Not too much going on here today. Sunday is Matt’s main day off, so I don’t want to bombard him with house things. So he had a short and sweet honey-do list: hang a heavy mirror, Craigslist his old chest freezer and have lunch with me! The rest of his day is going to be spent with our friends brewing beer 🙂
We went for a quick 3 mile jog before lunch, and while I showered, he actually made the lunch too!
Pimento cheese sandwiches
Leftover chili
Apples and cinnamon
And a few leftover snacks
We dined outside at our wooden table. So fun on a pretty day!
I’m taking it easy today too, although I might hang a few more pictures myself! Also might go for a walk with Faith, read my book [still working on The Postmistress, which I do not love], and make a fun dinner. A little birthday cake eating too!

Beer brewing sounds like a good day off to me 😉
Kelly @ Foodie Fiasco says
Yummy lunch. Happy Sunday!
J @ Ess and Jae V2.0 says
I didn’t love the Postmistress either. Depressing. Pointless. Are you going to finish it? I often struggle with that – should I finish a book I’m not enjoying?
KathEats says
Yeah, I’m 2/3 through..
Amanda- The Nutritionist Reviews says
Have a fun day with Matt! My husband has the day off today too so we are just hanging out too.

As someone who is very large and unfit, and is proud of herself for going on a walk, I love the way you casually say you went on a “quick” 3 mile jog before lunch and then carry on with your sentence. If I ever managed a 3 mile jog it would be the focus of an epic blog, for maybe days or even weeks to come. Good for you for being so fit (and young 🙂 ) that such things are simple and I hope it continues that way for you. I realise you work hard at it and it is inspirational to see how healthy living turns out.
KathEats says
Haha – ANY time you exercise it’s an accomplishment 🙂 A quiet stroll or a half marathon!
Lauren says
Sounds like a nice day to me! Relaxing days are always the best but as a high school student, they rarely happen. This week I have tests, projects due, a horse show, and an orchestra concert! Yikes……
By the way, I really need to visit Cville soon because I miss your Great Harvest bread…it’s just too good and nothing up here really lives up to it! 🙂
Lauren @ What Lauren Likes says
Great lunch! Happy Sunday 🙂
Averie @ Love Veggies and Yoga says
Good luck on Craigslisting the furniture. I have about 10 things I need to do that for but don’t want to deal with the flakes and nuts that seem to reply to most of my ads…lol 🙂
And the pimento sammie looks stellar!
Have fun on the rest of your weekend!
Hillary says
If I had that cake staring me down, I would probably spend my entire day head first in it ; )
Enjoy!
Katie @ Peace Love and Oats says
That lunch looks like the perfect mix of fall leftovers! I haven’t had pimento cheese since I left SC! Haven’t seen much of it in the midwest…

ditch the book, kath!
i was on page 274 of the girl with the dragon tattoo and just getting more and more disinterested and frustrated with the glacially slow pace. so i threw in the towel!
too many books and too little time!
Theresa says
Life is too short to read books you don’t love!
Wasn’t that what school was for…LOL!

My dad was the type to stop watching a movie if he didn’t like it (even walk out of a theatre), and I’m the same way- with books, as well! His motto was “I already wasted my money, why waste my time, too?” 😛 Not that theres anything wrong with finishing what you started, but I’m always onto-the-next-one when I’m not into something.
The same applies for men, too, now that I think about it…;)
Zoe @ loseweightandgainhealth says
Love that motto. I tend to continue, thinking I can’t waste my money. But good for your Dad – he’s a genius. My time is more precious than my money after all! Thanks 🙂
Karen says
I share that philosphy! I’ve been known to leave theaters if I am not enjoying a film and I don’t read beyond 50 pages of a book unless I’m enthralled. I get bored easily and regret wasting my time on an activity when my time can be better spent elsewhere.
Michaela says
that wooden table looks gorgeous and so does the food!
Irina says
there are million of great books, why waste time on boring ones? 🙂 The food looks delicious and the setting is so idyllic, beautiful photos as always.
Ashley @ My Food 'N' Fitness Diaries says
A relaxed, mellow day is definitely needed from time to time! Sometimes it’s just what you need, especially after a busy week.

I keep seeing pimento cheese stuff. Haven’t tried it yet!! And chili sounds good 🙂 I am eating some soup right now as we speak – homemade butter nut squash with homemade chicken stock, coconut milk and curry spice, DELICIOUS, and it has a very nourishing secret ingredient, but it sometimes scares people — LIVER!!
J3nn (Jenn's Menu and Lifestyle Blog) says
I’ve never had pimento cheese but I am sure I’d like it. I like anything cheese-related. hehe
Khushboo says
I love snacky plates like that for lunch- get in a wide range of flavors 🙂

If you’re looking for a truly engrossing read, you should try Diane Chamberlain! I tore through the Midwife’s Confession in a day! I also recommend the Secret Life of CeCe Wilkes.

I started reading The Postmistress a few weeks ago and just can’t get into it either. I think I get really confused about whose who and what situation they are in, etc. I called it quits last week since most of my reading is done when i throw in the occasional elliptical workout and that book just did not pass the time. I’m now reading Fly Away Home and loving it!!
kathleen @ the daily crumb says
i just love relaxing rest days. good for the mind, body + soul. have a great afternoon!
donna says
I thought everyone was familiar with pimento cheese!!! That’s a staple at our house.
Here in NC, we eat in on almost everything, including on burgers. A grilled pimento cheese sandwich is the best. I had one for lunch today….with jalapenos. Is pimento cheese just a Southern thing?
Jen on the Edge says
I’ll be curious to hear if you finished “The Postmistress” or not — I tried and tried and could not get past the few few chapters.
KathEats says
I did and I pretty much hated it. You can have my copy now if you want it!!
KathEats says
D’oh, just re-read and saw you hated it too..
