Well, really…
Crackers and yogurt!
Layers of plain yogurt, Great Harvest cinnamon raisin oatmeal mix [which has a touch of flour for creaminess, cinnamon and a pinch of brown sugar], fresh berries and Carr’s Whole Wheat Crackers! I wouldn’t really call these crackers wholesome but they’re not bad and a fun treat. Graham crackers could serve the same function here!
Iced tea spoons rule the world
So do beer glasses!!
I got up a RAN this morning!!! I hadn’t been on a run since …like…Thursday!? So it felt really, really good. I got to sleep in just a wee bit more than I have been, but I was still up at 6:15 to maximize my time.
Some days I feel like a clunker car and other days gazelle. Today I was a gazelle, moving lightly and swiftly with seemingly long legs. I ran mile 2 in 8:10!!! But I crashed a bit by mile 4 – two big hills got me and I had to stop and walk.
Still a great run and an even greater breakfast.
I’m headed to the bike shop in a bit and then to the bakery for the rest of the day!
Kim @ Spoonful of Sass says
Beautiful breakfast! I love layering!
I’m so impressed you got up to run despite all the hard work you’ve been doing. So inspiring!
Christina says
kath you run and rock the cville world 🙂 all the best for your bakery now that it’s “real”!
KathEats says
Thanks!
Chad @ thebreakupnote says
I’m with you on feeling like a “clunker car” – also… I am eating something very similar to this at lunch today.
Since your lifestyle is different now that you’re running your business and all it’ll just take time to adjust 😛
Cait's Plate says

Samantha Angela @ Bikini Birthday says
Do you and Matt go into the bakery together or does he start earlier?
KathEats says
He’s been going in at 3AM to help train the staff on production.
Samantha Angela @ Bikini Birthday says
Ooh that’s rough.
I guess that’s the life of a baker eh?
Molly @ RDexposed says
If you can’t fill beer glasses with craft beer, I suppose yogurt would work! Have you tried sour beers? I kind of like them! We had one with dinner last night and it was so good-I blogged about it today if you want to peek at it!
KathEats says
I hate them! Although there was ONE I liked that tasted like Bourbon!
Lara @ TresLaLa says
My hubby just finished labeling his first batch of Oaked Vanilla Bourbon Stout. It’s not a sour beer, but wooooo-heeee, it packs a punch. A bit too much bourbon in there for my taste…
Angie @ Musings of a Violet Monkey says
Love the layers this morning!

Goodness I ALWAYS look forward to your breakfast posts! Every meal looks gorgeous and a recipe I want to try 🙂
You are also so inspirational for all you have done lately- of course the bakery (amazing), finding ways to continuously eat balanced meals, and still finding time to exercise! You go girl 😀
Karen says
Ha…totally relating to the clunker car vs. gazelle fitness personas, with seemingly no rational reason for the difference. Hoping for a gazelle-like super charged hike this morning. Breakfast looks yum!
Have a great day at the bakery and good luck with the wheels!
Laura @ Sprint 2 the Table says
This is weird, but I just realized I never knew that those long spoons are “iced tea” spoons. *dad Southerner* 🙂
Congrats on the run!
Angela @ Eat Spin Run Repeat says
That breakfast looks delicious!! And I know what you mean about feeling like a clunker some mornings and a gazelle on others. This morning’s run was a gazelle-like one for me too! Have a great day Kath!
Elizabeth @ Eat Clean Fun says
That breakfast looks so yummy! I hope the bike heals quickly!!!
Paige(Running Around Normal) says
Woo hoo for a great run! I love when I feel like I can run for days, but I always remember it’s the days I feel so sluggish that make me stronger. I *do* have long legs and can’t run an 8:10 mile (on mile 2!) Nice!
Katie says
Beautiful breakfast, I’m thinking my afternoon snack will look similar. I totally have the clunker feeling today due to 3 am wakeup. Love the iced tea spoons – I use them all the time. Sounds like you are off to a wonderful start to your day, enjoy the rest of it.
Anna @ Newlywed, Newly Veg says
Breakfast parfaits always feel so “faincy” (said with a thick southern accent) 🙂

The other day I noticed talk in your comments section about The China Study and plant-based diets, so when I saw this I had to pass it along!
From Engine2Diet on Twitter: In Charlottesville, Virginia? Come to the Engine 2/Whole Foods dinner at the Omni hotel and get plant-strong w/me @ 6:30.
KathEats says
Oh cool – researching!
Emily @ Savory and Savage says
I worked with someone who biked everyday to work. He had a whole kit for changing the tubes on his bike. It turns out if you bike more than occasionally – changing/fixing flat tires is a regular thing ((( I hope you get your bike fixed!
Ashley @ Coffee Cake and Cardio says
Oh my goodness… this looks fantastic!!! Congrats on your run!
Katelyn @ Chef Katelyn says
Ohhhh my gosh, if there is one thing i miss about dairy it is cookies and cream ice cream. This looks so so good — why didn’t I think of making my own?!
Marissa says
Yumm, that looks like a great, light, refreshing breakfast! I saw those crackers in Publix the other day and almost picked them up. Good job on your run! I wish I could convince myself to get up early and beat the heat for a run… but at 6 AM, I just can’t help but think that a nice noon-hour elliptical session sounds so much nicer! Haha. Well, I guess sleeping in is one of the perks of summer–I better enjoy it while it lasts.
staceyhealthylife says
I agree, some days my run is awesome and I just flow. But other days it’s a struggle and I feel weighed down.

Wow, the nut butter on top makes me drool!!

Nothing like a run followed by a breakfast sundae to start your hump day (virtual thumbs up)
Tracy says
Do you think having a pre-run snack or not affects if you feel like a gazelle or a clunker?
KathEats says
Not too much. I ate a date before I left today, but I’ve had clunker days with dates too!
Allison @ The Delicious Life says
I’m glad I saw this before breakfast. Inspiration!

Glad you got in a run this morning and hope the rest of your day is going well!
Mary Catherine says
Hi Kath! As an RD, have you ever heard of fruit making people hungrier? I’ve been eating apples as a mid morning snack this week and feel ravenous about ten minutes afterwards! Am I crazy!?
Kori says
I hope you don’t mind me stepping in here to comment, but I am a graduate student in nutrition, so I thought I’d offer a little help. First of all, you’re not crazy. 🙂 Fruit, although an EXCELLENT food, is made mostly of fiber and sugar, so the sugar can cause you to feel a “crash”, and therefore, hungry again. I suggest you pair the fruit with yogurt and either some nuts/seeds or whole grains or both to keep your satiety level at bay for a while. Try making a parfait (like in this post! =]) or a smoothie. I hope this helps!
Mary Catherine says
Thanks, Kori! Glad to know I’m not crazy 😉 I will take your advice and eat something with the fruit!
KathEats says
I second just what Kori said!! Thanks Kori!
Kristin @ STUFT Mama says
Iced tea spoons? I have an overabundance of beer glasses (from my college bartending days), but I need some of those cool spoons.
Lauren @ Sassy Molassy says
Kath, oh my LANTA! This breakfast looks so amazing. I must recreate. Those Carr’s crackers are amazing. So cookie like. I just busted open a package of them last night for a little appetizer type dinner. I’m starring this post for sure.
kris (everyday oats) says
gosh your bfast looks goooood! I have ‘food swings’ where I go through phases and I’m currently in an anti-yogurt phase, but your ‘crackers and yogurt’ this morning kinda makes me want to go get some yogurt of my own!
Hillary [Nutrition Nut on the Run] says
What a cheerful breakfast! Reminds me of 4th of July 🙂

I had a clunker run yesterday for sure!!! But nothing a good breakfast like that one couldn’t make up for! I had pancakes for a reward for pushing through!

Hey Kath!
I’ve been meaning to write a comment since Sunday! My boyfriend and I went to visit his brother in Cville this passed weekend and we were all so bummed when we went to Great Harvest on Sunday and it was closed!:( I told them about your blog and we were all looking forward to visiting the new bakery and meeting you!!!
Next time I am there, I will come in again!
Anyways, I saw the outside of the bakery and it is beautiful!! Good luck with everything!!:D
KathEats says
Aww so sorry to miss you!! We have to take a day off for loafing 🙁

Jessica @ The Process of Healing says
That is such a cute breakfast! And the oatmeal sounds so good… I wonder if you added flour to homemade oatmeal, would it have the same creamy effect?
Averie @ Love Veggies and Yoga says
What a FAST run you had! Looks like being busy is carrying over into FAST legs when you’re running!
Heather @ Get Healthy With Heather says
A seriously gorgeous breakfast!
Krissy - Single Serving says
Eeek! Those iced tea spoons are giving me a flashback. I’m a Meeting & Event Planner and long ago I had a nightmare client who kept telling me she needed “yogurt spoons” at our coffee breaks. I’d never heard of such a thing and was stumped. Turns out (which makes sense if you think about it) she wanted iced tea spoons as regular teaspoons get coated in yogurt in certain packaging when you try and eat it.
They are absolutely perfect for the parfait you made but that woman was such a horror show I’m still traumatized. 🙂
PS – and this has nothing to do with anything but I’m getting married in September and we are going to Napa/Sonoma on our honeymoon. I’m going to be scrolling your archives and stealing some ideas of where to go so thanks in advance for doing the legwork. 😉
Emily @ Glitz Glam Granola says
Omigosh that looks so yummy!! You don’t by chance ship that mix to CA, do you?? I’m totally yogurt/berries/granola right now so that looks up my alley!
