Salad:
I had
- A HUGE tortilla (but I only ate half)
- 1/3 c pinto beans
- 1/3 c rice
- 1/3 c broccoli (in butter, I think)
- 1/4 c sauteed veggies (in butter)
- Salad with lettuce, peppers, cucs, shrooms, and 1/3 c peas
- 1 tsp honey mustard dressing
- Unsweet tea
*The apple and banana are for another day – I had to get my $6.50 worth!*
NO DESSERT!!!!!!!!!! GO ME!!!!!!! I just kept saying “How will you feel in nutrition class if you have dessert, even one bite!” That’s not setting a good example. So I passed.
I ended up way low on calories today and got pretty hungry. I had 5 almonds during class.
Just got home at 9pm. Class was good. Made myself “pumpkin pie”, which is just pumpkin, raisins, cinnamon and 2 tsp brown sugar. About 75 calories.
Total calories today:
Breakfast: ~400
Snacks: ~230
Lunch: ~525
Dinner: ~425
Dessert: ~75
= ~1650. Whoa!
-400 from run + walking on campus
= 1150 net.
Guess I get to eat tomorrow!

YES, I can totally relate to you. I work/live on a campus and it's tough eating "light" in the dining centers. But at my institution they are trying to offer more healthful options. And, they now post the nutrition facts for their dishes anyways. I hate having to avoid all the desserts and soft serve ice-cream (although they do have low-fat strawberry frozen yogurt which is nice). So, I really don't eat there much…Well, have a good FRIDAY tomorrow! Yay for the weekend!-Meggers-
