Well, it wasn’t a horrible disaster, but it did mean switching up our dinner plans. We have a meat grinder attachment for our mixer and were planning on doing turkey burgers for dinner with a turkey breast, but something from the attachment fell and shattered the mixing bowl underneath, getting chards of glass all through the turkey! Of course I grabbed my camera for you all to see 🙂
Since there was still a little meat in the grinder, the husband had a turkey burger and I settled for a Morning Star Veggie Burger (Original Grillers – one of the few kinds I like due to the overwhelming onion flavor in most!)
Also on the menu was a big salad, and the more I thought about it the more appealing a fresh salad was to a burger on a sprouted grain bread ” bun” (we’re trying to use things up before our trip tomorrow!). So salad it was.
Bibb lettuce, pom seeds, green pepper, homemade lemon and walnut oil vinegarette (2 tbsp lemon, 1 tsp walnut oil, squirt honey mustard, squirt honey, chopped rosemary, salt). I also added some toasted sliced almonds for a crunch.
On the side: sweet potato fries!! A little charred, but I like the burn (although I’m sure it’s not the best for the body…) This is 200 kcal worth of fries – my gosh they add up quickly!
Also sipped on the rest of the wine we had from earlier in the week while we were cooking…Only about 4 oz glass.
Dinner calories: 628 (including wine – the fries were the biggest contributer)
Dessert
After dinner I immediately wanted some peppermint ice cream. I should have waited for the craving to pass, but I had some anyway – about 1/4 a cup – and now I’m full and wishing I had not had any. It did taste great though 😀
Walks
I got 40 minutes of walking in while on the Winthrop campus. I am SOOOO excited about starting school again. The university has a brand new athletic center with the biggest gym I’ve ever seen! Tons of top-notch cardio, weights, locker rooms. I couldn’t have picked a better year to go here, as it just opened this fall! I’m going to stick with my early morning workouts when I start classes, mostly because I like working out first thing and I like showering at my house but it’s great to know this gym is at my fingertips should I need it.
I am also SO lucky to have a husband who enjoys walking. We needed lettuce and a sweet potato for dinner (our fridge has NEVER been this bare!) and we walked 20 minutes to the grocery store and back to get it in the freezing cold. We walk not only for the exercise but also for the environmental aspects of not getting in the car. I’m so glad he’s agreeable 🙂
Snack
Had a soy milk hot chocolate made with Nesquik, a clementine and some honey graham sticks at 4:30:

Oh man, I hate the price of books! I swear, I'm worth less than they are, hehe!

Nice goggles! Chemistry was my very worst class my freshman year of college. Here's hoping you survive it better than I did! 🙂 I'm sure you will!

P.S. Thank you for your grace in the face of recent events–you are one classy lady!

Mags-
Stephanie C just said that Kath's blog was mentioned (which it was) NOT that people were talking bad about her…
Kath says
Hi Guys,
I did read Cristin's blog comments and was not thrilled to be compared to her, although I always appreciate it when people like my blog. I have no idea what Brandy's comment was about because I read Eat Like Me daily and really like Cristin. She and I have somewhat different eating patterns, but that doesn't make either of us a healthier eater. I admire her and hope she continues to blog for a long time.
Becky,
I emailed some of my wedding photos and a recap of the wedding to the Real Weddings editors. I think they are listed on TheKnot.com somehwhere. They're pretty selective, so I didn't think we'd get chosen, but it can't hurt to ask!
I'm going to be in another magazine – Parade Magazine – soon, but no photos, just a quote from weight loss. I emailed an editor who was looking to interview weight loss folks through my PR firm, so that was just luck of the draw. I'll keep my eye out for it!
I also want to submit my story to some of the big women's magazines – Shape, Health, SELF – but I want to do a good job on it and haven't had the time!
Off to the gym!

Hey Kath!! I bought Morning stat veggie burgers last week but havent gotten to them yet! do you heat them up in the oven or microwave? I just love them for quick meals!! take care and have a very Merry Christmas. You are doing such a great job and I don't think anyone should compare you to cristen or jenna or anyone else. All three of these blogs (yours included) are all awesome and so different! I love them all and love getting new ideas and recipies! you are amazing
Mel
Kath says
Thanks Mel,
The secret to good frozen veggie burgers is you HAVE to make them in the oven. The microwave is so tempting because it's just 1.5 minutes and it's done, but in the oven it gets a nice crust and is soooo much better. Let me know what you think!

Hey Kath,
I have just started reading your blog and really like it, but was just curious if all this posting about food, calories, and exercise and constantly evaluating your diet… makes you feel less healthy, than more health? I know many women get in that kind of mind trap (including myself!!!). Do you think this blog helps you feel healthier or sometimes takes away from other things in your life because you are always posting and taking pictures of the food you eat?? (This may seem like a weird question because you continue to do the blog…which I do like to read!) I find it interesting to see how someone else deals with food and calories…and while I am ALL for being healthy and balanced, I think we sometimes take it to the extreme…thoughts??
L
p.s. How do you know how many calories you burn in a workout? I never believe those exercise machines, is there a better way?
Fusami says
I’m only reading this now because you did a trackback, but that is our AP chem textbook! Too funny!
