^^Mazen eating corn on the cob last week! In the middle of this dinner he said “Can we have corn on the cob soon?” And we had to explain that he was eating it on the cob! He also had blackened mahi and kale salad – I was proud! He’s gotten so much better at dinnertime over the past year.
Thomas gets all the credit for this blackened fish – it was so good! I get credit for finding my corn holders deep in a kitchen things basket So necessary for COTC!
Another night we had a taco bar! We used to have this once a week when I was growing up. My mom always put shredded carrots and plain yogurt on the buffet (!?)
Now it’s alllllll about the guac! (I don’t think I had an avocado until I was in college….)
We followed Vie meal plan and I made the super simple tomato soup, which was not only super simple but also soooo good! We had it for dinner one night with grilled cheeses. (I convinced Mazen it was tomato sauce and he liked it) and then I had it for lunch the next day too with melted cheese!
I can’t wait to make this one again!
Moving backwards to lunch, I had this chilled pea soup at Orzo while dining with my friend Emily. It was divine! I wish I had the recipe.
And the crispy calamari salad with dill-yogurt dressing I had with it was absolutely perfect. Orzo is Emily’s go-to spot for lunch, and she has me hooked!
I’ve been on the sardine train at home. You wouldn’t think sardines would be a pregnancy craving but they are! I think I crave their richness. I made the salad with carrots, relish, yogurt, mayo, and mustard and ate it on a rice cake.
Breakfast smoothie aka purple monster with all.the.berries and Vega Coconut Almond. Plus buttered toast and coffee.
Creative art-inspired breakfast with yogurt, toast and fruit.
And finally, a lovely bowl of oatmeal made with strawberries, banana, chia and peanut butter.

I think you mentioned something yesterday about your blog analytics. Most of the time, I read your posts in my email and rarely click through to your actual blog – usually only if I want to comment. Do you look at email open/click through rates too? I always wondered if bloggers did that because I so rarely visit a blog’s actual site! (I’m a digital analyst, so that’s why I’m curious what successful bloggers like yourself do to understand traffic and plan accordingly!)

I rarely look at my email list data and have thought about canceling it (I pay about $30 a month to have the service) but I know there are people who rely on the email verses a feed reader or going to the blog that I would not want to lose so I always change my mind! I know my click through rates are a lot higher than a retail store’s, but I couldn’t tell you what they are. They do correlate with high analytics on the site, so if a post is popular in general it’s also popular in email.

I was wondering this exact same thing. Today, I happened to see the link on my Facebook feed and had time to click through, rather than waiting for the email, per usual. I’ve seen some bloggers essentially give teasers in their emails, so you have to click through to read the actual content, but I find those to sound too much like they’re trying to sell/advertise something, so I sometimes end up unsubscribing. So Kath, thank you for giving CONTENT in your emails!
Additionally…I found out that we are expecting our first shortly after you announced your pregnancy. It has been so fun for me to follow along a little behind yours!

Yes, the teasers and “read mores” are for clicks, but honestly as a blog reader myself I often don’t click through to read more unless I’m really into the topic that I can’t fathom making my readers do something I wouldn’t do!

Wondering your preferred method for making grilled cheeses please? Microwave cheese poured over toast or cheese laid onto ‘one side toasted’ bread and grilled or another way. Thanks!

When I’m feeling like Barefoot Contessa: butter bread on outsides of sandwich. Put in sliced cheese (2 slices to be epic), and sprinkle garlic powder on outside. Cook in skillet on low-medium heat until golden brown and cheese is melted.
When I’m feeling lazy: stick dry bread with cheese in the middle in toaster oven and cook till the cheese is melted 🙂

It’s the way to go imho! My mother made it this way – without garlic. Key is the low and slow cooking – ans butter!

I ate so much tuna during my pregnancy. I craved it during my most nauseous times and still craved it when it passed. I had to do some research to make sure it was safe and it is according to my findings- like up to 60 ounces a week before you hit a dangerous level! And salmon was up to 80 ounces a week.

I recently found out I can’t eat onions. I’m not super bummed because I don’t really love onions anyways, but I do love guac. I know you hate onions, so I’m assuming you make yours without them? Do you have a recipe you use?

I have a question about peanut butter! A few pregnancy books I’ve read say to limit peanut butter during pregnancy because there’s some connection to peanut allergies–which seems crazy. I would think that eating PB in pregnancy would decrease allergies! Have you heard or read anything about this?

Everything that I have heard or read suggests that limiting a food can actually create allergies (this is reverse of what they thought even 6 years ago) so I would not avoid anything except those foods that are known to possibly harm a baby through bacteria or drug interaction. Unless something came out this week/month that I haven’t seen yet!

Hi Kath! That is so great that Mazen has become such a great eater this year! If you don’t mind me asking…do you have any tips for picky eaters that you’d be willing to share? My four year old has *always* been picky (at least since 1.5-2 years old) and it’s getting old! I’ve already done a lot of reading and experimenting, but am curious what worked for you.

You can read some of our eating journey in this post. We let the pickiness ride through 2 and 3 and then got firm around 4 with family dinners and more rules.
