After a lazy afternoon of reading, napping and lounging, we contemplated what to make for dinner. My Twitter friends were very inspiring! But we settled for a simple meal of my very favorite foods:
Kale
Sweet potatoes
Beans
Sharp cheddar cheese
Greek yogurt
[Where are the oats, pumpkin and peanut butter!?]
It was an AMAZING combo. We simmered the beans in some BBQ sauce that got thick and syrupy. The potatoes were baked in the oven for an hour at 400* after being rubbed in olive oil and salt.
The cheese + yogurt + sweet sauce + cinnamon was an excellent combo.
Of course the kale was great – so I made a video!!
Crunch!! The Brain [Andrew] loved them.
We had some tea to drink that Karen left.
Movie time!!
Jessica @ How Sweet It Is says
Okay this is so gross, but I don’t ever wash my kale first. I always thought it would be too wet but never thought to add it to the spinner. Brilliant!
Allie (Live Laugh Eat) says
Jessica!! I think I saw them on the dirty dozen list at some point…wash, girl, wash!
Jessica @ The Process of Healing says
I buy the bagged washed kale… it’s a lifesaver!
Gabriela @ Une Vie Saine says
You definitely settled on a delicious dinner! I had a sweet potato with dinner tonight as well- so comforting as the cooler weather settles in.
Errign says
I JUST commented on your recipe page to say I made these for the first time tonight – coincidence! 🙂
I didn’t wash my kale either, Jessica, but I did pick it up from my local farm…it looked clean, lol!
Sava says
Now I’m craving Kale!
But unfortunately I ate the last of it yesterday and am not schedule for a grocery run for a day or two D:
Oh no!
Bee Goes Bananas says
I’ve never tried kale before, but I might have to try it now! I love your video and your accent! I’m from Canada and we speak a little differently up here! 😉
Stacey says
I have yet to try kale chips! It’s on my to-eat list 😉 Enjoy your movie time!!

Hi Kath! Started reading your blog a few weeks ago and this is my first time commenting! I have to admit I’m still trying to catch up, a bit backlogged on all the entries (I think I’m on August 08 right now?) but love all your meal creations. 🙂 Tried Greek yogurt for the first time recently and looved it, but I haven’t been able to try it with savory items such as cheese yet. Definitely will give that a shot when I can! Thanks for the posting and keep up the good work!
Kath says
Welcome!!
Estela @ Weekly Bite says
This is making me want to put kale chips on my menu this week 🙂

I love the simple idea of the beans simmering in BBQ sauce. I’m going to try that one. Beans and sweet potato is always a good match.

I still haven’t tried the bean + sweet potato combo. Looks so good!
Valerie @ City|Life|Eats says
oooh – love kale chips. I need to try roasting sweet potatoes. I always steam them by default.
Lin says
I’ve never made baked beans before but now I feel like I must! It looks so yummy combined with the sweet potato! I also love your kale chips video, I happen to burn my kale chips 50% of the time :-(.
Nicole @ yuppie yogini says
Kale and sweet potatoes are so yummy together. I like to steam my kale and drizzle a dressing of oil, apple cider vinegar, tamari, and Bragg’s over top.
erica says
i haven’t tried kale chips but that video makes it look so simple, i may give it a whirl!
Allie (Live Laugh Eat) says

Allie says
love the video- very cute. i never knew they were that easy to make!
Katie says
You can use any kale for chips, but the curly kale is the best, I think. I grow three kinds in my garden, but that is the one I always pluck for chips!
Lee says
That was a cute video at the end.
Chelsey says
mmm that looks delicious! I love the video!
Detje Bea says
Thanks for the video on the kale chips. I am going to make them tomorrow since I planted 4 kale plants in my garden and I have only used it in my soups and salads.

Alex says
LOVE the video! I never knew how to cook kale-chips, but now – problem solved! Now, I just have to find some kale…
Erin says
Cute video but I have to confess that I don’t like kale chips! Maybe I made them ‘wrong’ but they were so crispy, it almost felt like a knife cutting my throat and were, at the same time, crazily chewy…
Julie @ Wearing Mascara says
What a cute video! I actually never thought that I could make Kale chips without a dehydrator! Thanks for showing us that we can 😀
Gina says
I love, love, love sweet potatoes. The way you combined savory and sweet sounds perfect!

Kris says
I tried a sweet potato w/ baked beans for the first time tonight while DH had steak. He thought I was crazy, but it was really good (and now I have to show him the pic of your dinner). I sprinkled the beans w/ hot sauce. Now I just need to make the kale chips which I’m sure I will love since I like kale in all other forms 🙂

Wei-Wei says
LOVE the video. You’re too cute 😉 Do you think it would work with any other kind of green?
Kath says
It would have to be a really stiff green like kale. I haven’t tried it with others, but I bet it would work for some – perhaps mustard greens?
steph @ goeatapeach says
My roommate and I decided that Rev Soup was like a snooty boulangerie (sandwich shop/bakery) in Paris… bad service, closed whenever they feel like it (e.g. after 8 pm and every Sunday, in Rev Soup’s case), but the food is so good you can’t help but go back. It’s frustrating, but worth it.
Laura (Blogging Over Thyme) says
You have the strongest Southern accent, the first time on video it surprised me so much! 🙂 I’m dying to make kale chips, I must get on that ASAP. Thanks for the instruction!

Hi Kath,
I have loved reading your blog – thank you for sharing all that you do! As a dietician, do you have any ideas of where I could get resources for someone experiencing weight gain as a side effect of medication? The medication is Zyprexa… I’m not sure if its effect on weight is due to water weight gain, a slowing of the metabolism, or increase in appetite. I’m hoping to design a simple, not too expensive food plan. Thank you so much!
Kath says
SEM, I’m afraid medication side effects are out of my scope of practice. I’d check with your doctor or pharmacist.
Tammy says
Cute vid 🙂 So… everyone on blogs seem to be makeing/loving kale chips so I was excited and made them a few weeks ago – but the flavor was SO strong… I tried them with ketchup the way you eat them and they were way better but I’m not a ketchup fan… so I tried mustard… 🙁 Anyway so do you love kale steamed?? do you like the kale taste or are your chips not that kale-like??
Kath says
What about BBQ sauce?
I do like the taste of kale, and like it steamed.
Gracia says
That looks delicious! If only I could find kale over here… Maybe here in Spain is just not used, so they don’t sell it? It’s the exact same thing with rhubarb. I eat tons of it when I’m abroad so I can compensate for the total absence of it here.
Freya (Brit Chick Runs) says
Oohh that sweet potato with the bbq beans looks INCREDIBLE!
Stacey (The Habit of Healthy) says
Ok, I’m going to have to try kale chips. Good vid! 🙂
Claire (www.saladmunchers.com) says

My father planted some in his garden this year because of you! and now we are going to have Kale and spinach out the ying yang. I can’t wait.
Thank you for all your awesome recipes and healthy ideas.
Amber K says
I just can’t stand kale! I tried making these chips and they would taste GREAT at first (my seasonings are awesome) but then the aftertaste was absolutely awful. Just not for me!
But I tried roasted kohlrabi this weekend and it was amazing!
Katheryn says
Cute video! Thanks for making it, I’ve been wanting to try kale chips, and now I don’t feel so apprehensive.
Allison at WebWhatNot says
I made the kale chips last week according to your recipe, and they were way too salty! I’m glad I got to see the video today. I definitely added way too much salt. I’m going to try again this week and see if they pass the hubby test. 🙂
