Recipe/Marshmallow-Fondant/Detail.aspx?prop24=etaf
It was actually fun to make and easy to color!
Kathryn @ Mamacado says
Mmmmm, looks like a fresh and healthy lunch (with a cake treat!).
Katy says
Hey Kath,
I noticed in your picture that you said “small fork= small bites.” While that’s literally true (obviously you can’t load as much food on a small fork as you can on say a serving fork), you might be interested in this article I read recently that said people who used large forks at an Italian restaurant ate less than those who dined with small forks.

KathEats says
Really!?!? I’m shocked!
Susan says
I never would have thought about putting cottage cheese on a salad … interesting.
Mom says
Cake looks fab!
Julia H. @ Going Gulia says
That cake was homemade? It looks (and sounds) professional! Lucky you, having friends who can make awesome cakes like that!!
Megan says
I think quinoa is best with a miso or lemon-tahini dressing. Or there is a recipe from 101 cookbooks that makes baked quinoa patties.
Leslie says
Just got a new recipe at a gathering tonight for a baked brown rice/quinoa. Sounded good and easy. I can post tomorrow if you or anyone are interested. Goodnight!
Fran@ Broken Cookies Don't Count says
I love quiona on salad. Have you ever cooked it in veggie broth. Give it a different flavor. I love it!
Angel7 says
It looks so gorgeous outside in the second picture of Matt! The weather is picture perfect!
