We had a lovely Easter! Plenty of delicious food and lots of Peeps. We started the day with a visit from the Easter Bunny – Mazen loved his basket of trinkets and gifts from Mimi and Papa!
Larbs, Matt and I did this bootcamp in the living room. Then we showered up and got started on brunch. Kanz made a quiche, and we had toasted pecan swirl bread, fresh fruit, OJ and lots of coffee.
There were some presents to exchange, and Candace (Matt A’s mom) hid cute little challenges in Easter eggs that we opened like fortune cookies.
After the last bites were eaten, we headed out to Blenheim and Pippin Hill wineries for an adventure.
At Pippin Hill, which was packed with people, we had several cheese boards and some kettle chips to tide us over to dinner.
This special occasion called for decanting the Pippin Hill Petit Verdot we bought earlier in the day!
Our menu this year included a spiral honey ham with asparagus bundles wrapped in bacon.
Pesto and pea risotto
Mom’s mac and cheese (the best!)
Panko, Parmesan and Herbs de Provence portobellos
and lots of rolls.
For dessert – a lovely Sweet Haus Easter cake!!
Filled with…..COOKIE DOUGH FROSTING! Heavenly.

GOOD GOLLY! You had an awesome holiday weekend!! That Easter spread is gorgeous! (the decor and food!) And the cheeseboards at Pippin Hill? Wow. I’ve got to plan a trip there. Did you guys bring that food or do they have a menu? I’m sure the family had a great time.

We baked them at 350 for like an hour (had to accommodate the ham!)

It was a low temp and the ham was hogging (haha!) the heat. You could do it at 400* or broil for a lot less time

Yeah, Matt and I did most of it, and mom’s mac was already made. It was one of our easiest meals to pull together actually (compared to Thanksgivings!)

It really only required reheating and we just followed the directions. We covered it to keep it juicy.

Thanks, I would love to add it to my mac & cheese recipe collection! My kids ended up requesting sweet potato & butternut squash mac & cheese with ham. I used Trader Joe’s gluten-free quinoa & rice pasta, leftover half & half, cashew milk, chicken broth, arrowroot starch, gluten-free flour, a variety of leftover cheeses (Trader Joe’s parmesan gouda cheddar, smoked gouda), topped with leftover feta and goat cheese and crumbled “everything” gluten-free crackers and sweet potato and apple chips. It tasted delicious and helped use up a few items out of the fridge and pantry!
