I’m being the “Him” and he’s being the “Her” – I’m downstairs about to watch TV and he’s up in bed asleep!!
This afternoon was Girls on the Run. We had nice weather and I ran for only about 20 minutes with my coach after. I thought about doing more (she had to go), but I was really out of time. I decided rather than changing clothes in my car that I would go to the YMCA nearby and change. And then I realized they have showers!! And towels!! And hair dryers!! I was all set for a 15 minute shower-get-dressed turn-around. It felt SO good to be clean!! Although I was without any make-up at all and it felt weird 😳
I made it to campus with about 25 minutes to eat. I packed a great salad for dinner!! It was fabulous – and the hummus was the star:
- A base of romaine
- 1/2 small red pepper
- 1 carrot
- 3/4 cup garbanzo beans
- 2 big blobs Sabra hummus (which I partially hid under lettuce to keep it off the lid)
- Some homemade lemon dressing that Karen brought over
Plus a nice slice of bread!
I did well on my Micro lab test from last week and managed to make it through tonight’s lab. SO glad to be home though!!
I went up to kiss my sleeping beauty and then came down in my PJ’s to watch the debate (I’m DVRing it at the moment). I’m about to settled down with a cup of tea and a snack – will post those tomorrow AM. I’m not sure how long I’ll last. Maybe 30 minutes!? My plan tomorrow is to sleep until 7 or so

They were mostly on the top – the whole bottom was lettuce!

It was only stored for a few hours. And I put the dressing on the bottom and mixed it as I ate it. Stored all together in the tupperware you see there.

It’s never occurred to me to put garbanzos AND hummus on the same salad – but why not? I bet the texture difference makes it interesting and super yummy. I’m going to have to try it! And it’s also a good reminder to put garbanzos or other beans on salad in the first place – I definitely need the protein. YUM!

aw yay i just saw the shout out i got yesterday 🙂 i am indeed here in prague! started teaching yesterday and it went well, but i was totally nervous! the city is gorgeous, and i’m really looking forward to this weekend when i’ll have more time to explore (we’ve been in teacher training classes 24/7 since monday morning!). my roommates and others in the course are really cool 🙂
i really miss US food though and would kill for a whole foods, he he! everything here is mea,t meat, meat, butter, potatoes, more meat, cream sauce, etc etc, so i’m definitely having to try to do meals at home instead of eating out too much. i did find some great produce at a market near me though!
anyway, glad to see you put the kashi coupons to good use! i’ve always been curious about that “good friends” cereal, even though the picture on the front is totally lame, hehe.
i think i’m going to start a blog up to let friends and family know how i’m doing in prague, so i’ll let you know the link when i do!

So I’m not the only one to hide the hummus under the lettuce when I pack a salad!
I really admire your devotion to packing lunch and dinner everyday except for the Earthfare days – it’s extremely time consuming, especially with such a busy schedule!

I used to be embarrassed to go without makeup and I would always at least put some coverup on and a bit of foundation. I have perpetual bags under my eyes and always felt like I had to draw attention away from them. Then I got tired of always putting makeup on! LOL I eventually got past it and now only put makeup on if we are going out to dinner or something along those lines. It’s a bit freeing not having to worry about that anymore.
I’ve never melted the parrano! Must try that! I taped the debate too, only made it an hour before I was passing out.
