For once we’re thankful for a little break in the clouds.
After puzzle work this morning, Matt and I set out on an hour walk on the beach for some exercise. It was nice not to return brown and sweating.
Back inside at 1PM and we flooded the kitchen with lunch materials.
We are out of Great Harvest bread 🙁
But my dad came home with some Arnold Rye – in honor of the Healthy Living Summit he said! [Arnold is our primary sponsor 🙂 ]
I was in the mood for something cold… a green chilled soup!!
I Vita-Mixed away the following:
- Leftover cabbage (steamed)
- Spinach
- A packet of plain Amazing Meal
- ~1/3 a frozen banana
- ~1 cup almond milk (Larbs’s)
- Handful of ice
Topped with avocado and chopped peppers. It was kind of like green gazpacho!
VERY filling. But also VERY wheatgrassy. I had forgotten how wheatgrassy Amazing Grass is. I think my acquired taste has waned a bit! I much prefer Vega products for smoothie flavor and texture.
Served with a glass of Food Should Taste Goods and pretzel nubs – add a handful more to this!
In other news, a ROACH was in the house this AM and Kanz rescued me!
More beach time is in store. And we’re going to out to dinner tonight. And we have the movie Hamlet to watch in conjunction with our book club discussion (The Tale of Edgar Sawtelle is somewhat based on Hamlet!)
See y’all later!
Evan Thomas says
Mmm yummy green soup! I love the richness avocado adds.
Freya @ Brit Chick Runs says
That looks like such a good summer lunch 🙂
By the by- I’m ordering a Vitamix tonight 😀
Jessica @ How Sweet says
I love doing puzzles at the beach. We always take a few and that is the only time of year we get to do them!
Bethany @ More Fruit Please says
I LOVE your bathing suite! So cute!
Marilou @ Mostly Healthy says
Love, love, love your bikini! And the orange one from yesterday! Where did you get those??
Kath says
Thanks.
Yesterday’s orange from Target.
Today’s patchwork from Old Navy 2 years ago
Samantha Angela @ Bikini Birthday says
I love it too!
Allison K says
Love today’s suit!
Kaci Higgins says
Everytime I see your clothes, I think “Wow I love that!” It seems like you shop at Target & Old Navy a lot which would explain my thought because those are my two favorite stores! ha!
Robyn @ Frugal 'n' Fit! says
I think “wheatgrassy” is my new favourite adjective.
“How are you feeling today, Robyn?”
“Ah, a bit wheatgrassy, but other than that pretty good”
😉
Kath says
Ha!
Kaz says
That soup/smoothie looks so cool and refreshing for a hot day at the beach. 😀
Have fun!
Amanda (The Nutritionist Reviews) says
That soup looks good! Did it have more of a savory taste or a sweet taste?
Kath says
Not sweet! It was rather vegetably.
Sarena (The Non-Dairy Queen) says
Glad you enjoyed the walk today. Have fun with the movie!
Rachel (Two Healthy Plates) says
Hmm.. I do love cold veggie soups but I’m not so sure i’d like that one….haha
Dorry says
Great idea for a summer soup – packed full of nutrients!
Jenny says
That looks like a super-healthy bowl! Hope you enjoyed it!
grace says
I love how dedicated you guys are to the book club!
Ally says
Not sure about amazing grass, but your abs look amazing!
It seems like when I try and eat like you do (for volume) and have a lot of big salads and fruit I get really bloated – especially in the stomach area. So even though its healthy and low calorie stuff it keeps my stomach from ever looking flat and can sometimes be uncomfortable. Any tips? Is there some way to prevent this or is my disgestive system just out of whack?!
Kaci Higgins says
My stomach does that too. It actually has for years. When I was in middle & high school, I thought I was so weird for it. I still bloat, but it varies according to what I’m eating…i.e. lots of veggies or other gas inducing foods. I’d suggest just cutting back slightly on your meals & try to supplement small snacks in between meals if you’re hungry so maybe your body won’t react so harshly to your larger meals (breakfast, lunch, dinner). I hope this helps!
Kath says
I’m not really sure what to say. My inclination is to say that you will get used to it over time. Perhaps eat less raw veggies and cook them more? More water? I think it sounds like fiber overload, so perhaps just start slower. Smoothies tend to bother me less than big old salads.
kaila says
love matts signature thumbs up in EVERY pic! lol! its so funny 🙂
Ann @ Appalchian Appetites says
EWWW…I hate beach roaches 🙁 Good thing Matt stepped in!
Heather (Heather's Dish) says
oh how i wish we had a vitamix at work! how amazing would that be?! you guys are just the cutest ever…but really 🙂
Estela @ Weekly Bite says
Amazing meal does have a “wheatgrassy” taste… but that’s what I love about it 🙂
Enjoy the rest of your beach day 🙂
Jill says
Abs of steel!! I’m working on mine post baby–oh where did u go abs–hahaa
I really need some beach time after reading your blog. I think amazing grass is very wheatgrassy too, I should try the Vega. Brendan B is a good Canadian, you know 🙂
Stacie @ Imperfectly Healthy says
Ick! I’m so glad that you were rescued from the roach! I hate them!!!
I’m still very jealous of your family bookclub – it would never go over in my family!
Pat Kilmain says
Food Should Taste Good chips are finally available in my small town grocery in Alaska! Had the Cheddar Cheese ones – good! – and have a bag of Sweet Potato waiting in the cupboard.
Loving your vacation! And I have to smile at the multiple bathing suits – here almost no one goes swimming on anything resembling a regular basis (except indoors) so multiple suits are a rarity!
Michelle @ Give Me the Almond Butter says
I don’t think I’d ever be able to eat the soup, but hey! More power too you. Definitely a vitamin -packed lunch.
lynn (The Actors Diet) says
i like vega a lot better too. i don’t “do” grass-y very well! however, anything chocolate with amazing grass is great!
Sheila Viers | Live Well 360 says
Looks like you guys are having a blast. Did you by chance bring your Live Well 360 Core on your trip? It makes a great travelin bag, even without the water bottle pocket. 😉
Kath says
It’s in the POD with the rest of my house!
Sheila Viers | Live Well 360 says
I know what that’s like! Our house was in a POD for 6 months. Seemed like everytime we needed something we were like, oh wait, it’s in the POD. Haha.
Jill says
The Vita Mix. Sigh. It will be mine. Hahha–I caught the husband lurking on your blog to see what the heck blender I want. Thank goodness for a July birthday! 🙂
Jil @ Peace, Love & Munchies says
That soup sounds great – and I agree … after the heat, a day of clouds isn’t too bad!
Brendali says
I have been reading your blog for some time, and seeing you in a bikini just makes me so motivated! Your body is amazing and fit!!!! Its such a testament to how GOOD eating and exercise IS the solution to a permanent, healthy body!
I used to struggle with food, always thinking the less I eat, the more weight I would loss, but your such a perfect example that the exact opposite is true! You eat REAL amounts of REAL food and you STILL LOOK AMAZING!
Honestly, because of this blog (and HTP, and Fitnessista, etc.) I have learned to embrace real food. I am not afraid to eat peanut butter(the REAL kind with ingredients I recognize!), greek yogurt ( so good!), spinach, etc.
My wedding is in 310 days (haha) and I am going to strive to eat right, work out, and look hopefully as good as you! Thank you again for being such an inspiration to me!
Kath says
Thanks!
Brendali says
lose*
Sarah says
I’m LOVING your vacation posts & am living vicariously through you! I wish I was at the beach right now. 🙁
Thanks for keeping up with your blogging on your much-deserved vacay!
Angela (ohsheglows) says
LOL you guys crack me up…love it…the nicknames, book club etc. I can’t WAIT to go to my in laws on the water, but sadly ill have to wait til August I think.
You’ve peaked my interest about the book…I haven’t read in ages!
Angela (ohsheglows) says
Oh PS- you look incred in a bikini!!! You go girl!
Tay says
Ow ow girl, you’re rockin’ the bikini! 😉 Not to sound creeperish, but you have great abs!! I know you mention doing some ab work on the blog, but how much do you usually do, and do you have any fave ab moves? I’m trying to rev up my workout, and am getting bored of the same old!
Tammy @ Defining Wellness says
Tay, I was thinkin’ the same thing. Kath rocks the abs!
Kath says
I never thought I had great abs!! I’m guessing it’s the old “you can’t spot tone anything” and just being pretty healthy in general makes them show more? I don’t do very many ab exercises at all other than yoga and running!
Stacey @ Tipping the (Kitchen!) Scales says
Glad to hear your hubby rescued you from the roach!! Never had chilled soup before but it’s such a good idea in the heat!
jen says
been reading for awhile but haven’t commented before.
you have the cutest swimsuits! we just spent a week in a beach condo in florida with my in-laws last month and your pictures are making me miss our vacation even more! enjoy the break-you’ve earned some down time 🙂
Anna @ Newlywed, Newly Veg says
yeah, the AG products are SUPER grassy, for sure. I’m always surprised by it anytime I stop using them for a while and then come back to them!
Anne says
Which Hamlet are you watching, Mel or Kenneth?

Molly says
That’s a very interesting combination of ingredients. I would never think putting banana in the mix would go well with bell peppers on top. I bet using it as a dip for chips would be yummy!
Kelly says
Kath, I love your bathing suit! So pretty. 🙂
The Wife of a Dairyman says
Eeek! A roach!
Anya @ Fitness & Sunshine says
I hate roaches too! Sometimes I have to take care of it myself but I’d much rather have my boyfriend or dad help me out 😉
Michelle @ Turning Over a New Leaf says
Good think Matt stepped in!
I call in my husband to rescue me from bugs and he always first gives me a lecture about how I need to get over it and kill it myself. 😛
Mary @ Bites and Bliss says
This reminds me of a shirt I have that says “wheatgrass tastes funny”- it’s some strong stuff!
Lisa @bakebikeblog says
What a perfect day! Sure beats the day in the office that I have ahead of me! At least I have a ‘cupcake’ party to look forward to tonight 😉
Cynthia (It All Changes) says
I could never get into the Amazing Grass taste. I guess it would take a bit to build up an acquired taste for it but I’m not that patient.
So cool about the Hamlet/book connection. Makes it sound even more interesting.
Tara says
If you’re going to watch Hamlet, can I highly recommend the David Tennant version? BBC showed it last Christmas, so it may have been on BBC America. It’s a production by the RSC, which I was lucky enough to see in Stratford, and it was AMAZING. So, so, so much better than Mel or Ken!
Meagan says
The soup looks delicious. I really like your bowl and glass 🙂
Franziska (justalittlechocolate) says
I love cold soups – your looked delicious but wheatgrass can definatley be overpowering at times. I have been in the mood for gazpacho for awhile now – may have to make it this weekend (have a great recipe that I will post when I do 🙂
Sarah (Running to Slow Things Down) says
I always forget how grassy the amazing grass is too, until I put it one of my smoothies. I’m not really a fan! Although I always feel super healthy afterwards, even if it’s just psychological. 😉
Hannah says
Which version of Hamlet are you watching? You should follow it up with Rosencrantz and Guildenstern are Dead 🙂
Ashley@thehungryscholar says
That green soup looks fantastic! I love Hamlet and love teaching it!
Nessy says

I just LOVE the beach. This looks really familiar! My family and I were just at the Outer Banks in NC not too long ago! Are you anywhere close to that??? We stayed in Nags Head! 🙂
