I got a little hungry so I had some dessert – a new cereal find from Trader Joe’s with 1/4 a cup of Soy Delicious Chocolate Peanut Butter Ice Cream, microwaved to melt it a bit. (Yes, I was able to only serve myself 1/4 a cup of ice cream – about 2 big tablespoons!)
FABULOUS!
This cereal is good. It’s kind of like Smacks, but a healthy version. I was never a huge fan of Smacks, but it’s got that same light airy honey stickiness to it. It’s a little high on sugar, but 1 cup is only 130 kcal with 9 grams of fiber.

I love cereal with ice cream or fro yo! There is a fro yo place here in SF that has tons of cereal toppings, though none as healthy as that TJ’s cereal. YUM!

That cereal looks good, kinda like the GoLean cereal. And that peanut butter chocolate soy cream looks really deadly. What a treat!

I eat that cereal almost every day… Never noticed the sugar, I guess I just looked at the calories/fiber and thought it must be fine.
I’ve mixed it with ice cream too… Yum!

I’ve never mixed Cereal with Ice Cream before, it looks like a great way to sneak fiber into a sweet treat!
I wish I could make Soy Ice Cream last as long as yours does, it’s one of those things that I buy and a week later is gone 🙁

That’s got to be my favorite flavor of Soy Delicious… never thought to put cereal on it, though. Thanks for the idea!

Cereal with ice cream?!? You never cease to amaze me with your new food combos! Unfortunately I don’t like lumps in my ice cream, but if I did, I would think you were a genius! I know, I’m weird… I don’t even like chocolate chips or pieces of berries in ice cream, although I love ice cream, chocolate and berries separately.

Kath any pointers on memorizing? You seem to do quite well at it!

What a fun, delicious dessert!! Haha, oh goodness, I used to LOVE Smacks, back in the day :0D
Enjoy your evening :0)
Huh? says
…but 1/4 cup is 4 tablespoons?!

Hi Kath! Just wanted to let you know I am working on an assignment for school on women’s nutrition and I would like to include your website if that is alright with you.
I am a library student working on a bibliography, and I am supposed to include descriptions of books, journals, websites, etc. that I think are important to the topic. I thought your blog would be a great addition since you are in NC, and the professor likes local sources (I go to UNCG).
Thanks, and I love your site!

I pair a cup of that cereal with a cup of plain organic nf yogurt (soy or normal), toasted slivered almonds, and either kiwi or frozen berries…best breakfast ever and it keeps me full for so long!

Hi Kath!
I’ve been reading your site for a while now and it’s truly great! I was wondering if you’ve ever considered going veg. I feel like you’re a great person to ask because I see that you and your husband eat together (really fantastic meals). I’m currently mostly veg, but when I think forward to eating with a guy…I truly wonder how easy it will be. Thanks so much! And once again, adore your pics and info!

To ‘huh?’:
I think Kath said 2 tablespoons because they were “estimated” and maybe a bit heaping/not measured with a “real” tablespoon. Hope that helps!

Marcy ,
Did you see my response on flashcards? One thing I don’t do is read through my notes. I always take notes on index cards so I can study visually and easily sort what I know and what I need to work on more. I’ve been doing that for years (sometimes transcribing notebook notes onto them at test time, other times taking notes ON them) and it works really well for me. I’m a very visual learner.
Nick ,
It is like Go Lean but lighter and fluffier and better tasting!
Huh,
Alyssa is right – I just used a regular spoon but that’s what it looked like to me. Exactly why I don’t use measuring spoons and use weight instead – I’m horrible at eyeballing.
Rachel ,
You’re welcome to use KERF in your project 🙂
Alyssa ,
I consider myself a flexitarian. I eat meat and probably always will, but more as a side dish and not as often as I eat other kinds of foods. I have never really liked meat all that much compared to my love for whole grains, fruits, veg and dairy. I don’t really crave it and have never been a big meat eater. I do believe that humans evolved to eat meat (and perhaps that we might not even be here as a species if we didn’t?). But the main reasons I don’t eat it more frequently are:
1) I just don’t think it tastes that good
2) I do have issues with the horrors and environmental aspects of the meat-producing industry (and grass-fed/organic is SO expensive)
3) Compared to a bag of lentils, meat is expensive!
I think Michael Pollan says in The Omnivore’s Dilemma that meat used to be reserved for special occasions but Americans and its availability have made it an everyday food. I like to think of it – pork tenderloin, turkey, ham – as a special occasion food or something I order in a restaurant rather than something I want to cook for dinner a few times a week.
And I don’t think I could ever give up seafood or dairy 🙂

Oh, this reminds me of college days. I used to love to get soft-serve in the cafeteria, and add a spoonful of peanut butter (eaten in the same style I imagine that you eat it with your oatmeal) and put those crunchy ‘oriental’ noodles (from the salad bar) on top. SOOOOO delicious!
