Feeling better today! I’ve got my class tonight and a bunch of fun meals planned. Tuna melt for lunch and steamed shrimp and veggies for dinner from a CHINESE place. I’m trying something new by ordering a steamed dish. I’ve gotten Chinese takeout maybe twice in my life (not including when I was younger) and this seems like it could be a healthy option if it’s good. We’ll see!!

Before workout this morning was toast, which husband accidentally covered with sugary jam!! He had good intentions though : )
Workout: Stairs, elliptical, weights = -375 calories. Wish it had been higher. Oh, and my heart rate monitor is back and fixed!! I missed it : )
Breakfast: Banana Foster Pancake.
And skim milk. I’m trying to cut back on coffee to see if it helps with my stress/anxiety. I read recently that having caffeine in your system is like being in fight or flight constantly! I know it’s got its benefits, and one cup a day is actually supposed to be beneficial, but caffeine is a drug. I’m sure my body would rather start with fresh fruit, whole grains, and some healthy protein than a drug.

Thanks for your supportive comment in CK! {{hugs}} I'll respond more when I have more time…your diva pancake is so much thinner and lighter than mine…is it b/c I am using regular egg beaters? Do you use all egg whites? Just curious…well, have a good day. -Meggers-

Megs, I use 1/4 cup oats, 1/4 cup egg whites from a carton (not egg beaters because they have ONION in them – ewwww!) and then a pinch of baking soda, pinch salt, giant pinch of cinnamon. You might use Elle's recipe because I think she uses 1/2 cup of oats (so basically twice as big of a pancake)?? Mine are 100 calories each and then I add banana and fruit and milk and stuff.

Haha I think you just inadvertently answered the question Kath! I believe the recipe does include baking SODA, which is what puffs it up and makes it bread-like. My recipe is 1/2 cup oats, 1/2 cup egg whites, 1/2 t vanilla, 1/2 t cinnamon, 1/4 t baking SODA, 1/4 t salt, 2 packets of splenda, plus whatever mix-ins I want that day. It makes one giant fluffy pancake.

OK, I'm pretty sure I've been using baking POWDER since the beginning, so maybe I've been making them wrong all these years!!!!!!! (Well, months 🙂 )OK, I just looked it up and SODA it is!! Wow, I'm definitely having one tomorrow see how it turns out!!

But you know what? The reason yours are twice as big is because you use twice the OATS! Not because of the powder/soda issue. I’d rather have a smaller pancake and more “side dishes” for variety! But I’ll have to do the supersize one sometime soon 🙂

Ahhh…glad I could clear things up for you, Kath! I use 1/4 oats and 1/4 egg beaters (want to try and find just plain egg whites) and a pinch of baking soda…then add-ins. 🙂 Yes, they are quite big and fluffy! 🙂 -Meggers-

Yeah, mine are clearly bigger in circumference because of the doubled oats/egg whites, but I did mean that yours will be twice the height just from making the baking powder/soda swap…they're not flat at all like Meg said, maybe half an inch thick?
