Snack
I had a cup of hot tea this afternoon and some pistachios and almonds around 5:00 to take the edge off of my growing hunger. As usual, worked like a charm!
Dinner
I just got the salad bar at dinner but I sure took advantage of the all-you-can eat!!
Plate #1: The Salad
I have no idea what I put on this since I took a little of SO many things, but here’s what I DO remember:
- Lettuce
- Spinach
- Broccoli
- Pickled veggies
- Shredded carrots
- Corn + black bean mix
- 1/4 cup chickpeas
- Jalopenos
- 3 dried banana chips
- A tbsp granola
- Cherry tomatoes
- A dried apricot
- Green pepper
- Roasted red peppers
- Mushrooms
- Black olives
- 1 cucumber slice
- 2 red sweet peppers
- 1 tbsp raspberry dressing
Plate #2: The Breads
I also had to try these breads! Fruit and nut (DELICIOUS) and pumpernickel, plus a little barley salad with raisins. I also had one bite of my sister’s stuffed flounder.
Plate #3: The “Desserts”
Another small slice of fruit and nut, a few chocolate chips (!!) some noodles with sesame (didn’t eat all of these), more barley salad, some trail mix.
Dessert
We were going to get a slice of pineapple cake for the table, but they were all out. So we passed! I’m very glad, as I really didn’t need anything else. I had a chocolate graham pretzel when I got home.
Recap
I’m 90% sure I’m under 1800 total kcal today. I’m so proud of myself this week. This trip is the ultimate test to see how well I do eating in “real life” situations – where I’m not cooking my own meals all the time. I think I’ve made some smart choices: no alcohol tonight, skipped big dessert, salad bar full of vegetables for fullness instead of entree (which I didn’t need) and salad bar.
Tomorrow morning my cousin, who runs DII cross country for Slippery Rock University is taking my sis and me running. I’m excited to get a good workout in – but I hope we can keep up with her! She runs 6:15 miles on a regular basis and can do a timed mile in 5 something!

Oh, and there's a Charlie Brown's in my parents' town (also in New Jersey). I haven't been there for years but after reading your blog I am totally craving there amazing salad bar!

Hi Kath! How do you deal with noshing while making meals? While I'm making dinner esp., I tend to eat the ingredients as I cook whether I'm hungry yet or not, and then I'm already 3/4 full by dinner time so I'm stuffed at the end of the meal. do you (or the husband?) deal with this at all and any tips to overcome it?

Rachie—I do the same thing! I like to cut up some raw veggies and eat them just like that. The crunchiness keeps me happy and busy while cooking supper. Sometimes I throw in some hummus or light ranch dip on the side to liven up the taste a little as well…:)
