Sure looks a lot like my pumpkin oatmeal breakfast to me!
Are you sure it’s not the same meal!?
Thanks to Chelsea for giving me the rest of her roasted acorn squash last night! I was able to chop it up and cooked it with leftover butternut squash soup from our party into a delicious morphed stew. I added 3 slices of pork I brought home from my dinner as well, and topped it all with cheese and sour cream (man I had forgotten how good real sour cream is!). It was souper filling.
Here is the RECIPE for the Curried Butternut Soup we made in the slow cooker for our party. It’s a winner!!
Matt – with his classy dishes – used up our bread and made a oozing grilled cheese for lunch. When it came out of the oven I was jealous, so he shared a corner with me to complement my lunch.
Thanks Kanz!
YOGA this morning was good. Lots of shoulder and chest openers – just what I needed! And biking around this town is pure bliss. Mountains in the distance, people to watch.
I was going to drive to Roanoke today for a dietetics meeting, but I decided that 4 hours of driving and $35 were a bit much for the event. So I canceled the trip and now have an open afternoon to get some things done.
We’re embarking on a trip down south this weekend for Matt’s dad’s wedding! Through Charlotte to see our friends and then to Spartanburg (where Matt is from) for the weekend festivities. I don’t think I’ll have time for any meet ups in SC, but I am going to see BRENDAN JAMES again in Charlotte on Monday 10/11 if anyone wants to join!
Beth @ Beth's Journey to Thin says
I looove getting creative with leftovers and you did an awesome job with that! I had pumpkin as the star of both my breakfast and lunch today – LOVE.

Sarah @ The Smart Kitchen says
Wish I could be in Charlotte to see the concert! He was AMAZING the last time I saw him. 🙂
Samantha @ Bikini Birthday says
I prefer my grilled cheese fried in a pan rather than baked.
I have it so infrequently that it’s worth it to indulge in a fried sammie once in a while.
Heather (Heather's Dish) says
MY mouth started watering so bad with that grilled cheese…i can’t imagine how you must have felt!
Melissa @ HerGreenLife says
It’s great to have someone to share with — I’m always nibbling off my husband’s plate 😉 That all looks quite tasty and filling!
Carolyn @ lovinlosing says
Oh, man, that grilled cheese looks amazing!! The weather has turned cool here (at least for a little while) and I’m craving soups. I’ve never had butternut squash before, but the husband has had butternut squash soup at a local restaurant and really liked it so I am hoping to make some.
Andrea (@ Puppy Dog Tales) says

I just had a grilled apple and cheddar sandwich from the urban farmhouse in richmond. when you come into town next week, you should check it out if you havent been already? the entire place is amazing and the food is delicious to boot. they serve all fresh and local foods, changing the menu w/ the seasons.
Keri says
I absolutely LOVE how pretty your bowl is! Although don’t get me wrong, what’s IN the bowl is just as pretty as well…. pretty delicioussss.
And yay for soup puns! 😀
Kelly says
Grilled cheese looking yummy. Never baked it in the oven. What is the temp and cook time if you do not mind sharing? I have a great blueberry infused cheese I bought the other day and would love to try it in the oven!
the husband says
I used the broiler for this one. I toasted both sides of the bread first. I left one a little under-toasted, and then added the cheese. Another couple minutes and the cheese was oozy and delicious.
The most important part of a grilled cheese sandwich is making sure the bread gets cooked too… gooey cheese is nothing if it’s only supported by flabby bread.
Kelly says
Thanks!!! I plan on using Great Harvest bread!
Anna @ Newlywed, Newly Veg says
Oooh, I LOVE the addition of some cheddar cheese to that soup!!
Amanda says
Grilled cheese in the oven? Why haven’t I tried this? Ok, there’s my lunch for tomorrow.

Thought you might find this article interesting! Basically a panel of writers makes identical meals using ingredients from different sources – a super discount grocery store, a regular grocery store, Whole Foods, and a farmer’s market.
Kath says
Cool!
Faith says
Hey Kath! I’m sure your weekend is going to be sooo busy, but I thought I would let you know that Greenville, SC (right down the road from SparkleCity) is having its annual Fall for Greenville Food and Music Festival this weekend. It begins Friday and ends Sunday. Here’s a link to their site: http://www.fallforgreenville.net/

Your soup looks amaaazing. Especially with bites of a grilled cheese! I’m forever deciding that my boyfriend has food I want after I’ve already made my meal, so he’s used to having to share with me haha!
