(The lighting in EarthFare was horrible – we are much better looking in natural light!!)
Dinner with Christy was so fun!!We have LOTS to talk about. Her favorite healthy food is a wonderful mixture of oats, blueberries, cottage cheese, cinnamon, peanut butter and splenda (I think that’s it!) and her favorite dessert: chocolate cake! We have two classes together this spring – cool!
Of course I got a salad for dinner at this amazing salad bar Here’s the “goodies” side – the other side is all veggies and some fruit. Note the chopped salmon – it was the BEST salmon I’ve ever had taste-wise!
On my salad:
- Spinach
- Mixed greens
- Cauliflower
- Bell pepper
- Zucchini
- Cabbage
- Carrots
- A strawberry
- A shrimp
- 2 cherry tomatoes
- 3 baby carrots
- 1 falafel ball (SO good!)
- 1 tbsp broccoli salad
- 1 tbsp chicken salad
- 1 piece peanut tofu
- 1/4 cup chopped salmon
- 1 giant caper
I think that’s it???!! Do I have a good memory or what!?
Check out this super cute, giant caper!!! It tasted just like the way a permanent marker smells 😉
Hot tea to drink:
All together for ~380 kcal. Whoa. Even with the salads, it wasn’t many calories. Now I wish I’d gotten more of the delicious salmon!! (I guessed 2 oz).
I spotted my favorite pita chips, which they are ALWAYS out of and had to open them on the spot because I wanted Christy to taste them – so I had about 3/4 of an oz (another 2 chips when I got home!) But these chips are only 66 kcal per oz, so it was only about 45 kcal. more.
Total calories: ~420. I’ve got about 100 left to meet NET and am a little hungry so I think I’m going to go have a small glass of milk.
Snack
Here’s what I had for snack at 3:30 – a little mix of things! Some flavored almonds (they were gross and a little oniony), a mini box of raisins, and 1/2 a Kashi pumpkin bar I had in my cabinet:
This snack didn’t really fill me up like I’d hoped, although it was fun to eat. I was getting pretty hungry when I got home at 6 and had 3 kashi crackers to tide me when I rushed back out the door to go to dinner. No photo!

Tomorrow is my LAST DAY OF WORK!!!!!!!!!!! We’re going out to sushi for lunch. Not sure what I’ll get yet, but I’m thinking miso soup and spicy tuna roll and perhaps some seaweed salad b/c I love that stuff. Spinning class first thing in the AM!

Kath- I remember you mentioning some great holiday tea that you bought (I think you said it was pumpkin flavored or something?)- anyways, I couldn’t find it in my grocery store when I looked last month, but I DID get the Candy Cane Lane version. I was running out of my box when it dawned on me that I forgot to stock up on the holiday teas before they were gone! And of course when I checked they were already put away for the season!! Do you happen to know if the Celestial Seasonings (sp?) teas can be ordered online, or do you know a good pumpkin spice tea that is offered year round?
I found the candy cane tea on ebay (lol), but I havent checked for the pumpkin kind b/c I forgot what it was called. (And yes my SO thinks I’m crazy for even considering ordering it online!) It is damn good though!

OMG I just checked on their website and they DO sell all their tea online……BUT they don’t ship internationally!!! =( I was so excited then let down. lol. damnit!

I have a question about weight loss. I have 35 lbs to lose; gained it slowly over a year after I moved to a more sedentary city a couple of years ago. I already eat like you do…just add some junk food/fast food a few times a week. I’m working on cutting that out, but I also need to exercise.
I’m starting a new job this month that I can walk to for a total of 5 miles per day (1.5 hours walking per day at ~20 minutes per mile, 5 days per week). Based on your experience, do you think this will be enough exercise, combined with ~1600-1800 calories per day, to jump start my weight loss? I’m 28yrs old, 5’4″, 165lbs. My “happy weight” is 130. Thanks so much for your feedback!

I had just about the exact same salad for lunch! Only thing is Wild Oats doesn’t offer falafel and salads, which would be awesome if they did! I bet mine was larger, but had no idea it was so low-cal. for that much food, funny how that works!

Hey Kath. Started reading your blog and I love it! You always make it interesting to read and the variety of food you have is inspiring! Oh, but I wanted to tell you that I love having quesedillas but I like to make them w/ ww pitas because sometimes using 2 tortillas is a little much for me. Don’t know if you’ve ever tried that, but it works great!

5 miles a day is a lot – what a great job you must have (or exhausting depending on the day!). 5 miles for me equals about 400 kcal burned, and that’s a good amount of exercise. I would try to do some weight lifting as well and add variety when you can – if you can get to an elliptical trainer or bike on the weekends. Good luck!

I was surprised that it wasn’t that much either, but it was mostly just raw veggies! I didn’t use any dressing or put any cheese or nuts on, which kept the total lower. I do enjoy those toppings at times though!
