Just after blogging we biked to the gym and back with 40 minutes of ellipticalling in-between. Short and efficient.
We continued the bike ride to Harris Teeter for some fresh goodies. Collards, chard, green beans, raspberries, bananas, mango, tofu, apple, cuc, spinach, watermelon, peach, 4 kinds of beans, cherries, and more.
Which turned into Pina Colada Salad
Ever since I bought a head of green cabbage last week I’ve been thinking about a pineapple black bean salad/slaw. Fresh pineapples were too expensive today ($5) so I went with canned, which ended up being good for the juice.
For two heaping salads toss together:
- 1/3 head green cabbage, chopped
- 1/3 cup chopped English cucumber
- 1/4 green bell pepper, chopped
- 1/2 a jalapeno, chopped
- 1 can pineapple juice, drained with juice reserved
- 1 can black beans, drained
- Dressing: 2 tbsp coconut milk, 2 tbsp pineapple juice, pinch kosher salt, 1/4 tsp red pepper flakes, 1/2 tsp sriratcha
- Garnish: lots of coconut
On the side I had toast with butter
And watermelon
For a sweet ending I tried my first adora calcium chocolate, which is packed with 500 mg of calcium! What a delicious way to get your nutrients. Loved it. Don’t think I’d eat these everyday due to the cost, but I will definitely invest in some for an after-meal boost of calcium.
I also got the word that you can get an online discount by entering the code “afriend” at checkout at the Adora Online Store for $4 off.
My poor thumb/tendonitis is majorly flaring up again. I’m wearing Matt’s wrist brace from earlier this year. I think it is caused by too much typing and worsened by yoga. Lately EVERYTHING has been bothering it (even housework). Guess this cruise will be time for it to heal as I take a break from real life 😉
BALTIMORE readers – I’m going to be spending a speedy quick night there before the cruise. We’re getting in too late for a dinner, but I was wondering if anyone wanted to go running on Sunday morning before we get on the boat?? Email me if so: [email protected].
Later!
Oh She Glows says
Sorry about your thumb! I hope it gets some rest soon. 🙂
I like the dressing on your salad…sounds fabulous!
Courtney (The Hungry Yogini) says
What a yummy salad!! So tropical. LOVE IT!
Sorry about your thumb! That is so frustrating =( Hope it get’s better soon!
Sarah says
That watermelon looks fab! I have tendonitis as well and I sleep with a brace on. It helps me a lot! When I feel it flaring up I also take a couple of tylenol for the inflamation.
Jennifer says
As my dad says… if it hurts, stop doing it. So stop doing yoga or do it less frequently.
Marissa says
Sorry about your thumb 🙁
JENNA says
I’m going to have to try this salad! It looks so refreshing! I hope your thumb feels betta!
Sarah (lovINmytummy) says
I think you should just hire a secretary and blog by dictation. No typing involved!!! You could probably hire someone to do yoga for you too 😉
j3nn.net says
That watermelon looks delicious!
Jenn
Erin says
Hire me to do the yoga for you! I’m still in half beginner mode, but I can do the crow pose.
All that fresh produce looks terrif and what a brillz dressing for the salad.
Hey lady. What does one do with collards?
Adi (oatonomy.com - repaired!) says
A cruise is an excellent way to rest a wonky thumb. 🙂
Jen says
Oh dear, I hope your thumb feels better. Your meal looks so summery and complete with the bright watermelon. 😉

Kath,
I trained my left hand to do use the “mouse,” it’s helped my right hand a lot. Maybe you can switch some of your keying as well. I ended up in therapy, don’t ignore that pain, I have permanent injury on my hand.
Shannon (The Daily Balance) says
love the salad!!! sorry to hear about the thumb ;(
I’m also DREAMING of warmer weather! – it was 40 here this morning!
Kalle says
i found out about KERF while i was watching Current last week =) now i’ve been reading your entries daily haha
you and your blog are very inspirational!
also, where do you get your clothes?! i’ve noticed through the pictures you’ve posted that you have some real cute outfits!
CaitlinR says
I live in Baltimore and would love to meet up for a run, but unfortunately, I will be in Charleston visiting my brother this weekend. Actually, that’s not unfortunate at all! 🙂
zoe says
so fresh and falvorful!
Jennifer says
Also, do some physical therapy… maybe you can find some ideas online? It helped much for my carpal’s.
Julie says
I’m a little disappointed in the Adora’s Vitamin D stats. As you know probably from your classwork, most of us don’t get nearly enough D. Only 100IU of D in each disc? That’s nothing, considering we need 800-1200IU daily. I was excited about them, for a treat, but will stick to my separate D softgels.

That’s a bunch of stuff to bring home on your bike! Do you guys both have baskets? Bike riding for groceries is awesome, I bring things home in a backpack… maybe a basket is in my future. The ride there is great, but the ride home is less fun with the corner of an almond milk box digging into my back for 3 miles! 😉

Hi Kath! I just found your blog today, a friend told me she thought of me when reading it because I love to read food blogs AND because I just graduated and completed my internship and am just waiting to be cleared to take the RD exam. I too have had a weightloss story (High weight = 250lbs, current weight = 170 lbs, goal weight = 150) and when I get to goal, I’d love to be in Shape! I’m also a runner and a triathlete, so we have a LOT in common (except I’m a bit hopeless in the kitchen… which is why I read food blogs, to get inspired!)
I’ve added you to my feed and look forward to getting to know you!
Michelle says
hmm i’m dreaming of your hot weather i believe. heheheheh
Can’t say i love the pina colada salad cuz i hate dried shredded coconut, but it is still super pretty as usual!!! hahahah
Oooh interesting calcium supplement! I’ve taken the Viactive’s for a while but they just get so expensive. 🙁 How depressing huh?

Erin ,
Search for collards in the yellow search box and you’ll get tons of ideas! I like them with dates, bacon and blue cheese.
Kalle ,
Welcome! My clothes are from all over random places but my favorites are the typical girl stores: LOFT, Banana, Old Navy, Kohls, Target, Macy’s.
CaitlinR ,
Bummer, but Charleston is SO COOL!!
Julie ,
Good point, but hopefully the sunshine takes care of that extra boost.
Alison ,
It’s tough when we get heavy stuff. I have a basket and Matt stuffs his backpack full and I often have a lighter bag on my shoulder too.
Holly ,
Thanks for stopping in!! Congrats on your weight loss AND for being done with your internship!!

hello in warm weather in the evening this Bruchetta is perfect http://www.droparecipe.com/recipes/view/bruschetta also a tip for you, when you post your email on your site NEVER post it like you do, do like this you-(at)-domain.com the other way spam robots will get your email, those are like search engines that spider the whole net for emails and the way I have shown you it will not pick it up.
