Delicious no-cook breakfast this morning!
Too bad it’s a chilly morning so I was more in the mood for a hot breakfast. But once I added a sweater and a down blanket, I was good to go!
Overnight oats made with blueberries, the last of my Cville Cluster crumbs and sunflower butter. Delicious and gone way too fast!
Plus cold brewed iced coffee. I put 1/4 cup decaf grounds in my french press along with about 20 ounces of water and let it sit overnight. Pressed this morning and it was perfect!
Happy week!
Zoe @ loseweightandgainhealth says
Likey like the idea of overnight coffee to go with overnight oats 🙂
Hope @ With A Side Of Hope says
I love that bowl. It’s so cute 🙂 It was quite chilly this morning. I’m liking the weather. It’s a nice change from the heat and humidity. Happy Monday!
kathleen @ the daily crumb says

Angel7 says
I love iced coffee even more than I like hot coffee!

I am loving overnight oats recently. well… mine are always more like two-hour oats. so good. I’m going to try the silken tofu idea from happy herbivore this week as a yogurt swap. 🙂
Katie @ Peace Love and Oats says
I need to figure out how to make good iced coffee! Right now I just brew coffee normally from my keurig and stick it in the fridge!
Angela @ Eat Spin Run Repeat says
Love the polka dots! I also had a cold brekkie this morning but could have done with a warm one. I’m sipping plenty of tea now to warm up! Happy Monday! 🙂
Susan H. @ The Food Allergy Chronicles says
Neat idea for iced coffee…never thought to do that before…thanks for the idea! I am loving my crunchy natural peanut butter with banana on toast for breakfast while visiting my mom (it’s her birthday today) without my boys…they have peanut/tree nut allergies. Makes me feel like a kid again!
Roxanne says
I have a neighbour who has to go to her mom’s for peanut butter too, her son is deathly allergic to peanuts…
Elyse says
YUM! I have been cold-brewing iced coffee and loving it! Perfect out of a mason jar!
Catalina @ Cake with Love says
Your breakfast as always looks good, I planned to have a smoothie in the morning but its raining and chilly ouatside so I had oatmeal with a lot of PB – so good! And some carrot juice of the side! 🙂
Ashley @ Coffee Cake and Cardio says
I just prepped some iced coffee for tomorrow’s breakfast! Can’t wait!
Katryn says
Ha, I had the same thing for breakfast! Complete with the blueberries…I’m out of sunflower butter though! Must go buy more!
Laura @ Sprint 2 the Table says
Rainy days and Mondays… yet I’m still eating a cold brekkie too. Go figure. 🙂
Sarena (The Non-Dairy Queen) says
We had crazy thunderstorms here last night. Even though it’s still raining, it’s so calm this morning and it looks chilly out. I baked a pan of gluten free cinnamon rolls while drinking my coffee and listening to the rain. Perfect Monday morning in my book! I hope you have a great day Kath!
The Mrs @ Success Along the Weigh says
Nice quick breakfast to get the week kicked off right! Gotta love that!

Great idea for breakfast. Thanks for sharing.
Kati Mora, MS, RD, Kellogg's FiberPlus(R) Wellness Advocate says
Yay for breakfast! I crave warm foods in the morning too when the weather is cold out. Hopefully the mornings will be warmer though as summer progresses and cold breakfast, like overnight oats or a bowl of cereal, can make a come back!
Alyssa (pb and oatmeal) says
It’s freezing here too!
Cait's Plate says
Without fail every time I have overnight oats it’s a cold morning! But a sweater and/or blanket usually goes the trick for me too 🙂
And I always say the worst part about overnight oats is simply that it’s gone too soon!
Averie @ Averie Cooks says
Overnight coffee and oats…good thinking for a Monday morning. It’s cold and dreary in “sunny” San Diego so far today, too.
Margaret@KitchenFrau says
Great idea for coffee. Do you put boiling water on the night before and let it cool overnight, or do you put cold water on the grounds the night before. I want to try this!
KathEats says
Just cold!
Ashley @ Hudson on the Potomac says
Your coffee looks great!

Hey Kath! I’ve commented a bunch of different times before (well, I like to think that..), especially during the school year…in finals/midterms reading period, you can be sure I read every post. Though I’m less computer-minded and procrastination-prone, I still LOVE your blog during the summer months. As I’ve probably mentioned, I’m from New England – live in CT and go to school at Bowdoin in ME, BUT..my friend who rows at UVA is moving into her new apartment tomorrow and we’ve decided to ROADTRIP it! AKA…I just might ACTUALLY be able to come to your Great Harvest finally! Slash explore downtown cville, the froyo places, your WHOLE FOODS! etc etc. Like a dream come true, basically! Haha. Okay, anyway, I was curious as to what gym you go to, as we (there’s three of us, all sophomores, headed down leaving tomorrow morning) might try and drop in to some class on Wednesday before we head back Thursday afternoon, and I think I can ‘search’ it in a searchbox somewhere, but which healthy snacks are your favorite for long carrides. Hope to see you SOON!
KathEats says
🙂 Glad you’re coming!
I go to ACAC, which is the big gym downtown. I think you can get a guest pass for $10…not 100% sure though. Enjoy your stay!

I have promised myself that I would make iced coffee once I’m done nursing. Then, I realized that it would be during the winter/fall. Geez. I drink vicariously through you. 🙂
Leah says
Do you leave the french press in the fridge overnight? Or just add ice cubes in the AM?
KathEats says
Yeah, leave the french press in the fridge and add ice in AM
Leah says
Thanks, I can’t wait to try this this weekend!
Kellie says
What sunflower butter do you use? I got the MaraNatha brand and am not impressed. It tasted a little bitter to me?
KathEats says
Trader Joe’s is the ultimate!! Sunbutter not far behind. I haven’t had Maranatha, but it didn’t look good
Kellie says
Thanks! I’m not going to give up then 🙂 Luckily they are opening a Trader Joes close by soon. So excited!!
Cortney says
Cold brewed coffee it THE BEST and no filters of coffee pots or extra steps 🙂 I am still nursing my son so I am doing decaf, too! I finally found a decaf brand that tastes *almost* like the real thing.

Hi Kath,
Speaking of Cville Cluster granola! I was just on OpenSky looking to buy it but it’s all sold out! 🙁
Let me know how else I can buy this pls?
KathEats says
You’d have to travel to Cville. We may do another round later this summer
Maria says
Oh bummer! I thought I might be able to go to the GH website to purchase or something like that. Let us know when you do another round so we can jump on it! Thanks.
KathEats says
That’s our ultimate goal! Hopefully by end of summer
Fran@ Broken Cookies Don't Count says
I put my overnight oats in the microwaver for a minute and 30 and it’s perfectly warm and tasty. You should try that when you need the warm!
KathEats says
I do that too! Still not hot though 🙂
Stephanie @ Legally Blinde says
What a smart way to make iced coffee – I’ll have to try that!
Julia H. @ Going Gulia says
Apparently I never noticed before, but the table your bowl is sitting on is beautiful! I love mosaic things.
Lexi @ You, Me, & A World to See says
Overnight oats and overnight coffee? Hot dang, look at you go. 🙂 Did you microwave the coffee to warm it up?
KathEats says
Drank it iced!
Maria@Sinfully Nutritious says
I love HOT coffee, I am one of those crazy people drinking hot coffee when it is 100 degrees. My husband laughs at e when I am floating in our pool with a coffee mug instead of a cold drink. 😉
