EarthFare Round II – Maran!

Lunch with Maran was great!!!!! I’m so thrilled to have two new friends 🙂 It’s so hard to make friends as young adults when you don’t have kids and their activities to meet new people. Now I have a friend RIGHT across the street – it took us about 8 minutes to walk from my house to Maran’s! She’s super nice and we’ve already got plans to walk to a coffee shop next weekend 8)

Of course my EarthFare salad was delicious – and they had my favorite salmon again (although I’m hoping it wasn’t the same salmon I had on Thursday, it probably was).

Salad from memory (all the raw veggies are on the bottom and the ‘goodies’ are on the top!)

• Baby spinach
• Romaine
• Shredded carrots
• 2 asparagus spears
• Broccoli + cauliflower
• Purple cabbage
• A few zucchini pieces raw and a few grilled
• 1/4 cup pineapple + strawberries
• ~2 oz salmon
• 1 falafel ball
• ~1/3 cup sweet potato salad
• 1 heaping tablespoon wheatberry salad (THE BEST!!!)
• 3 walnut halves
• 1 tiny piece cheddar cheese
• A little crumbled bleu cheese

= ~460 kcal according to my estimate.

Walking

After lunch we came back to my house and went for a long walk in our neighborhood all bundled up in coats and scarves. I went to see Maran’s townhouse and her two adorable dogs and got to meet her boyfriend. It was about 50 minutes of walking! Sweet!

Tonight

I’m going to read some of your comments this afternoon and am thinking about having a nice hot chocolate for snack in a bit! It’s sure cold here, but it’s going to be 68 on Monday! Too bad I’ll be heading up north for my trip where it’s bitter cold 🙁
