One year ago my friends group started the tradition of a cupcake tasting in the dead of winter. This year’s theme was PJs, so we all wore plaid pajama pants and yoga pants and put zero effort into our appearance for the night. Stretchy pants required for this feast! The above is the before shot – complete with champagne and more cupcakes than 10 women can handle.
And this is the after. Dominated!
Oh and did I mention Adam Levine was invited!?

On a healthier note, here were some other delicious meals I’ve had lately. Post sugar party breakfast smoothie – packed with spinach! Plus banana, milk, yogurt, oats and Vega Coconut Almond.
Sunflower butter toast with a giant grapefruit –
And peanut butter jelly oats! An old favorite.
On the lunch front, I made an egg, cheese and spinach scramble. I forget how easy these are for lunch! Pineapple on the side.
A No Bull Burger with melted cheese and grapes. If this looks like a toddler meal, that’s because it is! Mazen has no interest in No Bulls so I had one one day and his rejected leftovers the next.
He might not love veggie burgers, but he LOVES snow and knows where all the extra patches are. Sadly I think it’s now officially all gone.
On the dinner front, this Ma Po Tofu dish from Cook Smarts was AMAZING! The sauce!! I never would have paired peanut butter and tomato paste together, but it was divine. (The recipe called for a special black bean paste but recommended PB as a substitution so that’s what I used)
These meatballs and zucchini from Cook Smarts were also soooo good! I loved the yogurt sauce on top too!
As proclaimed on Instagram, I went on my first outdoor run in a reallllly long time last week. I hibernate in the winter! Last year I was training for the Cville 10 Miler and still haven’t recovered from a 9 miler in below-freezing temps. This year I’m spending a lot more time in hot yoga than I am running outside! But despite having taken a long break from running, the 3.5ish miles I ran were easy. So I suppose cross training works!

I haven’t had PBJ oats in ages either! I’ve been eating regular KERF banana oats with PB for weeks (love it), but it’s time for a mix up!

When you make your egg/cheese/spinach scramble, how do you do it? Do you cook the spinach separately before adding it to the egg? Do you just do it all at one time? How many pans does it require? Thanks yu so much!

I usually put the spinach in with a little olive oil and sautee it until wilted, then add the eggs and cook as usual and then add the cheese near the end and cook until melted!
